Brochette de viande kebab et boulgour pilavi (blé turc)/ برغل تركي كباب أسياخ
Recette Brochettes kebab de viande hachée (bœuf et agneau) accompagnées de son boulgour pilavi (blé turc) à la tomate.
La kefta ou köfte est une préparation à base de viande hachée, épices, herbes aromatiques et selon le pays où elle est préparée, le goût peut changer de manière radicale.
Ainsi on peut les retrouver dans de nombreux pays du Moyen-Orient, en Turquie, en Inde sans oublier notre Maghreb bien sûr.
Pour plus de goût, elles peuvent être cuites au charbon ou feu de bois qui va apporter un petit goût exquis légèrement fumé. Habituellement, je les prépare au barbecue mais avec la canicule qui sévit depuis quelques jours, impossible de passer plus de 2 minutes devant la chaleur du barbecue.
Elles sont donc embrochées sur des pics en bois avec une cuisson à la plancha, ce qui est assez rapide au final.
Ingrédients
450 gr de viande hachée au choix mélange bœuf et agneau
1 poignée de persil frais haché
1 poignée de coriandre fraîche hachée
2 ou 3 feuilles de menthe fraîche
1 oignon haché
1 mini poivron rouge et orange
1 cuillère à café mélange épices tandoori
1 cuillère à café de paprika
1/2 cuillère à café de gingembre
1/2 cuillère à café de cumin en poudre
Piment moulu (quantité libre)
Sel, poivre
1 filet d'huile d'olive
Ingrédients boulgour pilaf
1,5 verre de boulgour (320 gr)
Environ 1 litre d'eau
1 bonne cuillère à soupe de concentré de tomate
1 oignon moyen
1 mini poivron rouge et orange
Huile d'olive
Paprika, 1/2 cuillère à café
Sel, poivre
Coriandre fraîche ciselée au goût

450 غرام من اللحم المفروم للاختيار بين مزيج لحم البقر والضأن
1 قطعة صغيرة من البقدونس المفروم
1 كزبرة طازجة صغيرة مفرومة
2 أو 3 أوراق نعناع طازجة
1 بصل مفروم
1 فلفل أحمر صغير وبرتقال
1 ملعقة صغيرة مزيج التوابل tandoori
1 ملعقة صغيرة من الفلفل الحلو
1/2 ملعقة صغيرة من الزنجبيل
1/2 ملعقة صغيرة من الكمون المجفف
فلفل مطحون (كمية مجانية)
الملح والفلفل
1 رذاذ من زيت الزيتون
المكونات برغل بيلاف
1.5 كوب برغل (320 غرام)
حوالي 1 لتر من الماء
1 ملعقة كبيرة من معجون الطماطم
1 بصلة متوسطة
1 فلفل أحمر صغير وبرتقال

Kefta or köfte is a preparation based on minced meat, spices, aromatic herbs and depending on the country where it is prepared, the taste can change radically.
Thus we can find them in many countries of the Middle East, Turkey, India without forgetting our Maghreb of course.
For more taste, they can be cooked with charcoal or firewood that will bring a little taste exquisite slightly smoked. Usually, I prepare them for barbecue but with the heat wave that has raged for a few days, impossible to spend more than 2 minutes in front of the heat of the barbecue.
They are skewered on wooden picks with griddling, which is quite fast in the end.

Homemade Turkish Adana Kebab Recipe | Adana Kebab With Homemade BBQ Skewers | Turkish Kebab
In this video I show you how to make Turkish Adana Kebabs. These adana kebabs are really easy to make and can be made on a BBQ or grill tray. To make your own homemade adana skewers, tape together 6 bamboo skewers and then cover them in foil.
Ingredients:
500g Lamb Mince
500g Beef Mince
Salt to taste (Recipe used 1 Tbsp)
1 Tbsp Chilli Powder (Adjust to taste)
1 Tsp Paprika
1 Tsp Cayenne Powder
2 Tsp Sumac
1 Tsp Ginger Powder
3 Garlic Cloves – Finely Chopped
6 Green Chillies – Finely Chopped (Adjust to taste)
2 Onions – Finely Chopped – Water drained out
1 Red Bell Pepper – Finely Chopped – Water drained out
1.5 Tbsp Red Pepper Paste
1 Tsp Tomato Puree
1 Tsp Chilli Flakes or Aleppo Pepper Chilli Flakes
1.5 Tsp Cumin Powder
2 Tsp Coriander Powder
Handful Chopped coriander
Salad:
1 Tomato – Chopped
½ Cucumber – Chopped

