How To make Cooked Strawberry Jelly . Certo Liquid
StrAWBERRY/RED RASPBERRY OR:
BLACKBERRY(2 QT:
3 3/4 c Prepared juice (2.5 QT)
1/4 c Lemon juice
7 1/2 c Sugar
2 pk Certo liquid *
YIELD CUPS:
* NOTE pk means 1 pouch containing 85 ml. 1. Wash jars and lids in hot soapy water, rinse and sterilize jars and lids
by (1) boiling in water for 15 minutes (leave in water til needed.) Lids may be sterilized by placing in boiling water and boiling 5 minutes(leave in warm water til needed.) Utensils should also be sterilized. 2.Stem and thoroughly crush fully ripe fruit. To extract juice, place
prepared in jelly bag and squeeze. NOTE: To make own jelly bag, use a square meter of cheesecloth, 3 layers thick. Wet cloth and spread over a colander or strainer in a bowl. Add fruit. Bring corners of cloth together. Twist bag or cloth and squeeze to extract juice. For clearer jelly, use 1 1/2 times fruit called for and let juice drip through without squeezing.
3. Using liquid measure, measue the amount of prepared juice and add to a
large 4 to 8 qt pan. Add lemon juice if listed. Note: omit lemon juice in Red Raspberry jelly. 4. Measure sugar. DO NOT REDUCE SUGAR. Add the exact amount of sugar
specified and mix well. 5. Place pan over high heat; bring to a boil.
6. At once stir in Certo liquid. Bring to a full rolling boil and boil
hard for 1 minute, stirring constantly. Remove from heat. 7. Skim off foam with a metal spoon. Stir and skim for 5 minutes.
8. Pour quickly into prepared jars leaving 1/4 inch head room.
9. Seal jam at once with 2 piece metal lids or paraffin wax. Typed at you

Kirstie is in the Kerschner farmstead kitchen making some delicious strawberry jam. Canning has been such an important part of our farmsteading journey! We wanted to share with you the basics of waterbath canning to give you the confidence to begin canning in your homes.
The recipe we used is found in the Sure-Jell Pectin Pouch but we thought we would link it here also.

Why Your Jam or Jelly Didn't Set and How To Fix It
There are many reasons why a jam or jelly may not be set properly. It is commonly a problem with the temperature. Sometimes the product is cooked at too high a temperature, and other times, it is not boiled long enough. Even being in the water bath for too long can destroy the pectin's ability to jell. The other thing to consider is that it can take up to 24 hours after canning for it to set so you may just have to wait a little bit to see. Sometimes it is a problem with your pectin being bad or the wrong form is used. Always store your pectin in a cool, dry location and use the type of pectin indicated in the recipe. The other issue that can occur is a problem with measurements.

Hello everyone and welcome to this video! Today I'm doing a bit of a public service announcement here. You see I see all of these posts on canning groups and places like that where people have made Jam or jelly and they spent all this time and money and for whatever reason it turns out runny. Then invariably the story involves tears and crying. When they bring this to the group everyone of course says well we call that syrup. You just made syrup, or you just made ice cream topping. And I applaud these efforts to make people feel better and make use of things that didn't quite turn out. But to me that's kind of like saying I'm sorry your team didn't win the Superbowl , but hey at least they were the conference champions! Now does that really make you feel better? No it does not and that's because nobody cares about conference champions and if somebody really wanted to make ice cream topping they would just make ice cream topping. But really this whole situation is unnecessary. Never again will you have to cry over runny Jam or jelly that you spent hours making and I'll tell you why. While it's true that after you've can something that's it it's done and there's no way to easily un can it, fix it and recan it, you're looking at a whole lot of extra time and wasted materials. But let's not forget that once you open the jar there are things you can do. The Ball canning book says that if your salsa is too runny you can add cornstarch to it, again only after you've canned it. Well we're not going to fix our running jelly with cornstarch, although maybe you can I don't know I guess I've never tried. Instead we're going to go back to our Childhood Days and revisit something you probably ate in elementary school...
