How To make Blintzas
BLETLACH: (CREPES:
1/4 ts Salt
2 c Flour
1 c Water
3 Egg
FILLING:
1 lb Cottage cheese
1 Egg yolk
1 tb Sugar
Sift flour and salt. Beat eggs well, add water. Add flour gradually to eggs, stirring constantly, until batter is smooth and thin. Heat a small frying pan, Teflon makes life easy, and smear with a very thin coat of butter. When pan is hot, put in about 1/4 cup batter, tilt pan until it covers. Cook until
it begins to blister and is shiny. Turn out on table cloth. I always use one, but I Guess you can use paper towels. Continue until all the batter is used. Should make 10 or 12 circles. Mix the ingredients well. Now it's time to 'build your blintzas' as my daughter used to say. Put some filling off center on each circle. Fold the bottom up and the top down. Tuck in sides, or fold in, before you put the op down. Confused? Just try it, it's easy. At this point you can store them in the fridge, or freeze them. They freeze well. To finish, just fry them in a small amount of butter, until browned Great, served with sour cream. They are a bit complicated, but not really difficult. Howard, I am giving you the recipe for 24 because it is so easy and they freeze so well. Use well seasoned pans, 6". This should make about 50 pancakes. I guess the directions don't change when you change the ammounts. -----

This family tradition started about 15 year ago when Steve had this wild idea to make cheese blintzes for a special Christmas family breakfast. He pulled out our Good Housekeeping Illustrated Cookbook, modified the recipe for our large crew, added a twist of his own creation and whipped up a batch of crepes and filling . . . the rest is history.
On that Christmas Eve he created a tradition that has endured and is always anticipated. And even now that our kids are grown, they still come back home looking forward to our Christmas morning tradition of cheese blintzes topped with fresh fruit.
It takes about 2 hours to make the crepes and the filling. Steve usually does this on Christmas Eve day and puts the crepes and filling in the refrigerator until Christmas morning.

Although I consider making blintzes my birthright, I had never actually made—or even eaten!—a blintz until I worked on this book. Blintzes, for the uninitiated, are a Jewish dessert made of an eggy crepe-like pancake that’s filled with a sweetened mixture of cream cheese and farmer cheese and pan-fried until the pancake is golden brown. My mom used to help her mother, my Nanny, make blintzes when she was a child. Nanny would stand at the stove manning two skillets, cooking the pancakes two
at a time. She’d bang them out onto the counter, which was lined with brown paper bags, fill and fold them up, and then pack the blintzes into a shoebox lined with wax paper and freeze them.
Ingredients:
LEMONY APRICOT COMPOTE
8 ounces (227g) dried apricots, coarsely chopped (about 1 3⁄4 cups)
2 tablespoons honey Pinch of kosher salt
1 medium lemon
PANCAKE BATTER
1 cup plus 2 tablespoons all-purpose flour (5.4 oz / 152g)
4 large eggs (7 oz / 200g), at room temperature
1 cup whole milk (8.5 oz / 240g), at room temperature
5 tablespoons unsalted butter (2.5 oz / 71g), melted and cooled
1 tablespoon sugar
1 teaspoon Diamond Crystal kosher salt or 1⁄2 teaspoon Morton kosher salt
FILLING AND ASSEMBLY
16 ounces (454g) farmer cheese, chilled
8 ounces (227g) cream cheese, cut into 1⁄2-inch pieces, chilled
1 large egg (1.8 oz / 50g)
3 tablespoons sugar
1⁄2 teaspoon vanilla extract
Pinch of kosher salt
6 tablespoons unsalted butter (3 oz / 85g), melted and cooled
