-Boneless beef 750g
-Dahi (Yogurt) whisked 1 Cup
-Kacha papita (Raw papaya) paste 2 & ½ tbs
-Adrak lehsan paste (Ginger garlic paste) 2 tbs
-Lemon juice 2 tbs
-Sabut dhania (Coriander seeds) roasted & crushed ½ tbs
-Kali mirch powder (Black pepper powder) ½ tsp
-Haldi powder (Turmeric powder) ½ tsp
-Zeera (Cumin seeds) roasted & crushed 2 tsp
-Lal mirch (Red chilli) crushed 1 tsp
-Namak (Salt) 1 tsp lor to taste
-Tez patta (Bay leaves) 2
-Hari elaichi (Green cardamom) 3-4
-Laung (Cloves) 3-4
-Javitri (Mace) 1 blade
-Badi elaichi (Black cardamom) 2
-Khopra (Desiccated coconut) 2 tbs
-Badam (Almonds) blanched 12-15
-Pakola Full Cream Milk 1/3 Cup
-Cooking oil 3-4 tbs
-Makhan (Butter) 2-3 tbs
-Lehsan (Garlic) sliced 4-5
-Hari mirch (Green chillies) 3-4
-Sabut kali mirch (Black peppercorns) 7-8
-Zeera (Cumin seeds) 1 tsp
-Pyaz (Onion) chopped 1 medium
-Pakola Full Cream Milk 1 Cup
-Hara dhania (Fresh coriander) chopped 1-2
-Cheddar cheese grated 3-4 tbs
-Garam masala powder ½ tsp
-Hari mirch (Green chilli) sliced 1-2
-Adrak (Ginger) julienne
-Hara dhania (Fresh coriander)

-Lemon slices
Directions:
-In a bowl,add beef,yogurt,raw papaya paste,ginger garlic paste,lemon juice,coriander seeds,black pepper powder,turmeric powder,cumin seeds,red chilli crushed,salt and mix well,cover & marinate for 1 hour.
-In spice mixer,add bay leaves,green cardamom,cloves,mace,black cardamom,desiccated coconut, almonds and grind well.
-Add milk,grind well to make a paste & set aside.
-In a wok,add cooking oil,butter and let it melt.
-Add garlic,green chillies,black peppercorns,cumin seeds and mix well.
-Add onion,mix well and sauté until translucent.
-Now add marinated beef and mix well.
-Add milk and mix well.
-Add ground paste,mix well and bring it to boil.
-Add fresh coriander and mix well,cover and cook on medium flame until tender (approx. 1 hour).
-Add cheddar cheese and mix well.
-Add garam masala powder,green chilli,ginger,fresh coriander & mix well.
-Garnish with fresh coriander,green chilli,lemon slices & serve!

-Bowl mein beef,dahi,kacha papita paste,adrak lehsan paste,lemon juice,sabut dhania,kali mirch powder,haldi powder,zeera,lal mirch crushed aur namak dal ker ache tarhan mix karein aur dahk ker 1 hour kliya marinate ker lein.
-Spice mixer mein tez patta,hari elaichi,laung,javitri,badi elaichi,khopra aur badam dal ker ache tarhan grind ker lein.
-Doodh dal dein aur ache tarhan grind ker ka paste tayyar ker lein & side pr rakh dein.
-Karahi mein cooking oil aur makhan dal ker melt ker lein.
-Lehsan,hari mirch,sabut kali mirch aur zeera dal ker ache tarhan mix karein.
-Pyaz dal ker ache tarhan mix karein aur translucent hunay tak sauté ker lein.
-Ab marinated beef dal ker ache tarhan mix ker lein.

-Hara dhania dal ker mix karein aur dhak ker darmiyani ancch per gul janay tak paka lein (approx. 1 hour).

This chickpea recipe is very easy to make and becomes even more easier if you use canned chickpeas. You can serve this as an appetizer or snack or serve them beside that roasted chicken or turkey. You can form the kababs the day before your guests arrive and put them in the refrigerator. Fry them just before serving but they even taste great at room temperature. You can even take them for a picnic or lunchboxes.

Ingredients Required For Making Chickpea Kabab - makes about 8 to 10 kababs
1 can /15.5 oz cooked chickpea or 1 & 1/2 cups cooked. If you are using dried beans, soak about 1/2 a cup of dried chickpeas in water with a tablespoon of salt, overnight. The next day, drain all that water, rinse it well under fresh tap water. Put them in your pressure cooker with about 2 cups of water and pressure cook it for 20 to 25 minutes. Allow the chickpeas to cool down completely before proceeding with the recipe.
1 large/ 250gm potato or 2 medium potatoes . Boil the potato till fork tender. Peel it and a grate it through the large holes of a grater or you can mash it up very well. Please allow the potato to cool down completely before proceeding with the recipe.
1 small onion finely chopped
1 small carrot finely grated
1 teaspoon chaat masala (optional)
1 & 1/2 tablespoons heaped cornflour(cornstarch). You can even use plain flour (maida)
1 teaspoon red pepper flakes or fresh green chillies
little less than 1/2 teaspoon salt or as per taste
1 teaspoon fresh lemon/lime juice
handful of chopped coriander leaves
2 tablespoons oil
2 tablespoons butter (optional)
For dry roasting -
1/2 teaspoon cumin seeds (jeera)
1/2 teaspoon coriander seeds (dhania)
6 to 7 black peppercorns. Adjust proportion according to your preference.
Serve this with any sauce or chutney . Can even serve with a green chutney (link below ) -

