Bill Telepan's Veggie Burger
These mushroom burgers from Bill Telepan, of New York's Telepan, will convert even the most dedicated meat lover. The recipe is not for the timid; it requires some serious kitchen time, but a lot of the prep work can be done ahead (except for those perfectly crisp, fried onions).

Beyond Burger Recipe
Beyond Meat is a Los Angeles-based producer of plant-based meat substitutes founded in 2009 by Ethan Brown. The company's initial products were launched in the United States in 2012. The company offers plant-based options in the beef, pork and poultry categories. As of March 2021, Beyond Meat products are available in approximately 118,000 retail and foodservice outlets in over 80 countries worldwide.
Beyond Burger
The company announced in 2014 that it had begun development of a new product emulating a beef burger, which was released in February 2015.
Ingredients
The burgers are made from pea protein isolates, rice protein, mung bean protein, canola oil, coconut oil, potato starch, apple extract, sunflower lecithin, and pomegranate powder. Beef products that bleed are achieved by using red beet juice. The products are certified as not containing genetically modified ingredients. The number of ingredients and processes involved in making the products mean they are classified as ultra-processed foods in the NOVA food classification scheme.
One burger patty contains 1,100 kilojoules (270 kilocalories) of food energy, twenty grams of protein, twenty grams of fat (of which five grams is saturated fat) and one gram of salt. The protein and fat content are similar to a beef patty of a similar weight, but the salt content is much higher. Nutrition of the burger varies according to the restaurant chain in which it is served.

Smash Burger is a thin burger cooked on a griddle with lots of flavor from the browned bits that develop during cooking. Those bits form a delicious and flavorful crust with a wonderful texture.

2 tsp. blackpepper
1.5 tsp. garlic powder
1/2 tsp. cayenne pepper
1.5 tsp. salt
1 kg chuck beef mince with 15% fat
American cheese slices
Burger buns (Brioche buns preferably)
Sliced pickled gherkins
Sliced onions

500g white cabbage
2 carrots (press it to remove the water)
Half a brown onion
1 cup mayonnaise (add more if you want)
2 tsp. sugar

1/2 tsp. white pepper
1/2 tsp. salt
1 tbsp. vinegar
1 tsp. dried parsley
