These bourbon and bacon baked beans are a great BBQ baked beans recipe! Make these easy baked beans and you'll wonder why you've ever bought the Bush baked beans!
INGREDEINTS
• 1/2 medium onion, small dice
• 1 small red bell pepper, small dice
• 8-10 garlic cloves, minced
• 1 lb bacon, medium dice
• 1/2 - 1 tbsp hot sauce
• 1/2 cup chicken stock/broth
• 1 cup brown sugar
• 2 tbsp molasses
• 3 tbsp apple cider vinegar
• 2 tbsp tomato paste
• 2 tbsp dijon mustard
• 2 tsp Worcestershire sauce
• 1 tbsp beef bouillon paste
• 1 tsp liquid smoke
• 2 oz bourbon
• 2 cans (15.5oz) pinto beans, drained and rinsed
DIRECTIONS
1. Heat a cast iron skillet or a heavy bottomed pan with a lid over medium heat and add diced bacon. Cook until brown and crispy and remove with a slotted spoon keeping bacon fat in pan.
2. Add diced onions and cook for 2-5 minutes or until softened and a little brown. Add diced bell pepper and cook for another 2-3 minutes until soft and then add minced garlic.
3. Add hot sauce, chicken stock, brown sugar, molasses, apple cider vinegar, tomato paste, Dijon mustard, Worcestershire sauce, bouillon paste, liquid smoke, and bourbon. Mix well until all ingredients are well incorporated into the flavorful liquid.
4. Add beans and most of the bacon, reverse some for garnish and mix well. Cover and reduce heat to low and simmer for 30-40 minutes.
5. After fully cooked, uncover, mix and garnish with the reserved bacon. Enjoy!

Boston Baked GMOs
In 2014, a group of Internet fanatics calling themselves GMO Free USA decided to harass the Facebook page for Lodge Cast Iron. They claimed Lodge's cast iron pans were pre-seasoned with Roundup Ready GMO soybean oil, and they tried to pressure Lodge into removing this from the manufacturing process for their cast iron pans. This harassment campaign lasted for all of two weeks before they gave up and went away. During this time, I posted responses to their silly troll posts on Lodge's Facebook group demonstrating their claims to be utter nonsense. In typical fashion, they deleted their Facebook posts rather than try to actually debate or discuss their ridiculous claims. It was this silly attempt at harassment that inspired me to make this video. I've been wanting to make a statement like this for a long time, and there's certainly no better time than the beginning of April to make this available for public view, and commentary. Please feel free to post your nonsense claims of the evils of dangerous and toxic GMOs, and claim that I'm a Paid Monsanto Shill.
The recipe for this dish is my own someday-it-will-be-famous recipe for Boston baked beans. I would love for you to try this recipe, and please let me know whether or not you like it. The recipe can be seen on my Web page, Cast Iron Chaos, at:

Are GMOs safe? Yes. The case against them is full of fraud, lies and errors

Episode 5: Boston Baked Beans and brown bread
Boston Baked Beans are one of my all time favorites. And really if you want to enjoy this the only way to do it is to make it yourself. This takes very little active time. But it's so so delicious.
Boston Baked Beans
* 1lbs Beans (Navy, Soldier, Yellow Eye, Pinto all work)
* 1 large onion
* 1/2 Cup Molasses
* 4 Tablespoon sugar
* 1 teaspoon salt
* 1 teaspoon mustard powder
Use a nice large heavy pot. You can soak beans overnight to speed cooking time. Cook onions in a bit of oil briefly (3 minutes or so). Add beans, molasses, sugar, salt, and mustard powder. Cover with 2-3 inches of water. Bring to a heavy boil for 10 minutes on the stovetop. Then put into a 325°F oven and bake for 6-8 hours. Check periodically and add water if they are getting too dry. When done they will be very dark, there will be a wonderful aroma in your house. Beans will be distinct but tender.
Brown Bread
Probably one of my all time favorites from my childhood. This is just so so so good.
* 1 Cup Corn Meal (Yellow)
* 1 Cup Rye Flour (OK to substitute whole wheat if you don't have rye)
* 1 Cup Whole Wheat Flour
* 1 Cup raisins
* 1/2 teaspoon Baking Soda
* 2 Cups Buttermilk (if you don't have buttermilk use regular milk and add a teaspoon of vinegar)
* 3/4 Cup Molasses
* 1/2 teaspoon salt
Mix dry. Add liquid ingredients. Mix until incorporated.
Put in a quart coffee can (or tomato can). Cover with aluminum foil. Secure with rubber band or twine.
Place inside of a pot with a lid, make sure can fits inside pot with lid on.
Bring water to a boil. Put lid on. Turn down the temperature. Allow bread to steam for 2 hours.
