Easy Mississippi Mud Cake Recipe

Homemade Chocolate Mud Cake

Homemade Chocolate Mud Cake
For the cake:
230 grams plain flour, sifted
400 grams caster sugar
85 grams cocoa powder, sifted
2 teaspoons baking soda, sifted
1/2 teaspoon baking powder, sifted
1 teaspoon salt
250 millilitres full cream milk
125 millilitres vegetable oil
1 teaspoon vanilla essence
2 eggs
250ml boiling water
For the ganache:
200 millilitres thickened cream
200 millilitres milk or dark chocolate (your preference)
To make the cake:
Preheat oven to 150℃, grease and line a 23-25cm cake tin.
In a bowl sift together the flour, cocoa powder, baking powder and soda. Add the remaining ingredients besides the boiling water and whisk together. Whilst whisking pour in the boiling water, mix for another minute or until smooth.
Pour into the prepared cake tin and bake in the pre-heated oven for 70 minutes or until a skewer inserted in the centre has moist crumbs clinging.
Remove from the oven, stand for 15 minutes in the tin, then turn onto a wire rack to cool.
To make the ganache:
Place the chocolate in a heat proof boil. Add the cream to a pot and bring to the boil, whilst mixing pour the cream over the chocolate. Whisk until smooth and glossy.
To assemble:
Spoon the ganache over the top of the cooled mud cake. Slice and serve.
