Best Trinidad Coconut Sweet Bread Recipe
Trinidad sweet bread is a dense, rustic bread made with fresh coconut, raisins, mixed fruit and spices. It is made in Trinidad especially during the holidays including Christmas and Easter but great for an all year long snack or breakfast. My sweet bread recipe results in a bread that's addictive and crunchy on the outside and soft on the inside. A perfect balance of texture and flavors!

Ria's Sweet Bread Recipe
4 cups all-purpose flour, sifted
2 cups brown sugar, plus 2 tbs
4 teaspoons baking powder
1 teaspoon ground cinnamon
½ tsp freshly grated nutmeg
1 tbs grated ginger, optional
¼ tsp Himalayan salt
3 cups finely grated coconut (14 oz)
½ cup seedless dark raisins
½ cup candied mix fruit, optional (mis peel)
½ cup (1 stick) organic sweet cream butter, melted¬
3/4 cup evaporated milk, or more as needed
1 tbs pure vanilla extract
2 eggs, beaten, optional
Bowl, measuring cup, measuring spoon, 2 (9x5) baking pans,
Preheat oven to 325 degrees Fahrenheit.
1. Grease two bread pans (9x5) or one large and one small and set aside.
2. In a large bowl, combine flour, sugar, baking powder, cinnamon, nutmeg, ginger and salt.
3. Stir in coconut, raisins and mixed fruit (if using).
4. In a measuring cup, add evaporated milk, eggs if using, melted butter and whisk to combine. Add to dry ingredients and mix just until combined. The dough should be slightly sticky, if not add more evaporated milk. If you are not using the eggs, you will definitely need to use more evaporated milk.
5. Divide dough, form into a loaf with your hands and place in prepared pans. Place in the oven and bake until fully cooked, the outside is dark golden brown and a toothpick or skewer comes out clean, about 60 – 90 mins.

Ingredients to make 1 bake (double for 2)

Ingredients
2 cups unbleached all purpose flour, sifted
1 tablespoon baking powder (aluminum free)
2 tablespoons raw brown sugar
1 cup grated coconut (lightly packed), fresh or frozen (defrosted)
3⁄4 cup fresh coconut milk
1 teaspoon salt (I use Himalayan Salt)
3 tablespoons organic butter (salted or unsalted)
Vegan | Gluten Free Option : Substitute with coconut oil or coconut butter

Trini Coconut Bake Recipe
Coconut Bake.
Coconut bake is a traditional bread made with coconut and other ingredients that you bake and enjoy with Cheese, Stews , Saltfish etc. You can basically enjoy this soft coconut bread with anything it's that good.
Coconut Bake Recipe
5lbs flour
1/2 Cup Brown Sugar
2 Tbsp Yeast
2 Tbsp Baking Powder
1 Tbsp Salt
8 Ounce Room Temperature Butter
4 Ounce Room Temperature Crisco /Shortening
1 1/2 Dried Coconut Grated or Blend
I Tin of Carnation Milk
Warm water for kneading the dough
Add all the dry ingredients into the bowl mixing well. Then add in the coconut and mix. Add in the room temperature butter and crisco and continue to mix. When finishing mixing add in the milk and beging kneading continue to add the water into the dried ingredients until you get the dough into a nice consistency. Allow to rest for about 40/45mins in a warm area. When the dough has come to a rise, begin placing it into your greased pans unless they are nonstick pans you don't need to grease. Allow to rest for another 20mins while you preheat your over to 375°. After 20 mins begin placing your bake into the oven and let bake for about 20/25 mins. When finish your bake should be looking golden in color. That's when you can enjoy your coconut bake right out of the oven.
This Recipe will give you about 6 round 9inch bake and 6 smaller ones. If you don't wish to make so much coconut bake simply cut your ingredients into half and follow the same method.
Feel free to put the balance of your Coconut Bakes into ziplock bag and put into the freezer until you feel to eat bake again. Simple take out thaw and you can reheat your oven and out the bake in for about 5/7 mins and you have fresh bake again just like that.

This Caribbean Coconut Sweet Bread is just amazing!
Ingredients
3 cups grated coconut ????
4 cups sifted flour
1- 1 1/2 cups sugar
4 tsp baking powder
1 tsp salt
1/2 cup melted butter or vegan butter
1 tsp cinnamon powder
1 -2 tsp nutmeg
1/2 cup chopped cherries ????
1/2 cup raisins and currant
1/2 cup mix peel
1 1/2 cups coconut milk or evaporate milk
1 tbsp vanilla essence
Yeild 2 loaves 8 inch
Bake at 325-350 for 45-50 minutes or until a toothpick comes out clean
