Grilled Pineapple
Ingredients:
- Fresh ripe pineapple
- 5 tablespoons light brown sugar
- 1 tablespoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon ginger powder
- 2 shots dark rum
- Icecream
- Mint for decoration
How To:
- Mix the ingredients for the marinade, sugar, nutmeg, cinnamon, ginger, rum.
- Slice the pineapple
- marinate the pineapple for 1/2 hour
- Grill the pineapple over direct heat. (not to hot)
- Brush on more marinate while grilling
- When the pineapple turn soft its done
- Place it on a plate and drop a large scoop of ice cream in the middle.

Chicken Afritada or afritadang manok is a tomato based Filipino chicken dish and made with chicken pieces, onion, garlic, tomato sauce, tomato paste, fish sauce, potatoes, carrot, chicken broth cube, green peace, bell pepper, oil and salt and pepper. It is best served with rice and be eaten during major meals. The different colours, flavours and textures in this dish definitely makes it a mouth-watering one. INGREDIENTS
✔️1 kg. Chicken (cut into serving pieces)
✔️1 medium onion (chopped)
✔️4 cloves garlic (minced)
✔️1 cup tomato sauce
✔️2 tablespoon tomato paste
✔️1 1/2 tablespoon fish sauce (to taste)
✔️1 teaspoon black pepper
✔️2 medium potatoes (cut into wedges)
✔️1 small carrot (cut into wedges)
✔️1 piece chicken broth cube (optional)
✔️1 cup water (or chicken broth)
✔️1/3 cup green peas
✔️1 medium green bell pepper (squares)
✔️oil for sauteing
DIRECTIONS
Heat oil in a pan. Saute’ onion and garlic until aromatic. Stir-in the chicken. Saute’ or sear until it changes color and no longer pink. Stir occasionally to cook evenly.
Once the chicken is light brown, add ground black pepper and fish sauce. Stir to blend. Simmer for around 3 minutes to let the fish sauce to evaporate.
Then, add tomato paste, chicken broth cube. Stir to combine. Then, add water or chicken broth. Cover and let it simmer for 15 to 20 minutes using medium heat.
After simmering, add the potatoes, carrots and tomato sauce. Stir to combine. Cover again and simmer for another 15 minutes or until the veggies are tender.
Once the carrots and potatoes are tender, taste the sauce. Add sugar to taste. Add the green peas and green bell pepper (you can also add salt if needed). Stir then cook for another 3 to 5 minutes until the sauce becomes thicker.
Remove from heat and serve with hot rice. Enjoy!

CILANTRO LIME CHICKEN RECIPE
Cilantro lime chicken -
•1tbs olive oil
• copped cilantro
• 1tps chili powder
• 1/2 tps of paprika
• 1/2 tps of cumin
• 1/2 tps of garlic
• salt & black pepper to taste
• one lime juice
(The more chicken you use, the more season)
Rice maker -
• rinse rice off with water until clear
• two cups of rice, to cups of water
Pineapple salsa -
• diced pineapple, diced tomatoes, chopped red onions, chopped cilantro
• season w/ salt, black pepper, sprinkle of chili powder & garlic powder, & lemon juiced

INGREDIENTS:
For the sauce:
2 tbsps corn oil
1 small onion
1/2 cup bell peppers different colours, bite sized pieces
1 tsp finely minced ginger
1/4 - 1/2 cup tomato ketchup
1 cup pineapple juice
1/4 - 1/3 cup rice vinegar
1/4 cup white sugar
1 tablespoon cornstarch
1 tablespoon water (room temperature or cool)
1 - 2 cups cubed pineapple
a few drops of red food colouring or annatto powder
Asian fish sauce (optional)
Marinating the chicken:
1 chicken breasts cubed
oil for frying
Season the chicken with:
1 tsp minced ginger
1 tbsp onion powder
2 tbsps soy sauce
1 tsp chinese fve spice powder
1 tsp Asian fish sauce (optional)
Black pepper
1 large egg beaten
Coating for chicken:
1 cup cornstarch
1/2 - 1 cup all purpose flour
1/4 tsp salt
