How To make Cheesecake Passover
PIE CRUST:
3 tb Sugar
1 ts Cinnamon
6 tb Margarine into chunks
1 c Matzo meal
CHEESE CAKE:
1 lb Cream cheese
2 Eggs
1/2 c Sugar
1 ts Vanilla- or
1 tb Orange juice
TOPPING:
1 c Sour cream
2 tb Sugar
1/2 ts Vanilla
Pie crust Combine all ingredients in processor bowl and process until well blended. Press into bottom and up sides of a greased 9" pie plate. Do not bake. Cheese cake Process cheese with eggs, sugar and vanilla for 30 sec. Spread cheese mixture over crust. Bake in 375 oven for 25-30 min. or until set. Cool. Topping Combine all ingredients and process. Spread over cake and return to oven for five min. Cool and chill.

20 graham crackers/ digestive cookies or vanilla wafers are also delicious!
6 tbsp melted butter or vegan/margarine for the non dairy option
2-4 tbsp sugar depending how sweet you want your crust!
20-30 Oreo cookies
5 tbsp melted butter or vegan/margarine for the non dairy option
nutella 10 tbsp
KITKAT 30 fingers/ about 6 packs
filling for the mini cheesecakes no bake
500ml /2 cups heavy/full fat whip cream or parve/dairy free option ( our favourite is the Schneider whip cream)
500g/16 oz full fat cream cheese or parve/ non dairy cream cheese ( our favourite is mehadrin or tofutti) ( ****at room temperature*****)
120g/ 1 cup of icing/confectioner sugar

●3/4 cup sliced blanched almonds, toasted and cooled
●2/3 cup sugar
●2/3 cup matzo cake meal
●1/4 teaspoon salt
●8 tablespoons unsalted butter, melted and cooled slightly
●3 (8-ounce) packages cream cheese, softened
●3/4 cup sugar
●3 large eggs
●2 teaspoons grated lemon zest
●1 teaspoon pure vanilla extract
●Equipment: a 9-inch springform pan
●Garnish: julienned lemon zest
