How To make Carribean Crock
1 ea Bag 16 oz dry beans
3 ea Left over rib bones (knawed)
2 sm Onions, chopped
1/2 c Green onions, chopped
1 c Green beans, fresh! whole
1 tb Chinese 5 spice
2 qt Water, or 'to fill pot'
Simply delicious! If you love baked beans but cant take the sugar levels, this is for you. The meat is optional but a nice touch. The dried beans can be almost any type, but suggested are: Kidney, red beans, pink beans, pinto, black beans, or a mix of the above for a true fiesta pot.
Just dump it all in and let it cook.
Optional additions are: Pretty colored peppers added near the end of the cooking cycle, fresh tomatos (Italian work best due to firmness), ripe black olives (dont use green), pecans, whole grapes.
Serve this with thin toasted slices of baby bagels or a rye toast, and just a hint of fine white cheese such as gryere or brie.
Nutritionally complete, low in fat, low in sodium pending on the additions, suitable for diabetics and dieters.

Stewed Beef Recipe (Jamaican Style) Beef Stew, Tender, Flavorful, Easy!
This Stewed Beef recipe is simple but packed with spices and loads of flavors, extremely tender and juicy.
Ingredients
2 pounds Beef (Any Cut)
2 tbsp jerk seasoning
1 tbsp all purpose seasoning
1 tsp salt
2 tsp browning (more or added color)
3 tbsp blended green seasoning (or chopped scallion, thyme, garlic & onion
1 tsp mince ginger
2 tsp crush pimento seeds
Oil for cooking
1 tbsp sugar for (caramelize)
3 tbsp ketchup
1 carrot
1 twig Scallion & thyme
1 Whole pepper
small bell pepper

INGREDIENTS ????⬇️

????Season the Oxtail
------------------------------
2 1/4 lbs Oxtail, trimmed of excess fat and rinsed with cool water and vinegar
2 - 3 tbsps Oxtail or Beef seasoning (I used the Irie brand oxtail seasoning)
1 tsp Paprika
4 - 6 Allspice berries, crushed
1/2 - 1 tbsp brown sugar
Approx 1/4 cup Green seasoning (Recipe here )
Black pepper
Salt to taste if necessary
1 1/4 tsp Browning (can be found at Caribbean Food stores and some Walmarts)

????Cook the Oxtail
------------------------------
1 1/2 tbsps Vegetable oil
2 tsps butter (optional)
1 small onion, diced
Diced Carrot as desired
Diced Bell pepper as desired
2 tsps butter (optional)
About 1 tbsp Soy sauce
Ketchup
Fresh thyme sprigs
Minced scotchbonnet

????Make the Gravy
-------------------------
Diced scallion
Slurry: 2 tbsps cornstarch mixed 2 tbsps water (stir in as needed)
1 1/2 tbsp Worcestershire sauce
Soy Sauce as desired
Fresh thyme as desired
Whole Scotchbonnet (optional)
Salt and pepper to taste
More Oxtail seasoning if desired
Add canned Butter Beans
Steps:
1. Sear the oxtail
2. Pressure cook it
3. When pressure cooking time elapses. Leave it alone, still on sealing for 25 - 30 minutes if your patience allows ???? It'll be better for the meat.
4. Then turn it off.
5. Make gravy
6. Finish cooking the meat IN the gravy on saute setting.
