2 onions, chopped or sliced
2 qt. beef broth or 2 qt. water and 4 beef bullion cubes

RECIPE:
20 lb. deer meat or elk meat (venison) or beef
5 lb. pork fat
1 Bag Bearded Butcher Salt and Pepper Base
4 oz. Minced Garlic
3 oz. Mustard Powder or Mustard Seed
3 oz. Hickory Smoke Powder
1 oz. Sodium Nitrite Cure or 1.3 oz. Celery Juice Powder
1.5 oz. Encapsulated Citric Acid
With Jalapeños
3-4 oz dried jalapeños
2.5 lbs. High Temperature Cheddar Cheese

4:45 - Start with the lean meat, keep it super cold the whole time. We use a 32 size grinder, 1.5 horsepower to grind. 20% fat to lean meat mixture, we use pork fat.

9:31 - Next, Scott will show you how to grind sausage. First time through the 10mm (3/8 inch) plate, then through the 4.5mm (1/8 inch) plate. The #32 grinder is a beast and grinds the meat really fast.
14:13 - To the mixer next. We're adding 2 pints of COLD water. Without pork fat, you'll need more water. The cure goes in at the beginning of the mixing.
18:37 - To the sausage stuffer next for the most important part.
26:15 - Follow along and watch the guys make some smoked sausage! When it comes off the smoker, put it in an ice bath to bring the internal temp down to about 80F and set the casing.

EASY and Delicious Venison Shanks (Slow cooker!)
This fast and easy slow cooker (crock pot) recipe for venison shanks will become one of your favorites the very first time. (Recipe below) This is how to make venison shanks using the heard and spices you probably already have in your pantry. The end result is melt in your mouth succulent meat worthy of a 5 star restaurant all while having that home cooked/comfort food vibe.
Beef bullion base:
Baster:
Recipe:
Venison shanks knuckles removed
2 cups of beef broth divided
1 tbs minced garlic
1 tsp Tyme
1tsp Rosemary
Olive oil (about 4 tbsp)
Salt & Pepper
1 small sweet onion course chopped
3 - 5 # potatoes course chopped
5 or 6 carrots course chopped
(Optional - Green pepper course chopped)
Directions:
Remove excess fat from shanks1 (Deer fat is nasty). brown the skanks in a frying pan on high heat using olive oil or other oil/fat and then transfer to crock pot.
Add in Garlic, rosemary and thyme to remaining oil in pan and sauté' until it starts to smoke a bit and you smell the flavors. Add in 1 cup beef Broth to deglaze the pan brining it to a boil. Then add this to your slow cooker and top off with the other cup of beef broth.
Cook on low for 2 to 3 hours or until fork tender, almost falling apart. The remove and add in veggies. Place shanks on top of vegtables and baste all with turkey baster. Cook until potato's are done and serve with the sauce in the bottom.
