2 c Vanilla wafers; finely -crushed 1/4 c Bourbon 12 oz Semi-sweet chocolate chips 2/3 c Sweetened condensed milk Sweet milk cocoa Finely chopped walnuts Combine crushed wafers and bourbon; mix until crumbs are moistened. Melt chocolate. Add condensed milk and stir just to blend. Slowly stir chocolate mixture into crumb mixture. Shape into 1-inch balls. Roll in milk chocolate or walnuts. Let stand until cool. Makes about 5 1/2 dozen. -----

This rum balls recipe is so easy you can mix up a batch in under an hour and make ahead before Christmas. They use condensed milk and crushed biscuits with cocoa powder, coconut and the rum of your choice.
This easy rum balls recipe is the same one I grew up with here in Australia that mum would make when we were kids. You can easily adapt them to be kid-friendly rum balls by leaving out the rum!
Plus they freeze perfectly so make them up to a month before Christmas so there is one less thing on your to-do list!

Bourbon Fudge
Bourbon Caramel Fudge
½ cup Butter (and additional for greasing pan) 1 cup Brown Sugar ¼ whipping cream 1 T Kentucky Bourbon 1 pound Powdered Sugar
Prepare 8 inch square glass pan rubbing bottom and sides with butter. Melt butter in a microwave safe dish. Stir in brown sugar. Return to microwave for two minutes.
Mixure will be boiling. Slowly pour in cream and bourbon. Stir in powdered sugar. Spread into dish and cover with wax paper, lightly pressing into mixture.
Refrigerate for one hour. Grease a spatula to help lift hardened mixture onto a cutting board. Grease a knife to cut fudge into bite-sized pieces. Store in an airtight container.
Combine bourbon, liqueur and bitters in a mixing glass with ice and stir. Strain into a coupe glass. Garnish with an orange peel and cherry.
