12 oz Flour
8 oz Sugar
8 oz Margarine
6 oz Glace cherries
2 oz Ground almonds
1 ts Almond extract
4 Eggs
1/2 c Milk
1. Cream margarine and sugar. Add egg yolks, beat well, then add
flour, milk, glace cherries, ground almonds, and extract. Beat egg whites until stiff and fold into the mixture. 2. Fold mixture into a greased and lined 7" cake tin. Bake at
160C (320F or gas mark 3) for 75 minutes.

SUMMER ROASTED PEACH CHEESECAKE (Baked in Tuscany, Italy)
Don't you just love cheesecake? You know I have a sweet tooth and adore baking and this is a classic that I thought I'd cook for a summer lunch dessert in my home in Tuscany, Italy. I prefer a baked cheesecake and peaches are in season here at the moment so I decided to roast them with cinnamon, butter and sugar. Hopefully this is an easy recipe for you to try when entertaining friends in summer. I've included a few hints for avoiding a cracked overcooked cake so you can create something creamy, light, delicious and fail-proof. I make my cheesecake with yoghurt and cream cheese.
