3 Great Coconut Shrimp Recipes
If you love coconut shrimp, here are three different, but very good coconut shrimp recipes to try.
Recipe #1:
Name: Coconut Beer Batter Fried Shrimp with Pineapple Salsa.
Ingredients:
, 2 eggs,
, 1-3/4 cups all,purpose flour,
, 3/4 cup beer
, 1 tbsp. baking powder
, 2 lb. medium shrimp
, peeled and deveined coconut oil
, 3 cups grated coconut
Seasoning Mix:
, 1 tbsp. cayenne pepper,
, 2-1/4 tsp. salt
, 1-1/2 tsp. sweet paprika
, 1-1/2 tsp. black pepper
, 1-1/4 tsp. garlic powder
, 3/4 tsp. onion powder
, 3/4 tsp. dried thyme
, 3/4 tsp. dried oregano.
Procedure:
1. Throroughly combine the ingredients for the seasoning mix in a small bowl and set aside.
2. Mix 1-1/4 cups of the flour, 2 tsp. of the seasoning mix, baking powder, eggs and beer together in a bowl, breaking up all lumps until it is smooth.
3. Combine the remaining flour with 1-1/2 teaspoons of the seasoning mix and set aside.
4. Place the coconut in a separate bowl.Sprinkle both sides of the shrimps with the remaining seasoning mix.
5. Then hold each shrimp by the tail, dredge in the flour mixture, shake off excess, dip in batter and allow excess to drip off.
6. Coat each shrimp with the coconut and place on a baking sheet.Heat deep fryer to 350°F. Drop each shrimp into the hot oil and cook until golden brown, approximately 1/2 to 1 minute on each side. Do not crowd the fryer.
7. Drain on paper towels and serve immediately.Lay shrimp on large lettuce leaves and serve with Pineapple Salsa dip. Garnish with lemon, orange, or lime wedges.
8.Pineapple Salsa
1 cup finely chopped fresh pineapple ,
1/3 cup chopped red onion,
1/4 cup finely chopped fresh cilantro ,
1/4 cup pineapple preserves (or apricot,pineapple preserves) ,
1 tablespoon finely chopped seeded fresh jalapeno chili,
1 1/2 tablespoons fresh lime juice ,
1/4 teaspoon ground black pepper ,
Combine ingredients and gently toss and Serve
Recipe #2:
Name: Coconut Shrimp Kabobs with Island Coconut Salsa,
Ingredients:
1 lb. shell-on shrimp, uncooked
1/3 cup coconut milk, canned and sweetened
2 tablespoons lime juice
1 garlic clove, crushed
1 teaspoon red chili peppers, seeded and minced
1 teaspoon ground cumin
1/2 teaspoon ground coriander
1/4 teaspoon ground white pepper
12 to 18 fresh pineapple chunks
Island Coconut Salsa
1 cup flaked coconut
1 cup chopped cilantro
1 cup chopped green onion
2 tablespoons fresh lime juice
2 tablespoons minced fresh ginger
1 to 2 teaspoons minced garlic clove
1/2 teaspoon sea salt
1/2 cup olive oil or macadamia nut oil
Procedure:
1-Peel and devein shrimp retaining tails; set aside.
2-Combine coconut milk, lime juice, garlic, red peppers, cumin, coriander and 3-pepper; pour over shrimp.
4-Marinate no more than 1 hour.
5-Thread shrimp and pineapple chunks on skewers.
6-Broil or grill, 3 minutes per side, or until shrimp are done.
7-Arrange coconut shrimp on large lettuce leaves and, Coconut shrimp kabobs with island coconut salsa is ready.
Serve with Island Coconut Salsa on the side.
Recipe #3:
Name:Carribbean Shrimp Run Down,
Ingredients:
1 lb shell-on shrimp, uncooked
3 tablespoons lime or lemon juice
3 cups coconut milk
1 large onion
3 cloves garlic
Finely chopped hot pepper to taste
1 lb. tomatoes, peeled and chopped
1 Tbsp. vinegar
1 t. fresh chopped thyme
Sea salt and freshly ground black pepper
Procedure:
1-Peel and devein shrimp retaining tails.
2-Pour the lime juice over the shrimp and set aside.
3-Cook the coconut milk in a heavy frying pan until it is oily.
4-Add the onion, garlic and cook until the onion is tender.
5-Add the hot pepper, tomatoes, salt and pepper, thyme and vinegar.
6-Stir and cook very gently for 10 minutes.
7-Drain the shrimp, add the other ingredients and cook until the shrimp is tender, about 10 minutes.
and Voila, Serve hot over rice.
Preparation time: 30 minutes.

✅Ingredients
• ½ cup all-purpose flour
• 1 teaspoon salt
• 1 teaspoon black pepper
• ½ teaspoon garlic powder
• ¼ teaspoon ground ginger
• ¼ teaspoon cayenne pepper
• 2 large eggs
• 1 cup panko
• 1 cup sweetened coconut flakes
• 1 pound large raw shrimp, deveined with tails on
• Vegetable oil for frying
Sweet Chili Dipping Sauce
• 1 cup orange juice
• ¼ cup brown sugar
• 2 tablespoons Asian chili garlic sauce
• 1 tablespoon cornstarch
✅Instructions
1️⃣ In a medium bowl, add flour, salt, pepper, garlic powder, ground ginger, and cayenne pepper. Stir to combine.
2️⃣ In a separate small bowl, beat eggs.
3️⃣ In another separate small bowl, add in the Panko and coconut flakes.
4️⃣ Take each individual shrimp and dip it in the flour mixture first, then the beaten eggs, then the panko and coconut mixture. Press the panko coating into the shrimp. Set shrimp aside once coated.
5️⃣ In a large skillet, add about 1 inch of oil for frying. Heat oil over medium heat until about 350 degrees Fahrenheit.
6️⃣ Working in batches to not crowd the pan, fry coated shrimp in the heated oil for 2 1/2 minutes per side. If using extra large shrimp, increase time to 3 minutes per side.
7️⃣ Once cooked, remove and set on a paper towel lined plate and finish the rest.
8️⃣ Serve with dipping sauce and enjoy!
Dipping Sauce:
1️⃣ In a saucepan over medium heat, add orange juice, brown sugar, chili sauce, and cornstarch. Stir constantly and bring to a boil. Let simmer until sauce thickens.

Coconut Shrimp, Simple, Crispy and Delicious
If you like coconut shrimp with a crispy coating than this recipe is made for you! A very simple recipe with delicious result. Too many recipes add a ton of ingredients, spices, herb, breadcrumbs etc. which takes away the integrity of the shrimp or prawn. (We call them prawns in OZ). This recipe is made simple so you can taste the real prawn flavour, enhanced with the tropical crunch of coconut. The prawn remains creamy inside with a crispy outer coating. You can certainly use your favorite dipping sauce, see my tips in the written recipe, but if you want to taste the real prawn flavour, then squeeze some lemon or lime juice for perfection.
These coconut shrimps are really simple to make, the butterfly cut is the hardest part, it does make a big difference so please, don’t skip that step. You can use the sweet or standard shredded coconut, that depends on your taste. Both are excellent, but if you have the option, chose the coarser variety rather than finer shred. Try and maintain the correct oil frying temperature, and don’t add to many at ones or it will cool it down. You want them to be crispy not greasy so stick to 375°F – 190°C.
Serve them with a crisp Asian salad with coriander leaves as a side dish. These are great as starter (entree) or appetizer. If making them in advance, you can reheat them by placing them in a cold oven, turned on at at 350°F – 180°C for 20-25 minutes. Enjoy my coconut shrimp, delicious!