Ingredients for Mutton Tikka Boti:
Boneless mutton (cubes) 1 kg
Yogurt 1/4 cup
Salt to taste
Black pepper powder 1/2 tsp

Turmeric powder 1 ½ tsp
Dry coriander (crushed) 1 ½ tbsp
Cumin powder 1 tsp
Lemon juice 1 tbsp
Ingredients for Chicken Tikka Boti:
Boneless chicken (cubes) 1 kg
Yogurt 3 tbsp
Cream 1 tbsp
Oil 2 tbsp
Green chili paste 1 ½ tsp
Ginger garlic paste 2 tbsp
Garam masala powder 1/2 tsp
Lemon juice 3 tbsp
Salt to taste
Red chili powder 1 tsp
Turmeric powder 1 tsp
Cardamom powder 1/4 tsp
Orange food color 1/4 tsp
White cumin seeds 1 tsp
Fennel powder 1 tsp
Capsicum (cubes) as required

Fries as required
Naan as required
Roasted tomatoes as required
Roasted green chilies as required
Parsley as required
Lemon slices as required
Beef Seekh kabab as required
Chicken tikka boti as required
Mutton tikka boti as required
Directions for Mutton Tikka Boti Preparation:
1. In a bowl add mutton, yogurt, salt, black pepper, red chili powder, red chili flakes, coriander powder, lemon juice, papaya paste, ginger garlic paste, oil and coat well. Refrigerate it for 4 hours or overnight.
Directions for Beef Seekh Kabab Preparation:
2. In a bowl add beef mince, ginger garlic paste, green chili paste, green coriander, salt, red chili powder, red chili flakes, turmeric powder, dry coriander, cumin powder, lemon juice and coat well. Refrigerate it for 4 hours of overnight.
Directions for Chicken Tikka Boti Preparation:
3. Boneless chicken cubes, yogurt, cream, oil, green chili paste, ginger garlic paste, garam masala powder, lemon juice, salt, red chili powder, turmeric powder, cardamom powder, orange food color, white cumin powder, fennel powder, capsicum and coat well refrigerate it for 4 hours or overnight.
Directions for BBQ Platter:
4. Tread the meat on BBQ Skewers and grill them until tender and fully cooked. Brush oil when needed.
5. Serve with naan, fries, roasted tomatoes and chilies, parsley and lemon slices.
Preparation time: 30 mins
Cooking time: 45 mins
Serving: 6-8

