How To make Coconut Bread Trinidad
3 c flour
1 tsp salt
1 c sugar
1 c evaporated milk
1/2 c unsalted butter
melted and cooled
1 tbsp baking powder
2 c finely grated fresh coconut
1 large egg :
well beaten
1 tsp vanilla
sugar
Sift flour, baking powder and salt. Stir in coconut. Combine egg, milk, vanil la and butter. Make a well in the dry ingredients. Pour liquid into the well. Stir lightly but thoroughly and pour into 2 greased 8 or 9 inch loaf pans, filling pans about 2/ 3 full. Sprinkle the top of the batter with sugar. Bake at 350 F for about 55 minutes or until they test done.
Notes: I have used packaged coconut instead of the fresh but found a little more liqui d was needed. Also the flavor was not quite as good but still passable.
Nice toasted for breakfast but watch since it burns easily.

Serves 8
4 cups all purpose flour
2 tsp baking powder
1/2 tbsp instant yeast
1/2 tsp salt
1 tbsp Brown Sugar
3 tbsp Cold Margarine
3 tbsp Cold Vegetable Shortening
1/2 cup Grated Dried Coconut or 1 Pack Coconut Milk Powder
Approximately 1 1/2 cups room temperature water
Method
- Place all dry ingredients into a bowl
- Rub margarine and shortening into flour
- Slowly add water as needed to form a soft dough (must not stick to hands)
- Cover bowl and allow to rest for 30 minutes
- Shape into ball and roll out into 3/4- 1inch thick round
- Place onto a greased baking sheet
- Dock the dough using a fork
- Set aside until dough doubles in size
- Bake in a 350 degree oven for 20 minutes or until golden brown

One can never go wrong with a warm piece of Trinbagonian Coconut Bake for breakfast, or, any time of day really.
Yield: 4 to 6 Servings
Ingredients:
Coconut – 1 cup (grated)
Bay Leaves – 2
Ginger - 1 tsp (minced)
Warm Water - 1 ½ cups
All Purpose Flour - 4 cups + ¼ cup (sifted)
Yeast - 1 tsp
Baking Powder - 2 tsp
Nutmeg - ½ tsp (grated)
Salt - ½ tsp
Brown Sugar - 2 tbsp
Margarine - 2 tbsp
Shortening - ¼ cup + 2 tbsp
Coconut Oil - 2 tbsp
Method:
Using an electric blender or food processor, blend coconut, bay leaves and ginger with 1 cup of warm water and set aside.
In a large bowl, add 4 cups of flour, yeast, baking powder, nutmeg, salt, sugar, margarine and ¼ cup of shortening.
Mix all ingredients together thoroughly, allowing air to pass through.
Add the coconut mixture to the dry ingredients and mix into a soft dough using more warm water if needed (as illustrated in the video).
Lightly rub coconut oil over the dough.
Cover dough with a damp cloth and let sit for 30 mins in a cool place.
Grease a baking pan approximately 12 inches in size with the remaining shortening.
On a lightly floured surface, empty dough unto surface, knead gently and roll out to ½ inch in thickness.
Place dough onto greased baking sheet, cover with a damp cloth and let rest for 30 mins.
Preheat oven to 350 F and bake for 30 mins or until bake is light brown in color.
Transfer bake onto a cooling rack and allow to cool before slicing.
