Beef Neck Bones:
5-6 lb beef neck bones
1 tbsp oxtail seasoning
1 tbsp beef bouillon powder
1 tbsp better than bouillon
1 tsp thyme
1/2 tsp rosemary
1 1/2 tsp curry
1 tsp browning
1 1/2 tsp garlic pepper seasoning ( salt free)
1/2 cup dry red wine
1 tsp salt ( adjust to taste)
2 tbsp ketchup
water
1 large onion
5 cloves garlic

This soul food Sunday meal can SMACK! But you won't believe how healthy it is! I'm making hot honey baked chicken, gumbo collard greens, mac n' cheese ( with hidden veggies and other swaps), green beans, brown rice, and salad. I suggest eating a small portion of the mac and the brown rice, and filling up on all the veggies and protein. The healthy fats like grass fed butter and organic lard will keep you full, but not give you the itis ????.
Gumbo recipe :
Green Seasoning:
Hot Honey Chicken
3-4 lb chicken
olive oil
1 tsp chicken bouillon, garlic powder, onion powder
1 tbsp green seasoning
1/2 tsp ginger powder
1/2 tsp scotch bonnet pepper powder (cayenne is a good swap)
1 tbsp spicy mango sauce
1/2 tbsp honey
1 tsp paprika
1 tsp chicken seasoning
Garlic, allspice seasoning
Gumbo Collard greens
2 lb collard greens
1 onions
1 bell pepper
2 stalks celery
5 cloves garlic
1/2 tbsp salt free cajun
4 oz chicken andouille sausage
1 lb smoked turkey
fat back or butter
1 tbsp butter
2 tsp better than bouillon
2 tbsp dry roux
1/2-1 tsp gumbo file

Peach Cobbler with Canned Peaches and Pie Crust
Peach cobbler with canned peaches and pie crust is easy and delicious. Although fresh or frozen peaches are more flavorful, many old fashioned Southern cobbler recipes call for canned peaches because they are cheap and readily available. However, since canned peaches are less flavorful, it is necessary to add extra spices if you want to make a peach cobbler that is truly delicious.
Although I used peaches canned in extra light syrup, you can also use peaches canned in heavy syrup, or even juice because in the video I tell you how to adjust the recipe. Canned peaches have a lot of syrup, so it is necessary to reduce some of the juice so that the cobbler is not watery.
After cooling the reduced syrup and adding brown sugar to the peaches, it is time to add the spices. Cinnamon and nutmeg are common in old fashioned Southern peach cobbler recipes, but I add a few others as well. Although I did not add any lemon juice, a lot of recipes include it, and in hindsight, I think that somewhere between 1 teaspoon and perhaps as much as 1 tablespoon would have been a good addition to this easy peach cobbler with canned peaches and pie crust recipe.
After adding sugar and spices to the filling, it is time to prepare the crust. Although storebought pie crust is fine, I always use homemade. Making a double crust peach cobbler is definitely an option, but instead of a bottom crust, I like to add dumplings: little pieces of pie crust added directly to the peach filling. Some people might be hesitant to do that, fearing that the pie crust dumplings would be spongy or leathery, but that is not the case: they are soft and juicy, soaking up some of the sweet filling. Once you try this with dumplings, you will understand why a lot of old fashioned peach cobbler recipes with dumplings are so popular in the South. I then add a top crust, cut air vents, sprinkle with sugar, and bake.
This peach cobbler with canned peaches and pie crust is absolutely amazing. It is peachy but also spicy, and the combination of crispy crust on top and soft dumplings inside is great, too. Although it is delicious on its own, you can also serve it with ice cream or whipped cream because it is not too sweet.
