Stuffed Double-Cut Pork Loin Chops

Ingredients
Brine:
4 bone-in, double-cut loin chops (3 to 4 pounds total)
5 cups water
1/4 cup kosher salt
1 tablespoon fresh cracked black pepper
3 tablespoons Dijon mustard
1 tablespoon dried sage
1 tablespoon granulated garlic
Stuffing:
2 tablespoons olive oil
1 tablespoon butter
1/2 cup diced pancetta
6 cups cremini mushrooms, very thinly sliced
Salt and fresh cracked black pepper
1/4 cup minced shallots
1 teaspoon minced fresh sage leaves
1/2 cup shredded fontina cheese
Breading:
1 teaspoon Italian seasoning
1 teaspoon fresh cracked black pepper
3/4 cup panko breadcrumbs
1/2 cup flour
2 eggs
2 tablespoons olive oil
1/4 cup bacon fat
Sauce:
1/4 cup minced shallots
1 cup chicken stock
2 tablespoons whole grain Dijon mustard
2 tablespoons plain yogurt
2 teaspoons lemon juice
1/2 teaspoon kosher salt
1 tablespoon chopped Italian flat-leaf parsley, for garnish
Directions
For the brine: Rinse and pat the chops dry, slit a pocket into each chop about 3 to 4 inches long and as deep as the bone. Combine the remaining ingredients in a re-sealable bag, place in the refrigerator and brine for 1 to 2 hours.
For the stuffing: In a saute pan over medium-high heat, add the oil and butter, and when the butter melts and foams, add the pancetta and cook until crispy. Remove to a paper towel-lined plate, leaving the fat in the pan. Add the mushrooms, sprinkle with salt and pepper and cook over medium-high heat, stirring frequently for 6 minutes. Add the shallots, sage and 1/2 of the pancetta and cook for 3 minutes more. Remove to a plate to cool, spreading out evenly. Once cool, add the fontina cheese. Reserve the extra pancetta for service.
Remove the chops from the brine and pat dry. Stuff with the cooled filling and secure the opening with toothpicks. Reserve any remaining filling for the sauce.
Preheat the oven to 350 degrees F.
For the breading: In a shallow pan or bowl, add the Italian seasoning, pepper, panko and flour. Mix well. Add the eggs to a second shallow bowl and beat.
Dredge the chops through the egg, then lay in the breading and press to adhere. Repeat with all the chops.
In a large saute pan, add the oil and bacon fat and, when shimmering, add the pork chops, cooking until golden brown, about 5 minutes each side. Hold gently with tongs and cook the edges as well. Place on a baking pan fitted with a wire rack and place into the oven. Cook until the meat registers 135 degrees F on a thermometer, 10 to 15 minutes. Remove and lightly tent with foil.
For the sauce: In the same pan that the chops were cooked in, add the shallots and any remaining mushroom filling and cook over medium-high heat for 4 to 5 minutes. Deglaze the pan with the stock and scrape any bits from the bottom. Whisk in the mustard and yogurt until well combined, and then add the lemon juice and salt.
Remove the chops from the baking pan, remove the toothpicks and place on a serving platter. Top with the sauce. Garnish with the parsley and the remaining pancetta and serve immediately.

How to Make Oven Baked Pork Chops | Baked Pork Chops | Oven Baked Pork Chops | Pork Recipe
Hey guys! Watch me as I make these delicious Oven Baked Pork Chops! They came out nice and juicy! This is the perfect dish for any day of the week. I served this with brown rice and peas/corn, but it would also go well with your favorite side dish :)
Ingredients:
Assortment of bone-in pork chops (I got these from Walmart)
Lemon pepper seasoning
Nature's seasoning
Butter (melted)
Parsley flakes
Olive oil
Onions (Optional)
Bell Peppers (Optional)
Preheat your oven to 350 degrees Fahrenheit.
Wash your pork chops, and pat them dry.
Season to your taste.
Coat a skillet with olive oil. Place the pork chops in the skillet, and brown on both sides. Don't worry about cooking the pork chops all the way through since we are baking them.
Once browned, place the pork chops in an oven-safe baking dish. Add onions and bell peppers, if desired. Cover the pan with foil.
Bake in 350 degree Fahrenheit oven for 40 minutes, covered. Baste the pork chops halfway through. They should produce their own juice. Add water, if needed.
After 40 minutes, remove pan from the oven. Remove the foil. Drizzle melted butter on the pork chops. Return the pan to the oven, and continue to cook the pork chops for 20 minutes (uncovered).
**Cook time will vary depending on the thickness of your pork chops** I also suggest using bone-in pork chops. You don't have to cook the meat as long as I did, as that was a personal preference. The pork chops are technically done when they reach an internal temperature or 145 degrees Fahrenheit.

There's actually no way you won't end up with the crispiest pork chops ever with this recipe. They're kid-friendly, husband-approved, and so much better for you than real-deal fried pork chops. The best part? They taste just as good as the real deal. You won't be missing a thing with this healthy baked pork chop recipe.

WHAT YOU'LL NEED (serving of 4):
4 boneless pork center loin chops about a ½ thick
3/4 teaspoon Kosher salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1 cup all-purpose flour
2 large eggs, slightly beaten
⅓ cup milk
3 dashes hot sauce
1 ½ cup plain Panko breadcrumbs
2 teaspoons Kosher salt
1 teaspoon black pepper
Cooking spray
HOW TO MAKE CRISPY OVEN-FRIED PORK CHOPS:
Preheat the oven 375° and have ready a rimmed sheet pan lined with nonstick aluminum foil. Also, have ready a breading station consisting of three shallow trays or pie plates.
Pat the pork chop dry with a paper towel and sprinkle the seasoning evenly over both sides. Rub to adhere. Set aside while you prepare the breading trays.
Add 1 cup of flour to the first tray. Add eggs, milk, and hot sauce to the second tray and whisk to combine. In the last tray, stir together panko bread crumbs, Kosher salt, and pepper.
Dredge the seasoned pork chop in the flour tray, shaking off any excess, then dip it in the egg mixture (allowing excess to drip off), and back into the flour mixture.
Then, back into the egg mixture once more, and lastly coat thoroughly in the Panko breadcrumbs.
Transfer pork chops to the baking sheet and spray evenly with cooking spray. Turn the pork chops over, and spray again.
Bake for 13 minutes. Flip the pork chops over, and bake for 13 minutes more. Allow to cool slightly, serve, and enjoy.
