I’ve eaten this pasta every single week for the last week! | Cajun Steak Pasta
CAJUN PASTA⤵️
1.5 lb of steak
Olive oil
Salt
Black pepper
Garlic powder
1. Season you steak with salt, black pepper and garlic powder. No measurements needed, just measure til your ancestors tell you to stop. Bring your steak to room temp before cooking.
2. In a skillet, heat up some olive and cook your steak. I cooked mine for 2-3 mins on each side (high heat). Allow your steak to rest before cutting

SPICY PASTA
5 cloves minced garlic
2 cups heavy cream
1.5 TBSP dried parsley
1 TBSP paprika
2 tsp chicken bouillon
1 tsp garlic powder
1 tsp cayenne pepper
1 tsp red pepper flakes
1/2 tsp salt
1 cup wine Pinot Grigio or chicken stock
CORNSTARCH SLURRY
1/4 cup water + 1 TBSP cornstarch
ADDITIONAL INGREDIENTS
1 lb pasta, cooked
Parmesan cheese, for serving
Minced parsley, garnish
1. Heat up some oil and sauté garlic until it’s fragrant (high heat)
2. Once fragrant, add heavy cream and cook until it starts to bubble
3. Once it starts to bubble, add your spices (dried parsley, paprika, chicken bouillon, garlic powder, cayenne pepper, red pepper flakes and salt. Combine well.
4. Then add 1 cup of Pinot Grigio and corn starch slurry. Mix this until it starts to thicken.
5. Once thick, add cooked pasta and stir to combine.
6. Serve with protein, I used beef chicken steak, Parmesan cheese and minced parsley.

Cajun Chicken Alfredo

Ingredients
4 (5-ounce) boneless, skinless chicken breasts
1 cup blackening spice (recommended: Paul Prudhomme's Chicken)
2 tablespoons extra-virgin olive oil
3 tablespoons minced garlic
1 cup roughly chopped marinated sun-dried tomatoes
1/4 cup white wine
3 cups heavy cream
3/4 cup grated Parmesan
1 teaspoon sea salt
1 teaspoon freshly ground black pepper
1 pound cooked fettuccine
1/2 cup sliced scallions
Directions
Preheat the oven to 350 degrees F.
Dredge the chicken breasts in the blackening spice and place in a cast iron skillet over very high heat. Blacken both sides of the chicken and place in the oven for 10 minutes, or until internal temperature of chicken reaches 165 degrees F on an instant-read thermometer. Slice in strips on the bias and set aside.
In a saute pan over medium heat, add 2 tablespoons of extra-virgin olive oil. Add garlic and lightly caramelize. Then add the sun-dried tomatoes and the chicken slices. Deglaze the pan with the white wine. Add the heavy cream, increase the heat to a simmer, and reduce the cream sauce by half.
When the cream sauce is to desired consistency, stir in 1/2 cup Parmesan, salt, pepper, and pasta.
Nest the pasta on large rimmed plates, pour sauce over pasta, and garnish with scallions and the remaining 1/4 cup Parmesan.

1 lb. medium or large Shrimp, peeled and deveined
1 link Andouille Sausage or Smoked Sausage
12 ounces Fettuccine Pasta
4 - 5 tbsp Olive Oil
1/2 tsp Dried Oregano
2/3 cup Parmesan, grated
1 cup Heavy Cream
1 cup Chicken Stock
1/2 cup Crushed Tomatoes
1 tsp Brown Sugar
3 Garlic Cloves
3 tsp Creole Seasoning (Creole Kick)
1 Red Bell Pepper, diced small
1/2 Yellow Onion, diced small
1/2 large Yellow Bell Pepper, diced small
Kosher Salt and Fresh Ground Black Pepper to taste
1 tbsp Parsley for garnish (optional)

8 ounce linguine pasta
1 salmon fillet
4 ounces cream cheese
1/2 tablespoon minced garlic
1/2 tablespoon creole seasoning
1 Teaspoon parsley flakes
1 teaspoon Tony Chahere's Creole seasoning
1/2 teaspoon paprika
1 teaspoon garlic powder

Who doesn't love a good Alfredo? This is often one of the first things people learn to make... boil the noodles, warm up the jarred sauce, maybe toss in some broccoli, and serve on a thin paper plate that bends a little in the middle. 12 oz fettuccine noodles
1/2 lb Crab Meat (lump, claw, special, whatever is on sale)
1lb Large Shrimp
4 tbs Butter
2 Cups Heavy Cream
1.5 Cup Parmesan Cheese (Shredded)
1/2 Cup Pecorino Romano Cheese
1 onion
1 red pepper
1 green pepper
1 tbsp flour
3 cloves garlic (Minced)
1/2 Cup Dry White Wine - optional
1 lemon - optional
Tony’s Creole Seasoning
Old Bay
Salt, Pepper, Onion Powder, Garlic Powder, Chopped Parsley
(If you're making the Chicken and Sausage version, you'll need 1-2 chicken breasts and 1 lb Andouille Sausage instead of the crab and shrimp above)
Directions:
Crab & Shrimp Alfredo-
Boil your noodles per instructions. (Make sure to salt your pasta water!) Once noodles are done, strain, set aside and add a little olive oil or butter.
Begin by making your Alfredo Sauce. (You’re free to use your favorite jar of Alfredo sauce if you’re in a rush.. otherwise, give this a try from scratch!)
Add 2 tbs of butter to your pot. Once butter begins to melt, add flour and cook 1-2 minutes. Add a pinch of cajun seasoning to the roux. Add in minced garlic and cook. Next, add in your Heavy Cream and bring to a boil. Once it reaches a boil, turn your heat down to a simmer and add your creole seasoning (add a little a time so that you can tweak the saltiness to your preference. Add in your cheese a little at a time and incorporate until sauce thickens. About 8-10 minutes.
In a separate frying pan - add a little olive oil and cook shrimp. Once shrimp are almost finished, add in your white wine and cook off the alcohol (reduce by about half) (also, you can skip the wine if you want to)
Add in your crab meat and shrimp at this point and incorporate. Now taste your sauce and add any additional seasoning as necessary. Squeeze half fresh lemon and add 1/2 of your chopped parsley (Leave the remaining for garnish)
Add your noodles to your Alfredo sauce and mix together. Plate in a pasta dish and garnish with any remaining crab meat, shrimp, and chopped parsley.
For the Chicken & Sausage Recipe:
Season chicken breast on all sides and sear in a hot skillet for about 90 seconds per side to develop a nice crust. Add 2 tbsp butter and place skillet in a 400 degree oven until chicken is cooked thru (165 degrees internal temp) Cook sausage in a skillet to brown and warm thru and add sausage to your alfredo sauce along with the veggies and noodles. Top the pasta with your sliced chicken breast and garnish with shredded parmesan and chopped parsley.
