How To make Baked Crab Stuffed Lobster
8 Maine lobsters, 1-1/4 to
1 1/2 Lb Each
1 LB Crab meat
1/2 Lb Butter, melted
2 C Dried bread crumbs, ground
-fine 2 Ts Worcestershire sauce
-pinch salt -Tomalley and Coral
Split a live lobster: Spread flat. Using a teaspoon, remove the tomalley (green stuff) and coral (pink stuff, roe) and reserve. Remove stomach (under the head) and devein. Remove tail meat and chop coarsely. Reserve. Leave claws intact. Prepare all lobsters as above. Mix bread crumbs, butter, salt, and Worcestershire sauce together. Add the tail meat, crab, tomalley, and coral, and toss to mix well. Fill the cavity of each lobster with the stuffing. Place in a foil lined baking pan, alternating head and tail to fit better. Bring the edge of foil up over the tail of each lobster. Press so as to secure end of tail to pan so the tails do not curl up as they bake.Bake at 325f for 50 minutes, more or less depending on size. Serve straight from the oven.

BAKED LOBSTER INGREDIENTS
Two 1 ½ - 2 lb. Fresh Live Lobsters
2 oz. Extra Virgin Olive Oil
1 tbsp. Pecorino Romano Cheese
1 tbsp. Italian Seasoned Breadcrumbs
Fresh Black Pepper to taste
1 Lemon
1 - 4 oz. Stick Salted Butter.
JUMBO LUMP CRAB STUFFING INGREDIENTS
8 oz. Jumbo Lump Crab or sub less expensive crab
2 oz. Mayonnaise *Olive Oil Mayo Preferred
½ Fresh Lemon Juice
2 oz. Fresh Chopped Parsley
1 Scallion
½ tsp. Worcestershire Sauce
2 oz. Italian Seasoned Breadcrumbs
Salt and Black Pepper to taste
LOBSTER STUFFED WITH JUMBO LUMP CRAB INSTRUCTIONS
Start by making your Jumbo Lump crab stuffing.
Chop a small handful of Fresh Parsley, and place on the side.
Peel 4 cloves of Garlic and add to the pan with Extra Virgin Olive Oil.
Lightly brown the Garlic and remove.
Move Garlic infused EVOO off the heat and to the side for later use.
IN A MIXING BOWL...
Add 2 oz. Olive Oil Mayonnaise (or sub regular mayo).
Add 1/2 tsp. of Worcestershire Sauce.
Add a nice pinch of Fresh Parsley.
Add 1/2 Fresh Lemon Juice.
Add Chopped Roasted Garlic.
Add 1 Scallion
Add Salt and Pepper, and mix all together
Now add your Jumbo Lump Crabmeat and gently fold into mixture.
Add about a tbsp. of Italian Seasoned Breadcrumbs and fold into mixture.
The Crab stuffing should be loose and moist, it will sit inside the Lobster shell.
Make sure your Fresh Live Lobster is alive before cooking.
Butterfly Lobster, place on a baking sheet pan, and push the Lobster together, and place Jumbo Lump Crabmeat Stuffing in inside the body portion of the Lobster on each side of the shell.
Sprinkle the Lobster tail with Fresh Ground Black Pepper and Pecorino Romano Cheese.
Sprinkle some Italian Seasoned Breadcrumbs over Jumbo Lump Crabmeat Stuffing.
Add 1 cup of water to line the sheet pan.
Place your Lobster in a pre-heated oven at 425 degrees °F for 15-20 minutes.
While your Lobster is baking you can melt 1 stick of salted butter, and separate the milk from the butterfat to make Clarified Butter.
Remove Lobster from oven and place on a plate of Kale or leafy greens and serve Clarified Butter with and 1/2 Lemon.
You are done... Nice Job!
