1 Chocolate Orange
75g Icing Sugar
17ml Orange Flavouring
750g Mascarpone

1. Break the Bourbon Biscuits into small pieces (the smaller the better) into a bowl.
2. Melt the butter in the microwave and add to the biscuit then mix together.
3. Add the biscuit base into a Spring Form Cake Tin (Approx. 9in) and compact down into the base with the back of a spoon.
4. Put base in the freezer for 30 minutes.
5. Break the Matchmakers into small pieces into a bowl.
6. Break the Chocolate Orange segments into the bowl with the Matchmakers but don't break the edges of the segments (Place these in a separate bowl).
7. Empty the Mascarpone into a large mixing bowl and add the Double Cream, Orange Flavouring, small broken pieces of Matchmaker & Chocolate Orange (Not the edge pieces) and Icing Sugar.
8. Melt the Chocolate Orange edge pieces in the microwave then add to the mixing bowl.
9. Use an electric whisk to mix the contents of the bowl together until creamy (Don't over Whisk).
