How To make California Chef's Salad
THOUSAND ISLAND DRESSING:
1 1/2 c Mayonnaise
1/2 ts Salt
1/4 ts Black pepper
1 ds Red pepper
1 tb Lemon juice
1 tb Catsup
1 ts Worcestershire sauce
1/2 c Chili sauce
SALAD:
2 Tomatoes; cut in wedges
8 c Torn salad greens
1/4 c Sliced green onions
2 Cucumbers; sliced
4 sl Salami or cooked ham (thin)
- cut in strips 1/2 c Cubed cooked Turkey
-=OR=- Chicken Minced parsley Combine mayonnaise, salt, black pepper, red pepper, lemon juice, catsup, Worcestershire and chili sauce. Chill. To make salad, toss tomatoes, greens, green onions and cucumbers together. Place in deep salad bowl and top with salami and turkey. Serve dressing separately in sauce bowl, sprinkled with parsley. We call this Fancy Chicken Salad because of the dressing, grapes and pecans. It's a fresher and lightened-up version of classic chicken salad and it’s perfect for meal prep!

CHICKEN SALAD INGREDIENTS:
►1 lb cooked chicken breast (4 cups diced)
►2 cups seedless Red Grapes, halved
►1 cup (2-3 sticks) Celery, cut in half lengthwise then sliced
►1/2 cup Red Onion, finely chopped (1/2 of a small red onion)
►1 cup Pecans, toasted and coarsely chopped
DRESSING INGREDIENTS:
►1/2 cup mayo
►1/2 cup sour cream (or plain Greek yogurt)
►2 Tbsp lemon juice
►2 Tbsp dill, finely chopped
►1/2 tsp salt, or to taste
►1/2 tsp black pepper
