------------------------------
Individual Apple Pies Baked in an Apple Cup
Serves 4
6 Granny Smith apples
¼ c sugar
¼ c brown sugar
1 tbsp AP flour
1 tsp ground cinnamon
Pinch of salt
Pinch of black pepper
Zest of 1 lemon
1 pie crust
½ cup cheddar cheese, shredded
1 egg, beaten with a touch of water for egg wash
½ cup sweet white wine
Preparation:
Preheat the oven to 375 degrees.
Peel, core and slice 2 of the apples into very thin pieces and set aside in a bowl. With the remaining 4 apples, slice off the tops, flip over and slice the bottoms off just to make the apples stand up, but not cutting all the way into the core. Using a pairing knife and a spoon, hollow out the apples, leaving an inch on the bottom as the base. Remove the core from the inside flesh, slice it into thin pieces and add to the bowl with the other sliced apples. Don't worry if the pieces are misshaped, as they will cook down in the oven.
To the bowl of sliced apples, add the sugars, flour, salt, black pepper and lemon zest. Mix well and fill the hollowed apples with this mixture. Top each apple with some cheese.
Roll out the pie crust and cut 4 even pieces to top the apples, creating whatever pattern on top of the apple you would like. Make a few incisions on top of the crust to form a vent. Brush each pie with the egg wash.
Place the apples in a baking dish and pour just enough wine in to cover the bottom of the dish. Cover the dish with foil, making sure to not touch the tops of the apples and bake for 25 minutes. Remove the foil and continue baking for another 15 minutes or until the crust is golden brown and the apples are soft.

1/2 tsp salt
6 Tablespoons / 85 grams of chilled, unsalted butter; cut into cubes
3/4 cup buttermilk

1/2 cup yogurt

- Sparingly add the buttermilk and pulse until the dough starts to come together.
- Transfer the dough to a floured working surface and gently knead it.
- Shape it in the form of a disc and wrap it in cling film. Chill it in the refrigerator for at least an hour.
For the filling and layering:
- Line a baking sheet with 2 layers of paper towels.
- Lay the sliced tomatoes in a single layer on this prepared baking sheet and cover with another 2 layers of paper towels.

- In a separate bowl, whisk together the yogurt, spring onion, dill, vinegar, sugar, salt & pepper.
- Preheat the oven to 220 degrees Celsius.
- Roll out the dough between 2 sheets of parchment paper.

- Spread the remaining yogurt mixture.
- Sprinkle the remaining cheese
- Arrange the remaining tomato slices.
- Now, sprinkle the 1/4 cup cheese mixture set aside in step 5.

Minced Beef and Cheese Pie - Australian New Zealand Pie @Pie Recipes
I was very wary when I first came across this recipe - the combination of minced beef and cheese strikes me as a bit weird. But it actually works wonderfully and I don't know why minced beef and cheese pies aren't more common. They are very popular in parts of Australia and New Zealand, and they really are yummy!
A few people have asked where they can buy those pie dishes. This is an affiliate link to Amazon UK - these perforated dishes seem to have replaced the ones that I have:

Website with all my recipes: It’s coming!
Ingredients
- 1.2kg beef brisket, silver skin removed and diced into 2.5cm cubes
- 2 tbsp grapeseed oil
- Two medium size carrots, diced
- Two brown onions, finely diced
- One stick of celery, finely diced
- 500ml beef stock
- 4 dashes Worcestershire sauce
- 50g all-purpose flour
- Salt and pepper to taste
- 3 tsp cornflour
- 200g cheddar cheese
- One sheet of puff pastry
- One sheet of shortcrust pastry
Method
1. Start by seasoning your beef with salt and dusting it with flour.
2. In a large heavy-based pot (you have a lid for) over a high heat, add your grapeseed oil and let it heat up.
3. Once the grapeseed oil is hot, start sealing off your beef in batches so you don't crowd the pan.
4. Once all the beef is browned, remove from the pan and set it aside.
5. Add your onions to the pan and sauté for 1-2 minutes with a little salt.
6. Next, add your carrots and celery and cook for a few more minutes.
7. Add the beef back to the pot and add the Worcestershire sauce and stock.
8. Stir it, bring it to simmer and then turn down low. Cook for 2 hours or until the beef is tender but still holding together.
9. Once it's cooked, mix the cornflour with some cold water to make a slurry and while the beef stew is still over the heat stir it through to thicken up the sauce.
10. Pour this out onto a tray to cool before you start assembling your pie.
11. For the pie, start by greasing your pie tin and lay in the shortcrust pastry.
12. Line the pastry with grease-proof paper and pie weights and bake at 180°c for 20 minutes.
13. After the 20 minutes, remove the pie weights and place it back into the oven for another 15 minutes and then let it cool completely.
14. Once cool, add your beef mixture to the pie casing and top it with the grated cheese.
15. Egg wash the outside rim of the cooked pastry and lay on your puff pastry, cramping all the edges.
16. Egg wash the puff pastry and bake at 180°c for 30-35 minutes or until golden brown.
17. Enjoy.
