Cajun Chicken Alfredo

Ingredients
4 (5-ounce) boneless, skinless chicken breasts
1 cup blackening spice (recommended: Paul Prudhomme's Chicken)
2 tablespoons extra-virgin olive oil
3 tablespoons minced garlic
1 cup roughly chopped marinated sun-dried tomatoes
1/4 cup white wine
3 cups heavy cream
3/4 cup grated Parmesan
1 teaspoon sea salt
1 teaspoon freshly ground black pepper
1 pound cooked fettuccine
1/2 cup sliced scallions
Directions
Preheat the oven to 350 degrees F.
Dredge the chicken breasts in the blackening spice and place in a cast iron skillet over very high heat. Blacken both sides of the chicken and place in the oven for 10 minutes, or until internal temperature of chicken reaches 165 degrees F on an instant-read thermometer. Slice in strips on the bias and set aside.
In a saute pan over medium heat, add 2 tablespoons of extra-virgin olive oil. Add garlic and lightly caramelize. Then add the sun-dried tomatoes and the chicken slices. Deglaze the pan with the white wine. Add the heavy cream, increase the heat to a simmer, and reduce the cream sauce by half.
When the cream sauce is to desired consistency, stir in 1/2 cup Parmesan, salt, pepper, and pasta.
Nest the pasta on large rimmed plates, pour sauce over pasta, and garnish with scallions and the remaining 1/4 cup Parmesan.

Cajun Fettuccine Alfredo with Andouille

Ingredients
Kosher salt
12 ounces fettuccine
1 tablespoon vegetable oil
6 ounces andouille sausage, sliced into rounds
4 scallions, chopped
1 celery rib, chopped
1 green bell pepper, chopped
1 teaspoon Cajun seasoning
1 cup heavy cream
1/2 cup freshly grated Parmesan, plus more for serving
2 tablespoons flat-leaf parsley
Directions
Bring a large pot of salted water to a boil. Cook the fettuccine according to package directions.
While the pasta cooks, heat the oil in a large skillet over medium-high heat. Add the sausage and cook, stirring occasionally, until golden brown on both sides, about 3 minutes. Add the scallions, celery, bell pepper, and Cajun seasoning and cook, stirring occasionally, until the vegetables are slightly softened, about 5 minutes. Add the cream and simmer until slightly thickened, about 1 minute.
Once the pasta is cooked, transfer it directly from the boiling water into the cream sauce using tongs or a pasta fork. Sprinkle the pasta with the Parmesan and toss to combine. Add a splash of the starchy pasta water to help the sauce thicken and coat the pasta. Top with chopped parsley and serve with additional Parmesan.

12 oz fettuccine noodles
1/2 lb Crab Meat (lump, claw, special, whatever is on sale)
1lb Large Shrimp
4 tbs Butter
2 Cups Heavy Cream
1.5 Cup Parmesan Cheese (Shredded)
1/2 Cup Pecorino Romano Cheese
1 onion
1 red pepper
1 green pepper
1 tbsp flour
3 cloves garlic (Minced)
1/2 Cup Dry White Wine - optional
1 lemon - optional
Tony’s Creole Seasoning
Old Bay
Salt, Pepper, Onion Powder, Garlic Powder, Chopped Parsley
(If you're making the Chicken and Sausage version, you'll need 1-2 chicken breasts and 1 lb Andouille Sausage instead of the crab and shrimp above)
Directions:
Crab & Shrimp Alfredo-
Boil your noodles per instructions. (Make sure to salt your pasta water!) Once noodles are done, strain, set aside and add a little olive oil or butter.
Begin by making your Alfredo Sauce. (You’re free to use your favorite jar of Alfredo sauce if you’re in a rush.. otherwise, give this a try from scratch!)
Add 2 tbs of butter to your pot. Once butter begins to melt, add flour and cook 1-2 minutes. Add a pinch of cajun seasoning to the roux. Add in minced garlic and cook. Next, add in your Heavy Cream and bring to a boil. Once it reaches a boil, turn your heat down to a simmer and add your creole seasoning (add a little a time so that you can tweak the saltiness to your preference. Add in your cheese a little at a time and incorporate until sauce thickens. About 8-10 minutes.
In a separate frying pan - add a little olive oil and cook shrimp. Once shrimp are almost finished, add in your white wine and cook off the alcohol (reduce by about half) (also, you can skip the wine if you want to)
Add in your crab meat and shrimp at this point and incorporate. Now taste your sauce and add any additional seasoning as necessary. Squeeze half fresh lemon and add 1/2 of your chopped parsley (Leave the remaining for garnish)
Add your noodles to your Alfredo sauce and mix together. Plate in a pasta dish and garnish with any remaining crab meat, shrimp, and chopped parsley.
For the Chicken & Sausage Recipe:
Season chicken breast on all sides and sear in a hot skillet for about 90 seconds per side to develop a nice crust. Add 2 tbsp butter and place skillet in a 400 degree oven until chicken is cooked thru (165 degrees internal temp) Cook sausage in a skillet to brown and warm thru and add sausage to your alfredo sauce along with the veggies and noodles. Top the pasta with your sliced chicken breast and garnish with shredded parmesan and chopped parsley.

1 lb boneless skinless chicken breast
1 lb rigatoni noodles
8 oz andouille sausage
1 diced shallot
2 cups fresh spinach
4 tbsps butter
1 tbsp garlic paste
2 tbsps flour
2 cups half and half
1 cup heavy cream
1 cup shredded parmesan cheese
2 cups shredded mozzarella cheese
1/4 cup diced parsley
salt, pepper, garlic, onion powder, cajun seasoning
Directions:
Start by dicing your shallot or onion and cutting the Andouille Sausage into bite sized pieces. Season chicken breast generously with cajun seasoning and all purpose seasoning.
2. Preheat oven to 400 degrees and boil your noodles per package instructions.
3. Sear chicken breast for 60 seconds per side in a hot skillet with a little cooking oil and then place the chicken in the 400 degree oven for about 15 minutes or until the chicken is 165 degrees internal temp.
4. Meanwhile, start on the Alfredo sauce by adding some butter to a skillet and then adding the sausage. Cook until the sausage is well browned and then remove with a slotted spoon. Next, add the shallot and cook for 2 minutes. Add 2 more tbsps of butter, and garlic paste. Next, add in 2tbsps of flour and cook for 2 minutes.
5. Next, add in your heavy cream and half and half. Bring to a boil and then reduce to a simmer. Add in the spinach and stir until it wilts and combines. Turn the heat to low and then begin adding your shredded cheese. Season to taste. Add in your sausage. Chop the chicken and add that to the sauce as well.
6. Mix everything together and then add to a casserole dish, top with mozzarella cheese and bake at 350 for 20 minutes.
7. Garnish with chopped parsley and serve.
