Chicken Liver With Apples + Onions
Today's recipe is Chicken Liver! My grandma's way is with apples and her secret ingredients Marjoram and Caraway. We hope you enjoy!
Polish Chicken Liver With Onions And Apples
Ingredients:
500 G Liver
3 Onions
3 Pieces Of Garlic
Blended Caraway
Marjoram
Pepper
Salt
Wheat/Spelt Flour
Oil or Geese Lard
Any 3 Apples
Half of a Lemon
Steps -
Start by cleaning (rinsing) the liver and also removing any excess.
Peel onions + garlic to be ready for cutting
Start by cutting the apples into fourths (get rid of the inside seeds) then those fourths into eighths.
Squeeze lemon juice into bowl of apples (So apples don’t darken)
Cut onions in half and cut both halves into wedges. Do this for all 6 Halfs.
Crush all the garlic under the knife and then dice.
Dry liver from water with a paper towel.
Put some flour into a bowl and cover each liver with flour. Set aside each flour covered liver on a separate cutting board
Heat up geese lard or oil in a big pan
Once oil/lard is heated do the onion test to see if liver is ready to be fried
Onion Test - Test by putting a piece of onion into the pan if onion starts to fry and starts to turn a clear brownish color then liver is ready to be fried
Put the liver in the pan and start frying (Beware of oil pops so put the lid on quickly!)
Each liver should be fried 3-4 minutes on both sides. After 3-4 minutes flip to the other side for another 3-4 minutes
Once the liver is fried on both sides add seasonings (Garlic, Salt, Pepper, Marjoram, Caraway, and Onions) Mix. Put on Lid.
Once the onion has a clear brownish color it’s time to put in the apples. Stir. Put on Lid. Fry for around 5 minutes.
After 5 mins it’s time to serve
Pork Liver with Onions and Apples can be served with bread, potatoes and also a pickle!

Wątróbka drobiowa z cebulka i jablkiem -
Skladniki:
500g wątróbki drobiowej
Maka orkiszowa lub pszenna do obtaczania
Olej lub smalec gęsi do smażenia
3 cebule
3 ząbki czosnku
3 twarde jablka
Sok z cytryny
Sol, pieprz, majeranek, mielony kminek
Sposób przygotowania:
Wątróbkę umyłam, usunęłam błony i osuszylam w ręczniku papierowym.
Cebule pokroiłam w piórka, czosnek posiekalam
Umyte jabłka obralam ze skórki, pokroilam na ćwiartki, usunęłam gniazda nasienne i pokroiłam znów na ósemki. Skropilam sokiem z cytryny.
.Wątróbkę obtoczylam w mące.
Na rozgrzaną patelnię wlałam tłuszcz i na rozgrzany wrzucilam wątróbkę. Usmażyłam 3-5 minut z każdej strony. Wątróbka czasem strzela podczas smażenia, wiec nalezy patelnie przykryć pokrywka.
Dodalam posiekany czosnek i doprawilam sola, pieprzem, mielonym kminkiem, majerankiem, dodałam cebule i smażyłam do jej zrumienienia.
Na końcu dodałam jabłka i na małym ogniu dusilam wszystko pod przykryciem przez około 5-10 minut.
Podałam z pieczywem (można również z ziemniakami) i kiszonym ogórkiem.
