2 c Cream-filled Cookies *
6 T Margarine, Softened
1 ea Env. Unflavored Gelatin
1/4 c Cold Water
8 oz Cream Cheese Softened
1/2 c Sugar
3/4 c Milk
1 c Whipping Cream, Whipped
1 1/4 c Creme-filled Cookies **
* The cookies (24) should be chocolate cream filled cookies and be to as fine as can be done. ** These cookies should be chocolate cream filled cookies and should be coarsely chopped. ~-------------------------------------------------------------------------- Combine cookie crumbs and margarine; press onto bottom of 9-inch springform pan. Soften gelatin in water; stir over low heat until dissolved. Combine cream cheese and sugar, mixing at medium speed on an electric mixer until well blended Gradually add gelatin mixture and milk, mixing until well blended. Chill until mixture is thickened but not set. Fold in whipped cream. Reserve 1 1/2 C cream cheese mixture; pour remaning cream cheese mixture over crust. Top with cookies and reserved cream cheese mixture. Chill until firm.

Makes 18-20 cookies
Ingredients:
4oz (115g) cream cheese, softened
1/2 cup (115g) butter, room temperature
1 teaspoon Vanilla extract
3/4 cup (150g) sugar
1 cup + 2 tablespoon (140g) All-purpose flour
10-12 Oreo cookies, crushed
Directions:
1. In a large bowl cream the butter and cream cheese. Add sugar and beat until light and fluffy.
2. Add flour and stir until incorporated. add crushed Oreos and fold until combined
3. Cover and refrigerate for at least 1 hour or overnight.
4. Preheat oven to 350F (180C).
5. Roll batter into 1-inch balls and place on a baking tray lined with parchment paper. Slightly flatten the cookies.
6. Bake for 12-15 minutes or until cookies turn golden brown on the bottom.
7. Allow to cool on a wire rack before serving.

1. Make the crust by placing 35 whole Oreos into your food processor and pulsing the cookies on high speed until they crumble down to a fine crumb.
2. Then pour in 5 tablespoons of unsalted melted butter into the food processor as you continue to pulse the cookies. This will ensure evening mixing.
3. Now dump the Oreos crumbs into a 9 inch springform pan. Then evenly press the crust on the bottom and up the sides of the pan.
4. To set the crust, place the pan in a baking sheet and bake at 350 degrees Fahrenheit for 8 minutes.
5. In the meantime, add 4 (8 ounce) packages of room temperature cream cheese and 1 cup of granulated sugar to a stand mixer. Make sure to use good quality cream cheese here. It will result in a super creamy and rich cheesecake.
6. Using the paddle attachment, turn the mixer onto high speed. Beat the cream cheese for about 5 minutes scraping down the sides of the beater bowl every other minute. This will ensure a clump free cheesecake!
7. Now add 1 cup of sour cream 1 teaspoon of vanilla extract. Turn the mixer on high speed and beat again for 2-3 minutes.
8. Bring the speed down to low and add 3 eggs and 1 egg yolk (one at a time). A good way to know when to add each egg is when you longer see yellow streaks from the yolk. Then scrape down the sides of the bowl.
9. Now roughly chop 12 Oreos with a knife and add it to the cheesecake batter. Mix on low speed until combined. You want to avoid over mixing the batter or your cheesecake might crack on top.
10. Now preheat your oven to 250 degrees Fahrenheit and pour the cheesecake batter into your Oreo crust. Bake on the center rack for 1 hour and 30 minutes. Once it’s done, turn the oven off and let the cheesecake rest until it completely cools down. Do not open the oven for a few hours. This can cause your cheesecake to crack as well.
11. Once the cake has cooled to room temperature refrigerator for 3-4 hours.
12. Then you can decorate it however you want. I made a white chocolate ganache. To make this, just pour 1/2 cup of boiling heavy cream over 8 ounces of white melting chocolate wafers and mix it until smooth. Then let it cool and thicken before pouring over the top of the cheesecake.
13. At this point I just went ahead and completed the decoration with a piped border of heavy whipping cream and halved Oreos.

Here is what you'll need!
COOKIES AND CREAM CHEESECAKE COOKIES
Makes: 12 cookies
INGREDIENTS
4 ounces cream cheese, softened
8 tablespoons salted butter, room temperature
¾ cup sugar
1 cup flour
10 cookies, crushed
PREPARATION
1. Preheat oven to 350°F/180°C.
2. In a mixing bowl blend, cream cheese, butter, and sugar until fully combined.
3. Add 1 cup of flour to cream cheese mixture and continue to blend together until fully combined.
4. Add crushed cookies to the mixture and gently fold together. Once the cheesecake batter is fully mixed, cover with plastic wrap and chill in refrigerator for 30 minutes, or until batter is firm to touch.
5. Roll batter into small balls and place on a parchment lined baking sheet.
6. Using your fingers or a warm spoon press down on the dough balls to help form a cookie shape.
7. Bake at 350°F/180°C for 12-15 minutes or until cookies turn golden brown on the bottom.
8. Place cookies on a cooling rack and rest for at least 5 minutes.
9. Enjoy!
