How To make Buddhist Monk's Soup
1 qt Water
1 lb Pumkin or butternut squash
- peeled & cut into - large chunks 1 Sweet potato
- peeled & chunked 1/2 c Raw peanuts; shelled and
- skinned. Soaked 30 min, - drained & roughly chopped 1/3 c Dried mung beans
- soaked 30 min and drained 3 tb Vegetable oil
1 Square of bean curd
1 qt Coconut milk
1/2 oz Cellophane noodles,
- soaked 20 min, drained - & cut into 1 inch sections ~- Boil the water and drop in the pumpkin/squash, sweet potato, peanuts and mung beans. Cook on medium heat for 35 min. While making the soup, prepare the bean curd by heating the oil in a frying pan and cooking the curd until light brown on both sides. Slice lengthwise into 1/4 inch strips and set aside. After the 35 min, check the mung beans for softness. If they're soft, add the coconut milk and a touch of salt. Bring up to a boil and throw in the cellophane noodles and fried bean curd. INGREDIENTS
Dried ingredients
25 g (about 1/2 cup) dried lily flowers
25 g (8 medium) dried shiitake mushrooms
10 g (2 tablespoons) dried wood ear mushrooms
40 g (1 small bundle) mung bean vermicelli noodles (yield about 1 cup once rehydrated), or other types of vermicelli noodles
Sauce
2 tablespoons light soy sauce
1 tablespoon vegetarian oyster sauce (or regular oyster sauce)
1 tablespoon dark soy sauce
1 teaspoon sugar
1/2 teaspoon salt (use 1/4 teaspoon salt if you do not plan to serve the dish with rice)
1 cup re-hydrating water from the lily flower and mushroom
1 teaspoon sesame oil
Slurry
1 teaspoon cornstarch
1 tablespoon water
Stir fry
2 tablespoons peanut oil (or vegetable oil)
4 green onion, chopped
1 tablespoon minced ginger
1 carrot, sliced
10 pieces deep fried tofu puffs, halved
4 heads baby bok choy, quartered
230 g (4 cups) chopped napa cabbage
1/2 cup sliced bamboo shoots

佛跳墙
材料:
鸡-1只
鸡壳-1个
鸡脚-5对
鲨鱼软骨-半包(泡软1个晚上,然后用姜、葱、绍兴酒烫一烫去腥味)
带子-1包
干贝-20粒
红烧鲍鱼-2 罐
花胶-随意/ 喜欢可以放多(泡发1个晚上,用姜、葱、绍兴酒烫一烫去腥味)
海参-5 (泡发4 天)
冬菇~8 朵
葱-1 把
姜-5/6 片
绍兴酒-2 汤匙
注:汤熬3/4 小时,放凉取出鸡肉,过濾汤汁。
再把剩余的材料用濾好的鸡汤炖2小时。
最后才把鲍鱼、花胶、带子大火炖30分钟即可享用。
