How To make California Casserole
1/4 c Butter or margarine
1 c Onion; chopped
4 c White rice; freshly cooked
2 c Dairy sour cream
1 c Creamed cottage cheese
1 lg Bay leaf; crumbled
1/2 ts Salt; optional
1/8 ts Pepper
3 cn (4 oz each) green chilies
-drained, halved lengthwise -leaving seeds 2 c Sharp natural cheddar cheese
-grated Parsley; chopped Preheat oven to 375 degrees F. Lightly grease a 12 x 8 x 2-inch baking dish (2-quart). In hot butter in large skillet, saute onion until golden about 5 minutes. Remove from heat; stir in hot rice, sour cream, cottage cheese, bay leaf, salt (optional), and pepper; toss lightly to mix well. Layer half the rice mixture in bottom of baking dish, then half of chilies; sprinkle with half of Cheddar cheese; repeat. Bake, uncovered, 25 minutes, or until bubbly and hot. Ingredients:
7 peppers poblanos, hatch or Anaheim
6 eggs at room temperature
1/2 tsp black pepper
3/4-1 tsp salt
1/2 tsp baking powder
1/3 APF (all purpose flour)
1/4 cup milk or heavy cream
Optional: 1/4 onion, 2 roma tomatoes and 1 jalapeños or Serrano chopped and mixed together
Shredded queso Oaxaca or your favorite melting cheese
For the salsa:
4 roma tomatoes
Chile serranos or jalapeños
Chile de árbol
1/8 onion
1 garlic clove
1/2 tsp oregano
1/2 tsp black pepper
Salt I’m using 2 tsp

Monterey Jack Cheese

Feta Cheese

Recipe Note: Queso fresco or Cotija cheese are the authentic cheeses used for Mexican Street Corn. Definitely use them if they're available to you. If you can't find any, feta and Monterey Jack are good substitutes. I use them in this recipe because I’m more likely to find them at my local grocery store, (living in rural Canada).

How to make Homemade Mayo Recipe:

Veggie Bake aka. Veg-All Casserole
INGREDIENTS:
2 15oz. Cans of Veg-all
1 Can Cream of Chicken Soup
1 Medium Sweet Onion (diced)
1 Cup Mayo (how to make homemade mayo:
½ Tsp. Pepper
½ Tsp. Salt
1 Cup Shredded Mozzarella Cheese (you can use any cheese)
1 Cup Ritz Crackers (crushed)
1 Stick of Butter (melted)
Non-Stick Cooking Spray
INSTRUCTIONS:
1. In a bowl, combine veggies, cream of chicken soup, onion, mayo, seasoning and cheese.
2. Scoop it into a pre-greased 8 x 10 baking dish. In a small bowl, combine crushed ritz crackers with melted butter, then spread it evenly over the top of the veggie mix.
3. Bake uncovered at 350 degrees for 30-35 minutes, or until golden brown and bubbly.
Serve warm and enjoy! This recipe can easily be doubled.
