How To make Barley and Oat Bread
1 1/2 Lb Loaf:
(1 lb loaf):
2 1/4 Tsp Active Dry Yeast :
(1 1/2 t)
2 1/2 C Bread Flour (1 2/3 C)
3/4 C Barley Flour :
(1/2 C)
1/3 C Rolled Oats (1/4 C)
3 Tbsp Wheat Germ :
(2 T), I omitted
3 Tbsp Nonfat Dry Milk Powder (2 T)
3 Tbsp Orange Zest :
grated, (2 T)
3 Tbsp Sesame Seeds optional, (2 T)
1 1/2 Tsp Salt :
(1 t)
3 Tbsp Honey (2 T)
1 1/2 Tsp Wonderslim :
*NOTE, (1/2 T)
1 1/3 C Water -- (3/4 C + 2 T)
*NOTE: The original recipe used 1 1/2 T vegetable oil (1 T).
A moist and chewy loaf like this one makes good peanut butter, tuna, or fresh ham sandwiches and excellent toast. It goes well with vegetable and meat soups, especially Scotch broth.
Add all ingredients in the order suggested by your bread machine manual and process on the basic bread cycle according to the manufacturer's directions. Eat warm - but not hot - or cool.

OAT FLOUR BREAD RECIPE
(makes 4 slices)
Ingredients:
3/4 cups ground oats, or oat flour (75g)
1 tbsp tapioca starch or cornstarch
1/2 tsp baking powder
1/4 tsp baking soda
1/8 tsp salt
2 egg whites
1 tsp olive oil
2 tbsp Greek yogurt, or sour cream
1 tbsp water
NUTRITIONAL INFO (per slice):
99 calories, fat 2.5g, carb 14.1g, protein 4.8g
Preparation:
In a bowl add all the dry ingredients, ground oats, tapioca starch, baking powder, baking soda and salt, and mix together.
In separate bowl add the egg whites, Greek yogurt, olive oil and water. Whisk well.
Pour the wet ingredients into the dry ingredients and gently fold in.
Grease your glass container or microwave safe bowl (I use 6 inch or 15cm square container) and pour in the batter.
Microwave on high for 1.5 - 2.5 mintues (depends on the power of your microwave).
Let it cool for 2 minutes, then transfer to a wire rack.
Slice diagonally and then horizontally, you'll have 4 slices.
It's great for making sandwiches, toast or grilled cheese.

Ingredients:
350g fine white pearl barley
Enough boiling water to cover the barley , mix very well
Cover and leave for 2 hours
After 2 hours add 1 tbsp of instant yeast
1 tbsp of honey and little bit of warm water
Whole meal flour, I didn't measure, just keep adding flour until you form a dough
1/2 tbsp of salt
Knead for 5 minutes, the dough should be sticky
Add few tbsp of olive oil
Kover the dough and let rise until doubled in size
Bake in a preheated oven at 220°C until golden brown
