Ingredients
-4 salmon filets
-3 tbsp parsley chopped
-3 tbsp melted butter
-3 tbsp olive oil
-3/4 tsp salt,
-1/4 tsp pepper,
-1 tsp garlic powder
-1 lemon juiced
-1 bundle asparagus chopped
-1 cup peas
-1 lb orzo uncooked
-3.5 cups veggie broth
-1/2 cup grated Parmigiano Reggiano
-2 cups fresh spinach
-1 lemon sliced thin
-Preheat oven to 400F
-To a 4.5 qrt baking dish, add oil, butter, lemon juice, parsley, salt, pepper, garlic powder, and lemon juice. Use a fork to mix ingredients.
-Dip salmon fillets in marinade, coat and set aside.
-To the same dish add peas, asparagus, orzo and broth
-Cover with lid or aluminum foil and cook in oven for 20 min.
-Remove from oven, add grated parm and spinach and mix together until spinach wilts.
-Place salmon filet into the baking dish nestled in the orzo. Top with lemon and cook uncovered for 15-20minutes depending on how you like your salmon.

Such a delectable easy dish. Starting with a simple brown butter with lemon orzo, asparagus and topped with vegan feta.
Ingredients
12oz or orzo, cooked
1 bunch of asparagus, cut into bite sized pieces
1/4 cup of butter
1/3 cup of lemon juice
2 tbsp crushed garlic
1-2 cups of Vegan friendly chicken broth or vegetable broth
3 Tbsps of nutritional yeast (optional)
Freshly chopped parsley
1/2 cup of vegan feta crumbles
Salt and pepper
Fresh lemon slices
Directions
Heat a large frying pan over medium
Add in half your butter
Once melted, cook stirring often until butter starts to brown
Add in your garlic, lemon juice and 2 cup of broth
Mix well
Add in your asparagus
Cook for 2-3 minutes
Add in your cooked orzo
Season with salt and pepper
Mix well
Add in your remaining butter and nutritional yeast
Mix well
Stir in a handful of freshly chopped parsley
Plate
Top each plate with a little feta, fresh parsley and lemon
Serve and enjoy!
Lemon Orzo Crockpot Soup ????
What’s your go to crockpot meal? Here is an easy crockpot lemon orzo soup! Recipe from @saltandlavender with a couple tweaks! Add 4 chicken breasts to your crockpot. I seasoned mine with salt, pepper, garlic & onion powder. Throw in your veggies & garlic. I used 4 carrots and 4 celery stalks along with 5 garlic cloves. Add 3 bay leaves and be sure to take them out at the end. Next top with 2.5 boxes of your favorite broth. Set on high for 4 hours or low for longer. 30 minutes before serving shred your chicken, add in a cup of orzo or rice, along with the juice of one lemon & some fresh parsley. I also add more spices at this point after a quick taste test. Our family loves lots of crackers in our soup! Lemon Chicken Orzo Soup | Easy & Delicious Comfort Food
Lemon Chicken Orzo Soup is the ultimate comfort food! It tastes fresh and hearty at the same time and gives your belly kisses from the inside!

Ingredients ????
1 onion
2 cloves garlic
2 carrots
3 stalks celery
2 small chicken breasts (7oz each)
8 cups flavorful chicken broth
2 sprigs rosemary
3-4 sprigs thyme
3-4 sage leaves
1.5 cups orzo
1/2 cup frozen peas
sea salt
pepper
1 juice of whole lemon
parsley
Instructions ✏️
1. Peel and finely chop onion and garlic.
2. Peel and dice carrots and wash and dice celery.
3. Preheat a large pot over medium heat, once hot add a splash of olive oil and then sauté onions and garlic until translucent. Add diced vegetables and stir-fry until bright (about 5 minutes).
4. Add chicken breasts to pot and then pour broth over everything. Add herbs either loosely or in an herb infuser.
5. Bring everything to a boil and once boiling, put on the lid, reduce the heat to low and cook for 10-12 minutes or until the chicken breasts are cooked through to 165F internal temperature.
6. Remove chicken breasts from the soup and place on a cutting board.
7. Add orzo to the broth and cook for about 10 minutes or until al dente.
8. In the meantime, take two forks and shred the chicken breasts. Once the pasta is cooked, add the chicken back into the soup to reheat for about 1 minute.
9. Add frozen peas (they will defrost immediately in the hot broth).
10. Remove the herb infuser, add lemon juice, and taste test to see if it needs more seasoning with sea salt and pepper (this will depend on how flavorful your broth was).
11. Serve in a bowl, sprinkle with freshly chopped parsley, and enjoy!
