3/4 c Sugar 1 1/4 c Flour 1 ts Baking powder 1/8 ts Salt 1 oz Unsweetened chocolate square 2 ts Butter 1/4 c Milk 1 ts Vanilla
TOPPING:
1/2 c Brown sugar 1/2 c White sugar 4 tb Cocoa 1 c Cold coffee Sift dry ingredients together in a bowl. Melt chocolate and butter in a 9x9 dish and heat in microwave oven at FULL POWER 1 minute. Add dry ingredients alternately with milk to the chocolate-butter mixture, mixing all by hand. Add vanilla. Spread in 9" square pan. Scatter topping ingredients on top of batter in order given. Microwave at FULL POWER 4-5 minutes. Let stand 10 minutes. Makes 1 cake. Microwave time: 4-5 minutes. Conventional range time: 30 minutes at 350~.

Oatmeal Chocolate Chip Cake Ingredients 1 ¾ cup boiling water 1 cup old fashioned oats or quick oatmeal 4 ounces butter or margarine 1 cup granulated sugar 1 cup firmly packed brown sugar 2 eggs 1 ¾ cup flour 1 tsp. baking soda ½ tsp. salt 1 tbsp. cocoa powder 1 12-ounce bag chocolate chips ½ -¾ cup nuts, chopped (optional)
Directions
Preheat oven to 350 degrees. Grease and flour a 9x13 inch cake pan or two 9-inch round pans.
In a large bowl, pour boiling water over oats. Let stand 10 minutes.
Add butter/margarine and stir until melted. Add sugars, eggs, flour, baking soda, salt, and cocoa and mix well. Fold ½ bag of chocolate chips into batter. Pour into prepared pan(s). Sprinkle nuts and chocolate chips on top.

Recipe: For the cake: 2 cups sifted all purpose flour 2 cups sugar 3 ½ tablespoons cocoa powder 1 cup water 1 stick butter (I like to use salted butter for this, since there’s no other salt called for in the recipe) 1 teaspoon baking soda ½ cup buttermilk (or regular milk mixed with a splash of vinegar to make it sour) 2 eggs slightly beaten in the milk 1 teaspoon cinnamon 1 teaspoon vanilla Bake at 400 degrees for 15-18 mins or until a toothpick comes out clean and the cake bounces back when you touch it For the frosting: 3 ½ tablespoons cocoa powder 6 tablespoons milk 1 stick salted butter 3 ½ cups powdered sugar 1 teaspoon vanilla 1 cup chopped nuts of your choice (I used pecans – walnuts would be amazing too! OR leave them out)