-Hari mirch (Green chillies) 5-6
-Adrak (Ginger) julienne 1.5 inch piece
-Podina (Mint leaves) chopped ¾ Cup
-Hara dhania (Fresh coriander) chopped ½ Cup
-Aloo bukhara (Dried plums) 8-10
-Kary patta (Curry leaves) 12-15
-Hari elaichi (Green cardamom) 5-6
-Darchini (Cinnamon stick) 1
-Badiyan ka phool (Star anise) 6-7 blades
-Jaifil (Nutmeg) ¼ piece
-Laung (Cloves) ¼ tsp
-Javitri (Mace) 2 blades
-Water as required
-Namak (Salt) 1 tbs or to taste
-Sirka (Vinegar) 2 tbs
-Chawal (Rice) sella 700g (soaked for 30 minutes)
-Cooking oil 3-4 tbs
-Chicken mix boti 800g
-Lehsan paste (Garlic paste) 2 & ½ tbs
-Hari mirch (Green chilli) paste 3 tbs
-Sabut kali mirch (Black peppercorns) ½ tsp
-Laung (Cloves) 4-5
-Badiyan ka phool (Star anise) 1
-Badi elaichi (Black cardamom) 1
-Hari elaichi (Green cardamom) 2-3
-Tez patta (Bay leaves) 2
-Darchini (Cinnamon stick) 1
-Sabut lal mirch (Button red chillies) 5-6
-Dahi (Yogurt) whisked ¼ Cup
-Namak (Salt) 2 tsp or to taste
-Dhania powder (Coriander powder) 1 & ½ tbs
-Garam masala powder 1 tsp
-Kali mirch powder (Black pepper powder) 1 & ½ tsp
-Chicken white qorma masala 1 & ½ tbs
-Zeera powder (Cumin powder) 1 tbs
-Lemon juice 2 tbs
-Dahi (Yogurt) whisked ¾ Cup
-Kewra water 1 tbs
-Ghee 2 tbs
Directions:
-In a bowl,add onion,fried onion,green chillies,ginger,mint leaves,fresh coriander,dried plums and curry leaves,mix well and set aside for later use.
-In a spice mixer,add green cardamom,cinnamon stick,star anise,nutmeg,cloves and mace & grind coarsely & set aside for later use.
-In a pot,add water & bring it to boil.
-Add salt,vinegar and rice,mix well & boil until 3/4th done then strain & set aside.
-In a pot,add cooking oil,chicken and mix well until it changes color.
-Add garlic paste,mix well & cook for a minute.
-Add green chilli paste,mix well & cook for a minute.
-Add black peppercorns,cloves,star anise,black cardamom,green cardamom,bay leaves,cinnamon stick, button red chillies & mix well.
-Add yogurt and salt,mix well & cook on medium flame for 2-3 minutes.
-Add coriander powder,garam masala powder,black pepper powder,chicken white qorma masala,cumin powder & mix well for a minute.
-Add lemon juice & mix well.
-Add yogurt,kewra water,mix well & cook on low flame for 4-5 minutes.
-Now add & spread prepared mixture,ground spices,boiled rice and ghee,cover & steam cook on low flame for 20-25 minutes.
-Garnish with fried onion & serve!

-Bowl mein pyaz,fried pyaz,hari mirchein,adrak,podina,hara dhania,aloo bukhara aur kary patta dal ker ache tarhan mix karein aur bad mein use kernay kliya side per rakh dein.
-Spice mixer mein hari elaichi,darchini,badiyan ka phool,jaifil,laung aur javitri dal dein aur coarsely grind ker ka bad mein use kernay kliya side per rakh dein.
-Pot mein pani dal ker ubal lein.
-Namak,sirka aur chawal dal ker ache tarhan mix karein aur 3/4th done hunay tak boil ker lein phir strain ker ka side per rakh dein.
-Pot mein cooking oil aur chicken dal dein aur rang tabdeel hunay tak ache tarhan mix ker lein.
-Lehsan paste dal ker ache tarhan mix karein aur ek minute kliya paka lein.
-Hari mirch paste dal ker ache tarhan mix karein aur ek minute kliya paka lein.
-Sabut kali mirch,laung,badiyan ka phool,badi elaichi,hari elaichi,tez paat,darchini aur sabut lal mirch dal ker ache tarhan mix ker lein.
-Dahi aur namak dal ker ache tarhan mix karein aur darmiyani ancch per 2-3 minutes kliya paka lein.
-Dhania powder,garam masala powder,kali mirch powder,chicken white qorma masala aur zeera powder dal ker ek minute kliya ache tarhan mix ker lein.
-Lemon juice dal ker ache tarhan mix karein.
-Dahi aur kerwa water dal ker ache tarhan mix karein aur halki ancch per 4-5 minutes kliya paka lein.
-Ab tayyar mixture dal ker pheela lein,ground spices,boiled chawal aur ghee dal ker dhak dein aur halki ancch per 20-25 minutes kliya steam cook ker lein.
-Fried pyaz sa garnish ker ka serve karein!
