How To make Chocolate Decadence Cheesecake
CAKE:
8 oz Bittersweet or semi-sweet
Chocolate 1 lb Cream cheese
3/4 c Sugar
4 Eggs
1 ts Vanilla extract
1 1/2 c Sour cream
WHIPPED CREAM TOPPING:
1/2 c Heavy Cream
1 T Sugar
1/4 c Sour cream
1 T Kahlua
Chocolate curls for garnish Place chocolate in the top of a double boiler and melt over hot water, or place in a microwaveable bowl and microwave on medium for 2 to 3 minutes or until melted. Let cool. In a mixer, place the cheese and sugar and mix until blended. Add eggs and vanilla and mix until smooth. Blend in chocolate and sour cream. Pour into a greased 9-inch springform pan. Bake in the middle of a preheated 300F oven for 35 minutes or until the outer edge is set and the inner centre is still glossy. Turn off the oven, leave the door ajar, and let cool in the oven for 1 hour longer. Chill. When completely cooled, and ready to serve, remove pan sides. Prepare whipped cream topping; in a small bowl, whip cream until stiff peaks form and beat in sugar, sour cream and liquer. Spoon in a ring around top of cheesecake and sprinkle with chocolate curls. Here's a recipe for a Decadent Chocolate Hazelnut Brownie Cheesecake that perfectly combines the goodness of chocolate hazelnut brownies with the creamy delight of cheesecake:
Ingredients:
For the Brownie Layer:
1 box brownie mix (prepared as per package instructions)
1/2 cup chopped hazelnuts
For the Cheesecake Layer:
24 oz (3 packages) cream cheese, softened
1 cup granulated sugar
3 large eggs, at room temperature
1 teaspoon vanilla extract
1/2 cup chocolate hazelnut spread (such as Nutella)
For the Chocolate Ganache:
1/2 cup heavy cream
1 cup semi-sweet chocolate chips
Chopped hazelnuts for garnish (optional)
Instructions:
Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan and line the bottom with parchment paper.
Prepare the brownie mix according to the package instructions. Stir in the chopped hazelnuts and pour the batter into the prepared springform pan. Bake the brownie layer for about 15-20 minutes or until just set. Remove from the oven and let it cool slightly.
Reduce the oven temperature to 325°F (160°C).
In a large mixing bowl, beat the softened cream cheese and granulated sugar until smooth and creamy.
Add the eggs, one at a time, mixing well after each addition. Mix in the vanilla extract.
Gently fold in the chocolate hazelnut spread into the cheesecake batter until fully combined.
Pour the cheesecake batter over the partially baked brownie layer in the springform pan. Smooth the top with a spatula.
Place the springform pan in a larger baking dish and fill the larger dish with hot water to create a water bath (this helps prevent cracks in the cheesecake).
Bake the cheesecake in the preheated oven for about 50-60 minutes, or until the edges are set but the center still jiggles slightly.
Turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for about an hour.
Remove the cheesecake from the oven and refrigerate for at least 4 hours or preferably overnight to set.
For the chocolate ganache, heat the heavy cream in a saucepan until it just begins to simmer. Remove from heat and pour over the chocolate chips. Let it sit for a minute, then stir until smooth.
Pour the chocolate ganache over the chilled cheesecake and spread it evenly. Garnish with chopped hazelnuts if desired.
Chill the cheesecake for an additional 30 minutes to set the ganache.
