Healthy cocoa balls made with fruit and nuts
They taste so good, no one will believe these are actually healthy yet they are packed with goodness. These energy balls are loaded with fruits, nuts, natural sugars and healthy oils. Plus they are simple to make, just measure the ingredients, throw them in your food processor blitz, then roll in shredded coconut. This recipe makes 24, but as I keep picking at it I usually get around 20. Best to store them in the fridge, eat them cold or take them out 20 minutes before serving. They also make a great gift idea, wrap them up in cellophane with a tied ribbon or string, perfect for any occasion.

Searching for an easy pre-workout snack? One that's healthy and delicious? Chocolate Energy Balls (Recipe Included) are the perfect way to fuel any adventure. Whip up a batch of these easy energy balls to eat for snacks, pre-or-post workout, or for an indulgent and healthy treat.

CHOCOLATE ENERGY BALLS
Ingredients:
1 cup old fashioned or gluten-free oats
2/3 cup toasted, unsweetened shredded coconut
1/2 cup creamy natural nut butter of choice, peanut butter and almond butter are both great
1/2 cup pecan meal
1/2 cup prune puree
1/4 cup unsweetened cocoa powder
1 teaspoon vanilla extract
Instructions:
In a mixing bowl, stir all of the ingredients together until completely combined.
Cover and chill in the refrigerator for 30 minutes. Once chilled, use a small cookie scoop or a measuring spoon to measure equal-sized amounts of the mixture, then form into balls by applying gentle pressure to the dough with the palms of your hands. Do not try to roll these energy balls as they will break apart.
Store covered in an air-tight container in the refrigerator for up to 1 week.
Recipe Notes:
*An equal amount of any type of nut meal can replace the 1/2 cup pecan meal called for in the recipe. Both almond and hazelnut meal are delicious choices.
*If the mixture seems too wet once chilled add extra oats. This can happen if the natural peanut butter used is really oily.
