How To make Beef Burgers with Caramelized Onions
1/3 c Bulgur
2 ts Olive oil
4 c Onion(s), sliced (4 med)
2 ts Sugar
2 ts Balsamic vinegar
Salt to taste 3/4 lb Lean ground beef
2 tb Tomato paste
1/4 c Parsley, chopped
1/4 ts Black pepper
4 Hamburger buns
Split and toasted Lettuce In a small bowl, combine the bulgur with 1/2 cup warm water; let stand for 30 min, or until the bulgur is tender and the water is absorbed.
In a large non-stick skillet, heat oil over low heat. Add onions and sugar; saute until the onions are tender and dark golden, about 15 min. Stir in 1/4 cup water and vinegar. Season with salt and keep warm.
Prepare the grill or preheat the broiler. In a medium bowl, combine the bulgur, beef, tomato paste, parsley, 1/2 tsp salt and pepper; mix thoroughly but lightly. Shape into four 3/4-inch-thick patties. Grill over high heat or broil on a lightly oiled rack until browned and cooked through, about 5 min per side. Blot the patties with paper towels. French onion soup is so frickin' good. It really is. But so often, I feel like it's this sad, watery bowl of lazily made broth with a few bits of onions that are most definitely not caramelized. Today I'm taking French onion soup to the next level with an insane french onion burger.
This french onion burger has the best of the best all around. A soft, fluffy homemade bun, some deeply caramelized onions, some Japanese wagyu, grated Gruyere cheese, and a delicious beef stock glaze. This was, to put it simply, one of the best five burgers I've ever experienced.

Skillet Burger with Caramelized Onions
INGREDIENTS
1 1/2 pounds ground beef, 20% fat)
2 onions sliced
2 tablespoons butter
1 tablespoon olive oil
salt
pepper
garlic powder
8 slices cheese
4 Buns
CHIPOTLE MAYO
1 cup Mayonnaise
1 chipotle pepper in adobo sauce
1 teaspoon adobo sace
pinch of salt and pepper
INSTRUCTIONS
FOR THE CHIPOTLE MAYO
In a small bowl add the mayo, chipotle and adobo sauce. Sprinkle with a pinch of salt and pepper and refrigerate until ready to use.
Divide the meat 4 patties and place on plate, using two finger gently press the center down slightly. This ensures that the burgers don't shrink to much. Sprinkle salt, pepper and garlic powder on both sides.
Heat a skillet/griddle I(I use cast iron) on medium high heat add butter and sliced onions. Cook about 5 minutes tossing the onions every minute or so. Then reduce heat to medium low and sprinkle some salt and pepper and cook about 15 minutes, tossing every couple minutes so they dont burn. Remove to a bowl.
Return the skillet/griddle on high heat. Add olive oil and place patties in skillet. Cook without moving for 3 minutes. Flip and cook another 2 minutes and add cheese, cover and cook another 1-2 minutes until cheese is melted.
Serve on soft buns with chipotle mayo. Top with lettuce, tomato and caramelized onions.
