Ingredients

chicken breast halves, skinless boneless

teaspoon
lemon pepper, seasoning
1 1/2
teaspoon
extra virgin olive oil
1/3
cup
Balsamic vinegar
1/4
cup
chicken broth
2
each
garlic cloves, minced
4
tablespoon
butter
4
each
parsley sprigs
8-12
each
cherry tomatoes
Directions:
Flatten chicken to 1/4 inch thickness. Press lemon-pepper seasoning evenly on both sides. In large frypan, place oil and heat to medium temp. Add chicken and cook, turning once about 7 minutes or until fork can be inserted in chicken with ease. Remove chicken to warm serving platter; keep warm. In medium bowl, mix together vinegar, broth and garlic; add to frypan. Cook over medium-high, scraping up brown meat bits, about 2 minutes or until mixture is reduced and syrupy. Add butter; stir to melt. Place chicken on serving dish and spoon sauce over chicken. Garnish with parsley and tomatoes.

Balsamic Chicken Pasta
(If you are using less chicken, half the Ingredients )
4 large chicken breast cut up
Or
3lbs chicken tenderloins
1/2c to 1c all purpose flour
Salt
Pepper
2 large or 3 small peppers
1/2c olive oil
2-8oz. canned mushrooms, drained
8 garlic cloves, chopped
1-14.5 oz. Chicken broth
1c balsamic vinegar
2 T Dijon mustard
2 t dry oregano or thyme
1/2c Parmesan cheese
1 Box of your favorite pasta
Compound Butter
1 stick salted butter
1 small bulb of garlic
olive oil to drizzle
Salt
Pepper
Oregano or basil
MARINATED BALSAMIC CHICKEN | Easy Chicken Recipe
Delicious easy-to-make marinated balsamic chicken recipe. Fresh boneless/skinless chicken filets marinated in a homemade balsamic-based marinade. This marinade not only gives your chicken a savory flavor, but a beautiful color as well. This recipe can be made either in a skillet, grill or flattop griddle.
Servings: 2
Shopping List:
1 thick cut fresh boneless and skinless chicken breast
Marinade (see below for recipe)
Cooking oil
MARINADE RECIPE:
1/2 cup extra virgin olive oil
1/4 cup each of balsamic vinegar, soy sauce, Worcestershire sauce and light brown sugar
1 tbsp. lemon juic
1/2 tsp. dried rosemary
1 tbsp. Dijon mustard
1/3 tsp. each of Kosher salt, black pepper and garlic powder
Directions:
Pre-heat the griddle or skillet on medium high to high heat, about 400 degrees.
Rinse and pat dry the chicken then with a sharp knife slice in half lengthwise. Place into a plastic zip-lock bag.
Add all marinade ingredients to a bowl and whisk then pour into the bag over the chicken.
Cook the first side of the chicken about 5-6 minutes, flip and cook until an internal temperature of at least 165 degrees.
Remove the chicken from the heat and rest 10 minutes.
Plate up and pour some of the cooking juices over the chicken and serve.
