How To make Basbousa Bil Laban Zabadi (Basbousa with Yogurt)
1 c Sugar
1/3 c Water
1/2 Lemon (juice only)
1/2 lb Unsalted butter
1/3 c Blanched almonds
1/2 c Yogurt
3/4 c Sugar
1 c Semolina
1 ts Baking powder
Few drops vanilla extract Whipped cream Make a thick syrup by boiling the sugar, water and lemon juice together and simmering until it thickens. Allow to cool and chill. Melt half of the unsalted butter. Toast the blanched almonds and chop them finely. Beat the yogurt with the sugar in a large mixing bowl. Add melted butter and all remaining ingredients except the cream, and beat well until thoroughly mixed. Pour into a large rectangular buttered baking tray and bake in a 400 degree oven for 30 min. Pour the cold syrup immediately over the hot basbousa as soon as it comes out of the oven. Cut into lozenge shapes and return to the oven for 3 more minutes. I would like to dedicate today's video to the people of Egypt. We are making Coconut Basbousa, which is an Egyptian semolina cake soaked in rose water. This is my way to say that my thoughts are with the people of Egypt...
Basbousa: the original recipe step by step!
INGREDIENTS
1½ cups Coarse semolina ½ cup Fine semolina ⅔ cup Sugar 2 tsp Baking powder 1 cup shredded coconut 2 Eggs ⅔ cup Unsalted butter (melted) 1 cup Yogurt 2 tsp Vanilla extract
½ cup almonds
Syrup:
2 cups Sugar 2 cups Water 1 Tbsp Lemon juice 2 tsp Rose water METHOD
In the medium saucepan, combine the sugar, water and lemon juice. Boil for 10 minutes. Add the rose water and mix well. Add the almonds to the boiling water for 1 minute and then drain and rinse with cold water. Peel the almond. Combine all the ingredients for the dough and mix well. Transfer the batter to a 9″x13″ buttered baking pan. Chill it for 1 to 2 hours. Add the blanched almonds on top of each square and bake for 40 minutes at 380°F/193°C. Pour the syrup on top of the hot cake and bake for 15 minutes more.

1.5 cups semolina (we used coarse)
1 cup yogurt
1/2 cup desiccated coconut
1/2 cup melted butter
1/2 all-purpose flour
1 tsp baking powder
optional: zest of a lemon
almond halves
Bake at 180c for 25-30 minutes until golden
For the Basbousa Sugar Syrup:
1 cup sugar
1 cup water
1 tsp lemon juice
1 tsp rose water
