The Best Chewy Chocolate Chip Cookies
Servings: 12
INGREDIENTS
½ cup sugar
¾ cup brown sugar, packed
1 teaspoon salt
½ cup butter, melted
1 egg
1 teaspoon vanilla extract
1¼ cups all-purpose flour
½ teaspoon baking soda
4 ounces milk or semi-sweet chocolate chunks
4 ounces dark chocolate chunks (or your preference)
PREPARATION
Preheat oven to 350°F/180°C.
In a large bowl, whisk together the sugars, salt, and butter until a paste has formed with no lumps.
Whisk in the egg and vanilla, beating until light ribbons fall off the whisk.
Sift in the flour and baking soda, then fold the mixture with a spatula, being careful not to overmix too much. This will cause the gluten in the flour to toughen which will result in cakier cookies.
Fold in the chocolate chunks evenly, then chill the dough for at least 30 minutes. For a more intense toffee-like flavor and deeper color, chill the dough overnight. The longer the dough rests, the more complex its flavor will be.
Scoop the dough with an ice-cream scoop onto a parchment paper-lined baking sheet, leaving at least 4 inches of space between cookies and 2 inches of space from the edges of the pan so that the cookies can spread evenly.
Bake for 12-15 minutes, or until the edges have started to barely brown.
Cool completely, and enjoy!

In this cookie recipe, your chocolate cookies are given a twist with their brownie-like texture! It goes well with some good toppings, but skip the nuts and go for candied gingers instead!

Ingredients:
8 oz dark chocolate bars, shaved
4 oz dark chocolate chips
2½ oz candied ginger, chopped
2 eggs at room temperature
½ cup granulated sugar
⅓ cup all-purpose flour
⅓ cup cocoa powder
¼ cup brown sugar
¼ cup unsalted butter at room temperature, divided
1 tbsp grated fresh ginger
1 tsp vanilla extract
¾ tsp baking powder
½ tsp salt
Cooking spray
Water for boiling

0:11 Preheat the oven to 350 degrees F & prepare a pot with boiling water.
0:17 Grease a baking tray with cooking spray & line it with parchment paper.
0:22 Sift together flour, cocoa powder, baking powder, & salt. Set aside.
0:40 Transfer your shaved chocolate & 2 tablespoons of butter into a heat-proof mixing bowl. Place this on top of the pot with boiling water, & whisk until evenly melted. Ensure that the boiling water does not touch the bottom of the bowl. Set aside.
0:57 In a large mixing bowl, cream together the remaining butter & both sugars using a hand beater. Cream for 8 to 10 minutes or until pale & fluffy.
1:12 Add eggs, melted chocolate, vanilla extract, & grated ginger. Continue creaming.
1:35 Fold in sifted flour mixture into your wet mixture until evenly incorporated.
1:45 Lastly, fold in your chocolate chips until evenly incorporated.
1:55 Portion roughly 2 ounces of cookie dough onto your lined baking sheet, inches apart from each other.
2:05 Lightly flatten, then place roughly 1½ teaspoons of candied ginger on top of each cookie dough. Repeat until you have used up all your cookie dough & candied ginger.
2:17 Bake for roughly 15 minutes, or until edges turn firm & cookies have a crinkled appearance. You may need to rotate your baking sheet for even baking.
2:21 Once baked, cool down cookies onto a wire rack. You can either cool these down completely for air-tight storage or just until warm enough to handle & serve. Best eaten while still warm, as it will have the texture of brownies.
