How To make Barbecue Meatloaf
Ingredients

bread crumbs

tomato sauce

egg

seasoning (follows)

green pepper, chopped
SAUCE:
1/2
cup
Water
3
tablespoon
Vinegar
3
tablespoon
brown sugar
2
tablespoon
Prepared Mustard
1 1/2
cup
tomato sauce
2
tablespoon
butter
SEASONING:
1
teaspoon
garlic powder
1
teaspoon
onion powder
1/2
teaspoon
pepper
Directions:
Combine the beef, bread crumbs, onion, 8 oz tomato sauce, egg, My
Seasoning, and green pepper. Mix well and place in a loaf pan.
Combine all sauce ingredients. Cook in a saucepan until butter melts. Pour
sauce over meat loaf and bake at 350 F for 1 hour. While baking, the sauce
needs to be spooned over the meat occasionally.
Note: Make sure you use a pan large enough for the meat and sauce, or the
sauce will tend to boil over while it is cooking.

2 Slices of bread
1/2 Tsp Worcestershire Sauce
1 tsp Parsley Flakes
1/2 tsp Black pepper
2 TBSP Season All seasoned salt
1 TBSP Mc Cormick Garlic & Herb salt-free seasoning
1 tsp Red pepper Flakes
2 Tsp Paprika
1/3 Cup Barbecue Sauce (Sweet Baby Rays)
1 Tbsp Ketchup
1/2 tbsp Mustard
1 tsp Brown Sugar

How To Make The Best Smoked Meatloaf Of All Time Kosmos Q One of the first breakthroughs I had as a pitmaster was around how to make smoked meatloaf, and not to brag, but my smoked meatloaf recipe will be the best you've ever had in your life I promise you that! Not only is it incredible on flavor, but it's just an easy meatloaf to make. There isn't anything overly complicated in this recipe whatsoever. Kosmo’s Dirty Smoked Meatloaf
2lbs 80/20 Ground Beef
1lb Hot Breakfast Sausage
½ lb Fried Bacon (Cut In Little Pcs)
3 Eggs
1 Large Sautéed Yellow Onion
2 Cups Bread Crumbs
½ Cup Maple Brown Sugar
½ Cup Kosmo’s Q Comp BBQ Sauce
¼ Cup Ketchup
3 Tbsp. Dirty Bird HOT
3 Tbsp. Yellow Mustard
2 Tbsp. Worcheshire Sauce
Cut up bacon into 1/8 pcs and fry, set aside to cool.
Cut and Saute Onion in small pcs.
Dump Ground Beef into a large bowl.
Add Sausage and bacon w/ grease.
Dump in everything else and mix by hand making sure not to over mix.
Place into a loaf pan lined with saran wrap and put it into the freezer overnight. Loaf Pan Link:
Remove from the freezer and remove from the loaf pan and place onto a wire mesh rack.
Rub with a light coat of mustard and rub with Kosmo’s Q Dirty Bird Hot.
Cook at 275° to 300° using pecan wood or adding a pecan chunk to your charcoal basket.
Cook to 165° and remove and chow down.

Smoked Meatloaf Recipe
This is my recipe for bbq meatloaf -- meat loaf with a barbecue flare.
Here's what you'll need for my smoked barbecue meatloaf recipe:
- 2lbs Ground Chuck (I used the 80-20)
- 1lb Ground Pork
- 8oz Bread Crumbs
- 2 Eggs
- ¼ cup Half and Half
- ½ Red Bell Pepper
- 5-6 Green Onions
- 4 Cloves of Garlic
- 1 Rib of Celery
- 1 TBS Moore's Original Marinade
- 2 TBS The BBQ Rub. (plus extra for the outside)
- Salt & Pepper to taste
- 2 Aluminum Loaf Pans
- Plastic Wrap
First you dice the vegetables then work it in with the ground beef, pork and seasonings. Then crack the two eggs and lightly beat them in a small bowl. Add the half and half to the eggs and whisk with a fork and add it to your mixture.
Work these ingredients by hand into the meat and vegetables until everything is combined and divide your meatloaf in half.
Then get your smoker to 275 degrees to smoke you barbecue meatloaf. Meatloaf can fall apart pretty easy due to moving it around too much, but to keep this from happening, I place them on one of my pork racks (you can get them here: ) .
Spray the rack with cooking spray to keep the meatloaf from sticking and place it over a foil lined baking sheet.
Place the baking sheet, pork rack, and meatloaf directly on the cooking grate in the smoker. It will take approximately 2 hours at 275 degrees to get the meatloaf to an internal of 160. After 2 hours it is time to glaze your barbecue meatloaf.
To glaze, just brush on The BBQ Sauce to the top and sides of the meatloaf. It needs about 15 minutes to caramelize on the meatloaf and it's done. Just like any meat coming off the smoker, give it a rest.
Now you're ready to eat your Barbecue Smoked Meatloaf.

1 bell pepper diced

2 tbsps sour cream
1-2 tbsps garlic paste
2 beaten eggs
1 1/2 - 2 cups bread crumbs
smoked paprika/italian seasoning/red pepper flakes
salt/pepper/garlic/onion powder
Sauce:
1 cup BBQ
1 cup ketchup
1-2 tbsps tomato paste
2 tbsps dijon mustard
1 tbsps worcestershire sauce
1/4 cup brown sugar
salt and pepper / smoked paprika
Directions:
Begin by prepping your veggies and parsley. Next, saute veggies, parsley, and garlic for 3-4 minutes. Place in freezer to chill after softened. In a large mixing bowl combine remaining ingredients (except sauce ingredients). Work everything together with your hands until it forms one large meatball. Add bread crumbs a little at a time until the loaf takes shape. Place mixture in the fridge for 30 minutes.
Preheat oven to 375 and form into a loaf shape. Place on wire rack or into a loaf pan. Bake for 30-45 minutes. Mix together sauce ingredients over medium low heat. Baste meatloaf with sauce during final 20-30 minutes. Meatloaf is done when it registers 165 degrees internal temp in the middle.
