Smoked BBQ Beef Sandwiches with Chuck Roast
These smoked BBQ beef sandwiches may be our new favorite pellet grill sandwich recipe! The smoked and shredded chuck roast was perfectly seasoned and tender, making for an awesome shredded beef sandwich.
In this video, I’ll show you how to smoke a chuck roast on the pellet grill, including what binder and seasonings I used, and how I braised the smoked chuck roast in a flavorful barbecue sauce and apple cider vinegar mixture. Then, as a final step, we’ll combine the idea of burnt ends and bbq beef, and place the shredded beef back on the grill with the barbecue sauce for it to thicken and tack up a bit.

Smoky BBQ Beef Sandwich | BBQ Tri-Tip | Ballistic BBQ | Backyard Life
Smoky BBQ Beef Sandwich made with smoked tri-tip! I made this incredible sandwich on my 22 kettle grill for Exmark's Backyard Life Campaign utm_source=ambassador&utm_medium=social&utm_campaign=EX20_Backyard&content=mrvich-greg Tri Tip smoked over hickory wood low and slow, then finished with a reverse sear.
BBQ Beef (Tri Tip) Sandwich with Southwestern BBQ Sauce and Pickled Onion, Hatch Chili Relish Links, and recipe below.
Ingredients:
1 3-4 pound tri-tip roast, trimmed of all exterior fat and silver skin
Equal amounts of kosher salt, black pepper, and garlic powder, are mixed into a rub. About ¼ - ½ cups in total.
Pickled Onion, Hatch Chili Relish
Perfect amount of heat, acid, and a little crunch for the perfect sandwich!
Prep Time 10 minutes
Total Time 40minutes
Servings 15 servings
Ingredients:
¾ Cup red onion, finely chopped
¼ Cup fresh Hatch chili (or any green chili) finely chopped
1 Teaspoon kosher salt
¾ Cup apple cider vinegar
¼ Cup water
1-2 Tablespoons agave nectar
Instructions:
1. Heat the vinegar mixture. In a small saucepan, stir together the vinegar, water, salt and your desired amount of sweetener. Cook over medium-high heat until the mixture reaches a simmer. (Alternatively, you can heat the mixture in the microwave.)
2. Combine in a jar. Place the thinly-sliced onions in a mason jar. Pour the hot vinegar mixture over the onions, screw on the lid, and shake the onions briefly until they are evenly coated with the vinegar mixture.
3. Marinate. Let the onions marinate for 30 minutes. (You may need to press the onions down with a spoon so that they are all submerged under the vinegar mixture.)
4. Serve. Serve immediately, or refrigerate the onions in a sealed container for up to 2 weeks.
BBQ Sauce Recipe
For this sandwich, I mixed about 1 cup of BBQ sauce (use your favorite!), 1 ½ tablespoon of chopped chipotle peppers in adobo sauce, and 1 tablespoon of chopped mild Hatch chili peppers.
BBQ Tri Tip Roast
Set up the grill for low indirect heat, between 225ºF and 250ºF, with the cooking wood of your choice. Season the tri-tip liberally on both sides and place on indirect side of your cooker. Flip roast once it hits 90ºF. Remove tri-tip from the cooker once the internal temperature hits 125ºF, loosely cover with foil and allow to rest while you get the grill ready for searing the roast. Once the grill is ready, and the tri-tip has rested at least ten minutes, sear the roast for about 1 minute per side. Rest another 10 minutes, then slice across the grain.
Assembling Sandwich
Toast the sandwich rolls of your choice, I used bolillo rolls for my sandwiches. Layer and a nice amount of sliced tri-tip on the bottom bun, followed by sauce and then the relish. “Crown” with the top bun and enjoy!

BBQ Beef Sandwiches Made From Smoked Chuck Roasts
BBQ Beef Sandwiches? YES! Anytime I get the chance to smoke up some Chuck Roasts to shred for a delicious sandwich, I take it. In this video I use the SnS Grills Kettle and some Post Oak wood to smoke a pair of USDA Choice Chuck Roasts until they are pull apart tender.

RECIPE:
3-4 Lbs. Shoulder Roast
1 cup of BBQ Sauce
1 Lime to clean the meat
1 TBSP of Worcestershire sauce
1 TBSP of balsamic vinegar
1 TBSP of Soy sauce
1 Cup of beef broth
1 TBSP of Honey
3 sprig of thyme
* optional* pepper flakes for some heat
cook on high for 4 hours or low heat for 8 hrs.

Betty's Bold Barbecued Beef Sandwich
Betty demonstrates how to make Bold Barbecued Beef Sandwiches. These are made with pulled beef cooked in a slow cooker, mixed with Zesty Barbecue Sauce, the most recent video in Betty's Kitchen.
Bold Barbecued Beef Sandwich
2 pounds uncooked beef shoulder roast (You may use a different cut of beef.)
salt and pepper, to taste
Zesty Barbecue Sauce, from Betty's Kitchen (You may use bottled barbecue sauce, or a different barbecue sauce recipe.)
wheat Kaiser sandwich buns (You may use any type of sandwich buns.)
Salt and pepper beef roast to taste. Line slow cooker with aluminum foil. Place seasoned beef roast in slow cooker and close aluminum foil around the roast. Put lid on slow cooker, turn to HIGH and cook for 6 to 8 hours. (I cooked mine for 7 hours.) Remove cooked roast from slow cooker and place on cutting board. Tent with aluminum foil and let sit until cool enough to refrigerate. Place cooled roast in refrigerator until chilled. When chilled, use a knife to remove all excess fat and to cut and pull the beef into bite-sized chunks. Mix Zesty Barbecue Sauce with pulled beef, using only as much of each to make a good consistency for a sandwich filling. Transfer sandwich filling to a medium-large pot and heat over low to medium heat on stove until bubbly. Spoon barbecued beef sandwich filling onto wheat sandwich buns. Serve while hot. This should make about 6 sandwiches. (If you like plenty of sauce, make 1 ½ times the sauce recipe to make 6 generous, saucy sandwiches.) Enjoy! --Betty
