Chicken Divan
Chicken divan is a classic, comforting casserole filled with creamy, cheesy goodness and a serving of vegetables too! It's easy, quick, and makes a great freezer meal for prepping in advance.
RECIPE AND INSTRUCTIONS HERE -
Ingredients
non stick cooking spray
5 cups broccoli florets
4 cups cooked chicken cubed or shredded
1 cup shredded cheddar cheese
22.5 ounce cream of chicken soup 1 family size can
1/2 cup panko breadcrumbs
2 Tablespoons butter melted
1 Tablespoon fresh parsley minced, optional as garnish
Instructions
Preheat the oven to 400F. Spray the inside of a 9 by 13-inch casserole dish with nonstick cooking spray.
Fill a 3-quart saucepan about halfway full with water. Bring to a boil and generously salt the water. Add the broccoli and boil for 90 seconds. Drain immediately.
Spread the chicken out evenly into the prepared casserole dish. Spread the broccoli on top of the chicken, and sprinkle the cheddar on top. Pour the soup on top, spreading it out. Sprinkle on the panko, and then drizzle on the butter.
Cover the casserole with foil and bake until warm throughout, about 20 minutes.
Remove the foil and broil briefly to brown the top.
Sprinkle on the parsley and serve.
Notes
If you want to use frozen broccoli, thaw it first and then drain off the water. (There’s no need to boil the broccoli if you’re using frozen.)
Rotisserie chicken works great here, and so does any cooked, cubed chicken.
To freeze: Prepare the casserole but do not bake. Allow the broccoli to fully cool (and the chicken, if you're cooking it yourself) in the dish before sealing it with an air-tight lid (or tightly wrapped with plastic wrap followed by aluminum foil). Freeze for up to 3 months. Allow to thaw in the refrigerator overnight before baking. You may need to add 5-10 extra minutes in the oven if it's going in cold.

My Scratch Made Chicken Divan is an updated, slimmed down version that packs flavor with no canned soup, sour cream and half the butter of others. So good!

Ingredients
2 lbs chicken breast chopped
1/2 tsp kosher salt
1/2 tsp black pepper
4 tbsp flour separated
2 tbsp olive oil separated
1 lb broccoli florets
2 1/2 cups chicken stock
2 tbsp butter
1 shallot diced
2 tsp Worcestershire sauce
1/2 cup dry sherry
3/4 cup half and half
1/4 cup Parmesan cheese plus 2 tbsp
1/4 cup Panko breadcrumbs
1 lemon zest only (optional)
Instructions
Slice chicken breast meat into bite size pieces. Season with salt and pepper. Dust with 2 tablespoons flour and set aside.
Over medium high heat in a large skillet add 1 tablespoon of olive oil and brown the broccoli slightly, cooking for 3 minutes. Add 1/2 cup chicken broth and cover. Cook for 2 minutes. Remove from pan and set aside.
Add the other tablespoon of oil to the skillet and brown the chicken pieces over medium high heat. Cook for 5 minutes.
Place chicken in a 13x9 baking dish seasoned with cooking spray. Sprinkle broccoli on top of chicken.
In same skillet add the butter and over medium heat sauté the shallot for a minute. Sprinkle remaining 2 tablespoons of flour in pan and stir to cook. Add the Worcestershire sauce, sherry, chicken stock and half and half. Stir and reduce for several minutes until thickened. Stir in Parmesan cheese and pour over chicken and broccoli.
Sprinkle Panko breadcrumbs and more cheese (optional) if you like on top. Broil for 3-5 minutes until top is golden brown and bubbly. Serve with grated lemon zest over top (optional).

INGRDIENTS:
* 1 lb of chopped fresh broccoli
* 3 breast of chicken, cubed & cooked
* 1 (10.5 oz) can cream of mushroom soup or cream of broccoli soup
* 1/3 cup milk
* 1 cup shredded cheddar cheese
* 2 tbs of melted butter
* 2 tbs of bread crumbs
Pre-heat oven 450 degrees F or 230 Degrees C.
Bake for 15 minutes or until becomes lightly brown.
Bring broccoli to boil, cook for 5 minutes.
Cook chicken for 10 minutes

✅Ingredients
• 2 cups stuffing, prepared to package instructions
• 2 cups broccoli florets, steamed
• 2 cups (approx. 2 pounds) chicken, cooked, cubed, or shredded lightly
Sauce:
• 4 tablespoons salted butter
• 4 tablespoons all-purpose flour
• 2 cups chicken broth
• 1 cup heavy cream
• 1 cup sour cream
• ¼ cup lemon juice, freshly squeezed
• 1 tablespoon granulated garlic
•1 tablespoon stone-ground mustard
• 2 teaspoons dried parsley
• 2 teaspoons onion powder
• 2 teaspoons salt
• 2 teaspoons black pepper
• 3 cups shredded sharp cheddar cheese , divided
• ½ cup mayonnaise
Topping:
• 2 cups crushed Ritz crackers
• 2 teaspoons granulated garlic
• 4 tablespoons salted butter, melted
✅Instructions
1️⃣ Preheat the oven to 375 degrees Fahrenheit and lightly grease a 9x13 pan or 3 1/2 quart casserole dish with nonstick cooking spray.
2️⃣Spread the cooked stuffing out over the bottom of the pan in an even layer. Top with steamed broccoli florets and cooked chicken.
Sauce:
1️⃣ Melt butter in a medium-sized saucepan over medium heat. Once melted, sprinkle in the flour and continuously stir until well combined and the mixture turns a deep golden color.
2️⃣ Pour in chicken broth, heavy cream and sour cream. Stir until all ingredients are smooth and simmering. Reduce the heat to low.
3️⃣ Add lemon juice, granulated garlic, mustard, parsley, onion powder, salt, and pepper. Mix well. Add in 1 1/2 cups of shredded cheese. Remove from heat
4️⃣ Add in the mayonnaise and stir until well combined. Pour sauce over the chicken layer.
Topping:
1️⃣ Sprinkle the remaining 1 1/2 cups of shredded cheese on top of the sauce layer.
2️⃣ In a small bowl, stir together crushed Ritz crackers with melted butter. Add in the 2 teaspoons of garlic powder to the mixture and stir to combine. Sprinkle in an even layer over the top of the casserole.
3️⃣ Bake the casserole at 375 degrees for 45 minutes or until bubbly and browned. Serve hot!
