How To make Banana Honey Cake
CAKE:
1 c Honey
1 ts Soda
1 c Quaker Oats, uncooked
-- (quick or old-fashioned) 3/4 c Butter or margarine; soft
1/2 c Sugar
2 Eggs
1 c Mashed bananas
1 1/2 c Sifted all-purpose flour
3/4 ts Baking powder
3/4 ts Salt
FROSTING:
6 oz Cream cheese; soft
2 1/2 c Sifted confectioners' sugar
For cake, bring honey to a boil in medium-sized saucepan; add 1/2 teaspoon of the soda. Pour over oats; stir to combine. Cover and let stand 10 minutes. Beat butter until creamy; gradually add sugar, beating until fluffy. Blend in eggs. Add oats mixture and bananas; blend well. Sift together flour, remaining 1/2 teaspoon soda, baking powder and salt. Add to creamed mixture; blend well. Pour batter into 2 greased and waxed paper-lined 8-inch round cake pans. Bake in preheated moderate oven (350 F.) 30 to 35 minutes. Cool on wire rack about 10 minutes. Remove from pans; cool. For frosting, beat cream cheese until fluffy. Gradually add sugar, beating until frosting is smooth and of spreading consistency. Spread between layers and over top of cake; refrigerate. Just before serving, decorate with banana slices. Makes one 2-layer cake. Honey Banana Muffins
What is better than a tried and true recipe with honey? One passed down through generations. This must-try muffin recipe is exactly that, and we're thankful to our teammate's Grandma Sweetie for sharing it.
Ingredients:
- 2 eggs
- 1 ½ tsp cinnamon
- 4 Tbsp unsalted butter
- 1 cup mashed ripe banana (about 3 medium bananas)
- 1/3 cup Nature Nate’s pure honey
- ¼ cup milk
- 1 tsp baking soda
- ½ tsp salt
- 1 ½ cups flour
- 1 tsp vanilla extract
Directions:
Preheat oven to 350 degrees. Spray muffin tin with cooking spray. Soften butter in bowl until it is room temperature. Add honey, mashed banana, vanilla and milk to the bowl. Whisk together to combine. Add eggs and continue mixing. Sprinkle cinnamon, baking soda, and salt into the bowl. Whisk until well combined.
Add the flour to the bowl and stir with a spatula until loosely combined. Be careful not to over-mix. Scoop the batter into the muffin tin. Be careful to fill about 2/3 full. Sprinkle the top of each muffin with a little cinnamon. Bake for 15-17 minutes.
Let muffins cool for 5 minutes. Eat and enjoy!

So I’ve created my own healthy version without using any added sugars or butter, still keeping a beautiful flavour and moist texture.
