1/2 c Shortening 1/2 c Butter or margarine; -softened 3/4 c Sugar 2 Eggs 1 c Mashed cooked carrots 2 c All-purpose flour 2 ts Baking powder 1/2 ts Salt 3/4 c Shredded coconut Orange butter icing: 3 tb Soft butter or margarine 1 1/2 c Confectioners sugar 2 ts Grated orange peel About 1 tbs orange juice I have made these cookies, and they are GREAT! They're from the Betty Crocker Recipe Card Library. Heat oven to 400. Mix shortening, sugar, eggs and carrots. Blend in flour, baking powder & salt. Stir in coconut. Drop dough by teaspoonfuls about 2 inches apart onto lightly greased baking sheet. Bake 8 to 10 minutes or until no imprint remains when touched lightly. Immediately remove from baking sheet. Cool. Frost with orange butter icing. Makes 4 dozen cookies. Orange Butter Icing: Blend butter and sugar. Stir in orange peel and juice. Beat until frosting is smooth and of spreading consistency.JM. “carrots and ranch” cookies and icing dip Something Vegan
RECIPE “carrot” cookies: 1/2 cup organic powdered sugar 1/4 cup neutral baking oil 2 Tbsp. non-dairy milk 1 tsp. vanilla extract 1/2 tsp. orange extract (optional, or other extract flavor) orange food coloring 1 1/4 cups all-purpose flour 1/2 tsp. salt “ranch” icing dip: 1/2 cup organic powdered sugar 1 Tbsp. non-dairy milk 1/4 tsp. vanilla extract About a Tbsp. green sprinkles
Preheat the oven to 350 degrees Fahrenheit. To a bowl, add powdered sugar, oil, non-dairy milk, vanilla extract, orange extract, and orange food coloring. Stir well. Add flour, and salt, and stir until smooth. Shape into carrots, and place on a lined baking pan. Bake about 10-12 minutes. To make the icing dip, to a bowl, add powdered sugar, non-dairy milk, and vanilla extract. Stir until smooth. Add green sprinkles, and stir in. Makes about 36 “carrot” cookies.

Amazing Carrot Cake Recipe
My delicious carrot cake recipe is almost too easy to believe and my gosh is it good! The batter has toasted pecans, shredded carrot (of course), and lots of spices! The cake is very moist but not at all oily! Covered in cream cheese frosting and topped with a ring of cute buttercream carrots!