Chicken
1 kg chicken, wing and boneless thigh mixed
6 cloves of garlic, pureed
1.5 teaspoons of tomato paste, alternatively add some tomato puree
1 teaspoon of red pepper paste, alternatively add red pepper or sriracha sauce
¾ cup of kefir
1,5 teaspoons of cumin
1 teaspoon red pepper flake
1.5 teaspoons of black pepper
1 teaspoon of salt
3-4 sprigs of fresh thyme
2 pinches of sugar, alternatively 1 tablespoon molasses
Lavash
● Mix the tomato and the red pepper paste in a bowl.
● Add the garlic puree, kefir. Kefir not only adds an incredible flavor when marinating the chicken and meat, but also works very well because it is acidic and probiotic if you don't have much time.
● Season with cumin, red pepper flakes, black pepper, salt, fresh thyme and sugar and give it a nice toss.
● Coat the chicken with the marinade and let it sit at least for four hours better if it waits overnight.
● Then place the chicken on the barbecue. Flip when one side starts to turn brown. Try not to turn the meat before getting good grill marks.
● Before you take it from the barbecue, put lavash on them and both warm the lavash and absorb the delicious oil and water that will drip onto the barbecue into your bread.
● Your little feast is ready when you place the cooked chicken like Turkish delight on the lavash
Köfte
500 gr minced meat (you can use beef, lamb or mutton, whichever you like is fine)
1 large onion, halved
8 handfuls of breadcrumbs, crusts removed, (alternatively, 8 slices of bread works great as well)
1 teaspoon baking soda or baking powder
1 teaspoon salt
1 teaspoon freshly ground black pepper
2 teaspoon butter (skip butter if your meat is fatty)
To garnish:
Tomato, halved
Green pepper
Onion, halved
● To prepare the köfte, add the breadcrumbs or slices and onion in a food processor and pulse for 30 seconds.
● Add in the minced meat, baking soda, butter, salt and black pepper. Continue to pulse until it becomes a paste.
● Wet your hands and shape the mixture into flat round patties. Press your fingers on each patty to increase the surface area. More surface area means more Maillard reaction, and it means more flavour!
● Heat a cast iron pan and place six patties in it and cook on medium heat.
● Flip every Köfte several times while cooking. Add the tomatoes and peppers into the pan.
● While they are cooking mix the butter with hot water and score the flat bread.
● Remove the köfte from heat and pour the half of the water and butter mixture in the pan. Right after, put in the bread as well. This way, bread will soak up the all the flavours and become more and more tasty. Repeat the same for the other patties.
● Place the bread in a dish and serve the köfte on it. Enjoy your amazing köfte with pickles or yogurt.
Turkish Lamb Shish Kebab
500 g lamb loin, cut into cubes
250-300 g tail fat, cut into cubes
1 onion, pureed
3 tablespoons of kefir, alternatively use yoghurt or milk
1 teaspoon of salt
½ teaspoon of red pepper flakes
½ teaspoon oregano
To garnish,
Tomato
Green pepper
Onion
● To make the marinade, sieve the onion on the meat to use its juice.
● Add the kefir, salt, red pepper flakes and oregano and let it sit for at least two hours or overnight.
● Thread your lamb pieces and tail fat cubes one by one onto the skewers.
● Now, it is grilling time. Grill your shish kebab for about 12-13 minutes, cook each side.
● Then, place cooked skewers onto a serving dish with garnishes and serve hot.
Delicious Bihari Kabab Recipe
Ingredients:
750-gram mutton or beef
1 tsp salt
1 tbsp red chili
½ tsp turmeric
1 tbsp poppy seeds
½ tsp cumin powder
1 tsp white pepper
1 tsp garam masala
½ tsp shah jeera powder
1 tsp coriander powder
¼ tsp nutmeg & mace
¼ cup fried onions
2 tbsp papaya paste
1 cup plain yogurt
1 tbsp ginger paste
2.5 tbsp mustard oil
Instructions:
1. Marinate red meat with salt, red chili, turmeric, poppy seeds, cumin, white pepper, garam masala, shah jeera, coriander, nutmeg, mace, fried onions, papaya paste and, ginger paste, mustard oil and plain yogurt
2. Marinate for minimum 1 hour
3. Soak skewers for 10 minutes before using
4. Place meat on skewers and transfer to a pan with cooking oil
5. Occasionally flip sides while cooking the meat
6. Place charcoal and ghee in a small steel cup in the center of the pan with meat and cook with lid on for 1 minute before serving
7. Ready to Enjoy!

Beef Kofta Kebabs
Ingredients:
2 lbs Ground Beef
1/2 Onion (finely minced)
4 Garlic Cloves (finely minced)
1 Bunch Of Mint (finely minced)
1 Bunch Of Parsley (finely minced)
1 Tbsp Lemon Juice
1 tsp Ground Coriander
1 tsp Ground Ginger
1 tsp Cinnamon
1/2 tsp Nutmeg
2 tsp Allspice
1 tsp Cumin
2 tsp Paprika
1/2 tsp Cayenne
1/2 tsp Ground Green Cardamom
1 tsp Sumac (optional)
Salt and Black Pepper
Accoutrements:
Pita or Flat Bread
Sliced Onion
Sliced Cucumber
Sliced Tomato
Shredded Lettuce
Lemon Wedges
Tzatziki Sauce Ingredients :
1 Cup Yogurt
1/2 Cup Cucumber (grated)
1 Garlic Clove (minced)
1 Tbsp Mint (finely minced)
1-2 Tbsp Lemon Juice
1 Tbsp Olive Oil
Salt
Instructions:
In a large bowl combine all the tzatziki sauce ingredients and season with salt to taste. Place in the fridge until ready to serve.
In a large bowl combine the ground beef, all the dry spices, finely minced onion, garlic, mint, lemon juice, and parsley. Season with salt and pepper then mix until completely incorporated and slightly tacky.
Form a few ounces of the ground meat mixture into a oblong shape in your hand. Using a flat skewer, skewer the meat through the center and evenly spread the meat across the length of the skewer. (PRO-TIP: keep the meat cold, this will help the meat stick and stay on the skewer). Repeat with the rest of the kebabs. Place the kebabs on a sheet tray then place in the fridge to keep cold while you fire up the grill.
Next using a charcoal grill with a few wood chunks added for smoke, grill the kebabs suspended by a metal kebab holder (Check Amazon). Turn the kebobs every 30 seconds until cooked then remove from the grill. (You can also grill the kebabs directly on the grill just make sure the grill grate spacing is close together).
Serve the kofta with sliced tomatoes, red onion, cucumber, lemon wedges, lettuce, pita or flatbread, and the tzatziki sauce.
