How To make Cinco De Mayo Casserole
1 1/2 c Yellow cornmeal
1 ts Salt
4 c Cold water
2 tb Butter/margarine
1 c Shredded sharp Cheddar
-Cheese 5 c Double-Header Chili (recipe
-follows), heated Toppings: 1 (8 oz) container sour cream
2 c Shredded Romaine or iceberg
-lettuce 1 c Shredded sharp Cheddar
-Cheese 2 Plum tomatoes, diced
2 Green onions, sliced
1/2 Ripe avocado, diced
1/2 c Pitted sliced ripe olives
This dish is a hearty chili turned into a party dish by adding a cornmeal layer and a garnish of cut-up vegies. Prep time: 30 minutes plus cooling Cooking time: 25 minutes Cornmeal layer: whisk cornmeal, salt and water together in large saucepan. Bring to boil over medium-high heat, whisking constantly. Cook until thickened, 1-2 minutes. Remove from heat and stir in butter and cheese until melted. Immediately pour cornmeal mixture into shallow 3-quart casserole. cool until firm, 30 minutes. (Can be made ahead. Cover and refrigerat chili and cornmeal layers separately. Assemble casserole, cover and bake in preheatd 375~ oven 1 hour or until heated through.) Preheat oven to 375~. Spread
top of casserole with chili. Cover and bake 25 minutes or until heated through. Garnish with toppings. Makes 8 servings. Per serving: 545 calories, 34 mg protein, 31 gm fat, 33 gm ccarbohydrates, 1,093 mg sodium, 124 mg cholesterol.

TACO BAKE RECIPE
Prep time- 15 min
Bake time- 23 minutes
Total time- 38 minutes
Servings- 8-12
INGREDIENTS:
1 pound ground beef
1 small diced onion
Taco seasoning of your choice
16 oz can refried beans
3/4 cup sour cream
2 cups shredded cheese
1 cup crunchy toppings (tortilla chips, Doritos, Fritos, etc)
1/4 cup diced olives (optional)
To garnish:
Your choice of lettuce, tomatoes, green onions, cilantro
DIRECTIONS:
Preheat oven to 350 degrees. Brown the beef with the diced onion and drain. Season w taco seasoning and set aside.
Spread the refried beans into the bottom of your USA pan seamless 9x13 pan. Then spread the sour cream over. Next, add the cheese followed by the ground beef mixture. Bake for 15 minutes. Sprinkle the black olives (if using) and crunchy chips on top and return to oven for 8 more minutes. Last, too casserole with any of the optional garnishes (tomato, lettuce, green onion, cilantro). ENJOY!

Today, we are starting a Cinco de Mayo Party Foods recipe series. Part 1, we will be making a Taco Chicken Casserole Recipe. This Taco Chicken Casserole is delicious and a super easy recipe. If you love chicken and taco seasoning; this casserole is for you.

Taco Chicken Casserole Recipe
Ingredients
3 cups shredded chicken
2 cups Mexican cheese blend divided
1 can cream of chicken soup
1/2 cup milk
1/2 cup sour cream
1 can Ro-tel diced tomatoes
2 tablespoons taco seasoning
1 large bag of Doritos crushed
Optional Toppings
Black olives
Green onions
Sour cream
Diced tomatoes
Shredded lettuce
Guacamole
Jalapenos
Directions
Preheat oven to 350 degrees. Lightly coat a 2-quart baking dish with non-stick cooking spray.
Add chicken, 1 cup of cheese, soup, milk, sour cream, diced tomatoes and taco seasoning to a large bowl. Mix well.
Add a layer of Doritos to the baking dish.
Add a layer of half of the chicken mixture on top of the Doritos layer.
Add an additional layer of crushed Doritos. Add the remaining chicken mixture again on top of the 2nd layer of Doritos.
Add remaining Doritos to the top and cover with the remaining cup of cheese.
Bake for 30-35 minutes.
If you will be eating right away, add additional toppings before serving. You may also have the additional toppings in separate containers to allow custom dishes for your guests.
