Exploring Chengdu's Buddhist temples is always an enjoyable activity. What about trying the food that the monks eat? In this video, I try some of the food surrounding Wenshu temple and inside the temple itself in Chengdu. Please like: facebook.com/foodrangin
To find this location, come to Wenshuyuan 文殊院 in Chengdu. The food outside the temple is awesome. If you want to try the food inside, come around 12PM or 5pm and lineup inside the temple for some free food. Too be honest, the food inside the temple wasn't that flavourful, but it was an amazing experience to eat in there and gain a glimpse of what the monks eat.

Soup is a versatile dish as per my understand. I love to have it as starter or appetizer, mostly in dinner and sometimes as a snack. This particular old school type mountain soup is perfectly fine to go to the dinner table with homemade Buns or Butter Garlic Toast . I love to have it even with butter Naan. It soothes the mood in the monsoon & winter. This is absoloute a no garlic no onion dish and you can also make it Vegan by adding Tofu and coconut and Soya products instead of milk and milk items.
If you dont like the thick one, you can make it more soupy by adding extra milk with seasoning (Black pepper powder, salt and freshly grated ginger).
Buddhist cuisine having their own style of food with more cream and spice. I tried to moderate it for satisfying everyone's taste buds. But in traditional culture they love to have this kind of soup with their own made special small Buns.
Ingredients :
Grated Pumkin : 250gms
Paneer / Tofu : 200 gms
Coconut Milk : 60 ml
Milk / Coconut milk : 60 ml
Butter / Vegetable oil : 2 table spoon
Cashew nuts (soaked in water) : 50 gms
Ginger : 15 gms
Dried Indian Red Chilli : 2 pcs
Black Pepper : 12 to 15 pcs
Green Cardamoms : 3 to 4 pcs
Salt : 1 tea spoon ( to taste)
Sugar : 1 table spoon
(The extra 1 table spoon is up to your taste bud)
Fresh Cream / Coconut Cream : 1 table spoon
A pint of Yellow Food Colour diluted in water (optional)
Method :
1. Atfirst cut the pumpkin in big sizes and wash properly
2. Grate the pumpkin.
3. Crush the peppers & cardamoms.
4. Add the butter in a pan.
5. Swallow fry the paneer for 2 to 3 minutes, but if you are using a tofu then fry it properly.
6. Add the crushed spices in to the butter.
7. Then add the grated pumpkin.
8. After 5 mnts of cooking over a high flame add the salt. The salt help to release the pumpkin's moisture.
9. In the mean time grind the water soaked ( 30 mnts ) cashew along with the chilli and ginger.
10. When the pumpkin change its color (slightly), add the cashew, ginger, chilli mix.
11. After adding the mix continuously stir it.
12. Now check in the video, for the texture change of the item.
13. When the proportion coming out from the pan, add the coconut milk in two sections.
14. Add food color (optional) and sugar.
15. Switch off the flame and rest it for 10 mnts to cool down.
16. Now put the gravy into a blender to blend everything properly.
17. Strain the gravy for a more creamy texture.
18. Add the hot milk.
19. Now add the soup in to the pan and add the sugar .
20. Add the cream and turn off the flame.
21. Cut the Paneer in crouton size ( small & cube)
22. Serve the soup in to a bowl after garnishing with the paneer chunks.

宽油:大量的油,很多的油
滑锅:冷油下锅,滑过锅底,使锅的温度迅速提高,并产生油膜,防止粘锅

西洋菜羅漢果湯 | Watercress and Monk Fruit (luo han kuo) Soup
I am sharing this simple watercress and monk fruit soup that has good benefits for our bodies, most important for this allergy season to reduce coughing, sore throat or flu. This soup is good for the lungs, contains antioxidants, vitamin C, iron and other benefits.
INGREDIENTS
*1 lb pork neck bone
*2 bunches watercress (approx. 400g/14oz)
*1 Dried Monk Fruit
*1 large / 2 small carrot(s)
*¾ tsp salt for taste
*4 liters (16 cups) water
PREPARATION
1. Watercress: Snip off the old part of the stems. Snip off yellow or bad leaves and snip into smaller segments. It’s very common that we find slug/snail and other pests on the vegetables. How do you clean your vegetables? Add 1 tbsp salt in cold water and soak for 5 minutes. Then, gently wash at least 2-3 times. Drain well in the colander and set aside
2. Dried Monk Fruit: Wash, pat dry and smash/break into 2 or few pieces
3. Carrot: Peel, snip off ends, rinse, pat dry and cut into pieces
4. Pork Neck Bone: Trim off some of fat with shears or a knife. Add 1 tbsp salt, rub clean and rinse for several times. Bring water to boil, put pork bone in and blanch for 5 minutes with medium heat. Then remove, clean and rinse with cold water.
INSTRUCTIONS
1. Add 4 liters (16cups) water into a ceramic cooking pot, place pork bone in, monk fruit and carrots then bring to a boil. Once it’s boiling, lower the heat to medium low, cover with a lid and simmer for 30 minutes.
2. After 30 minutes, add watercress and simmer for 1 hour with medium low heat and lid on
3. Lastly, add ¾ tsp salt, simmer for a few minutes, remove the oil on the surface. Now it’s ready to serve and enjoy!

**For Monk fruit, you can reduce it if you prefer less sweetness but you need it in this soup recipe
