How To make Chicken Puffs
2 T Butter
1/4 c Flour
1 ea Egg
1/4 c Swiss chesse(shredded)
2 c Chicken (cooked, fine chop)
1/4 c Celery (finely chopped)
2 T Pimento (chopped)
2 T Dry white wine
1/4 c Mayonnaise
Melt butter in 1/4 cup boiling water. Add flour and a dash of salt; stir vigorously. Cook and stir until mixture forms a ball that doesn't separate. Remove from heat and cool slightly. Add egg; beat vigorously until smooth. Stir in cheese. Drop dough onto greased baking sheet, using 1 level teaspoon dough for each puff. Bake at 400F for 20 minutes. Remove from oven; cool and split. Combine remaining ingredients, 1/2 teaspoon salt and dash of pepper. Fill each puff with 2 teaspoons.

Bake at 350 deg F. for 30 – 40 mins
For the dough –

½ cup unsalted butter or 8 tbsp.
1/4 tsp salt or 1 tbsp sugar for a sweet puff
4 large eggs at room temp or 5 small
For the filling-
1 ½ cups cheese – cheddar or pepper jack
1 tbsp. grated butter
1/2 tsp lime pepper sauce- found under condiments
2 tbsp mayo
1 tsp Dijon mustard
eggwash - beat 1 egg with 2 tsp water

Trini Chicken Puffs Recipe - Episode 204
Would you like to Support my channel ? Black pudding recipe - Trinidad Chicken Puffs Recipe - makes 20- 24
Bake at 350 deg F. for 30 – 40 mins
For the dough –
1 cup flour
1 cup water
½ cup unsalted butter or 8 tbsp.
½ tsp salt
4 large eggs at room temp or 5 small
For the filling-
1 large tin of chicken breast chunks
1 scallion chopped finely
1 tsp lime pepper sauce- found under condiments
1 tsp celery salt
1 tbsp mayo
Pinch of salt
Pinch of black pepper
1 egg + a drop of water to make an egg wash
Chicken Puffs / Savory Puffs
Dough:
1 cup water (room temp)
1 stick butter
1/2 tsp salt
1 tbsp granulated sugar
1 cup flour
4 large eggs
TIP: If puffs start to deflate after baking then they need more baking. Place back I'm over for another 10 to 15 mins. It may take up to 35 mins depending on your oven.
Filling:
TIP: Add 1 and 1/2 tbsp extra of mayo and blend mixture to make chicken cream to fill
(2) .5 oz tins of chicken
1/4 tsp salt ( if chicken already has sodium then omit the salt )
1/8 tsp black pepper
1 and 1/2 tbsp mayonnaise
1/2 tbsp mustard
1 tsp garlic powder ( or 1 clove of garlic)
1/2 tsp paprika
hot sauce optional
1 tbsp finely chopped cilantro
OR Use this recipe for a CREAMY SMOOTH filling. PERFECT.
Trini Chicken Puffs
Puff Pastry or 'Pate a Choux' is a light pastry dough which is used as the base in many French desserts.
However, in Trini, we eat it as a savory appetizer. You can find these at every single bakery in Trini and they are most likely filled with Tuna, Chicken or Cheese paste. They're so fun and easy to make for events and even for breakfast, brunch or dinner.
Ingredients for 25-30 puffs
-1 cup AP flour
-Pinch of Salt
-Pinch of sugar
-1/2 cup of butter (113g)
-4 eggs
-1 egg for the egg wash
-1 cup of water to cook dough
-Piping bag or ziploc bag
