How To make Braised Leeks & Mushrooms
1/4 c Dry sherry
1 ts Olive oil
5 c Thinly sliced leeks
1 c Thinly sliced shiitakes
1 ts Fresh orange juice
1/2 ts Grated orange peel
1 tb Apple cider vinegar
Salt & pepper to taste In a large skillet, over medium heat, combine sherry & oil. Heat to simmering. Add leeks, stirring frequently for 3 minutes. Add mushrooms & saute for 5 minutes. Stir in orange juice, peel & vinegar. Remove from heat. Add seasonings & serve warm.

Ingredients for this delicious lunch dinner dish rice stuffed leek wraps
8-9 leeks (If the white part of the leeks is large, 6-7 are enough)
2 medium onions
3-4 tablespoons of olive oil
1 tablespoon of tomato paste
Half tablespoon of paprika paste (optional)
1 glass (200 ml) of rice
Half a glass of bulgur (or use rice instead)
Bunch of parsley and dill
Salt
Black pepper
Half teaspoon Cumin
Half a teaspoon of thyme
1 teaspoon sumac
1 teaspoon mint
Half teaspoon of cayenne pepper
1 teaspoon of chili flakes
for the sauce
1 teaspoon of tomato paste
1 teaspoon salt
1-2 tablespoons of pomegranate syrup
1 teaspoon sumac
2-3 tablespoons of olive oil

Ingredients -
2 Tbsp (40ml) - Olive Oil
1.2kg (2.6lbs) - Chicken Thigh, Bone In, Skin On
4 - Shallots, Roughly Chopped
400g (14.1oz) - Swiss Brown Mushrooms, Halved or Quartered
180ml (3/4 Cup) - Verjuice or Chicken Stock or White Wine
2 Tbsp (40g) - Wholegrain Mustard
2 - Leeks, Washed & Roughly Chopped
15g (0.5oz) - Tarragon, Picked
600ml - Chicken Stock
Seasoning To Taste
Basic Mashed Potato -
1kg (2.2lbs) - High Starch Potatoes, Peeled
80g (2.8oz) - Unsalted Butter, Softened
180ml (3/4 Cup) - Full Fat Milk, Warmed
Seasoning To Taste
Tarragon Crisps (Optional) -
1 Tbsp (20ml) - Olive Oil
15g (0.5oz) - Tarragon, Picked
