How to make round braided Challah | Recipe | Rosh Hashana
Shulamis’ Traditional Challah
Makes 6 loaves
2 Tbs. dry yeast
41⁄2 cups warm water
1 cup sugar
12 to 14 cups flour, divided
3 eggs, beaten, divided
4 egg yolks
2⁄3 cup oil, plus extra for greasing
2 Tbs. salt
poppy or sesame seeds
Dissolve yeast in warm water in large bowl. Add sugar and 4 to 5 cups of flour. Mix well. Add 2 beaten eggs, 4 egg yolks, 2⁄3 cup oil and salt. Mix. Stir in most of the remaining flour. (Until kneading stage, mixing can be done in an electric stand mixer.)
When dough begins to pull away from sides of bowl, turn onto a floured board and knead for about 10 minutes, adding only enough flour to make manageable. Knead until smooth and elastic. Place in oiled bowl, turning to coat. Cover and let rise for 1 to 2 hours. Punch down. Let rise 1 hour. Shape as desired. For a 3-braid challah, divide dough into 18 pieces and roll with hands to form ropes. For each loaf, braid 3 of the ropes together on a greased baking tray. Preheat oven to 375 degrees. Let shaped loaves rise 20 minutes. Brush lightly with remaining beaten egg. Sprinkle with seeds. Bake until brown (about 40 minutes). Remove from pans and cool.

Today I will be sharing with you my favorite challah bread recipe. The method and ingredients are very simple. Super soft and delicious.
Ingredients:
Eggs 2 (save about 10ml for later)
Water 190-210ml
Instant yeast 5g
Honey or white sugar 50g
Bread flour or all-purpose flour 500g
Salt 5g
Olive oil 30g
Sesame seeds (optional)
Bake the challah bread in a 356F or 180 C preheated oven for 20-25minutes or until it is golden brown in color.

Challah bread is very easy to prepare. It is very soft and tastes delicious. It is usually braided or twisted and it is traditional eaten by Jewish people on the sabbath and holidays.

for about 4 cups of flour:
BREAD Flour: 500g or 3cups+ 2 TBSP ( if you dunk your cup in the flour) but 4 cups and 1tbsp if you spoon and level to measure your cups of flour
While measuring your flour
SALT: 10g /2 rounded tsp
SUGAR: 8 g or 2 tsp
OIL ( I like using sunflower oil) 80g or 1/3 cup
Warm water: 95g or 6 tbsp
Eggs: 2
To proof the yeast
95g warm water/ 6 tbsp
8g of yeast 2 rounded tsp
4 g of sugar / 1tsp
NB always try to WEIGH all ingredients to have consistent results
5lbs of flour recipe:
2.5Kg or 5 lbs of bread flour
6 eggs
375 ml or 1 1/2 cup of neutral oil
500ml or 2 cups of warm water
40g or 2 1/2 tbsp of salt
40g or 2 1/2 tbsp of sugar ( you can add way more if you want sweet challah)
to proof the yeast
