Let’s be real—guilty pleasure or not, everyone likes Baileys. However, what’s available now isn’t the same as what the drink was originally, and that’s where this recipe comes in. It’s easy and fast, and once you try it you’ll be hooked. It makes a great holiday gift but is delicious year round. Add it to your arsenal and start impressing your friends immediately!
1 750ml bottle Irish whiskey
2 14oz/415ml cans of condensed milk
1/2c/120mls of heavy cream
3 tblspn/45mls honey
3 tblspn/45mls vanilla extract
2 tblspn/12g unsweetened cacao/cocoa powder
2 packets instant coffee
Blend blend blend, bottle, refrigerate, and serve over ice.

How To Make Home Made Baileys : Better Than The Real Thing
Ok, I will admit it. I used to LOVE Baileys, so I am pretty excited to try my hand at making some.
So how do you make Baileys Irish Cream? I scoured the internet and found a promising-looking recipe. But I am not happy with that. Let's make it, taste it & improve on it!
Thats right you get 2 for one today, two recipes. Then a BJCP judge is going to taste it and see which he prefers. Spoiler, it's not the baileys.
Internet Recipe for Baileys:
1 cup cream
1 14oz can (400g) can of condensed milk
1. 5 cups of Irish Jamerson's
2 tablespoons of chocolate syrup
1 teaspoon of instant coffee
1 A teaspoon of vanilla extract
1 teaspoon of Almond Essence
My BETTER than Baileys Recipe:
1.25 cup cream
Condensed milk to taste (around 3/4 of a can)
1.75 cups of homemade spirit at 50% (ideally a whisky with coffee/chocolate tendencies)
2.5 tablespoons of chocolate syrup
1/2 shot of espresso
2 teaspoons of vanilla extract
1 teaspoon of Almond Essence

Homemade Irish Cream | BAILEYS RECIPE
I love me some whiskey, and for a special treat I REALLY love Baileys Irish Cream. But did you know that it's super easy to make your own Baileys? Baileys Irish Cream really is a simple combination of cream, Irish whisky, and (as they say on their website) other flavors.
Those other flavors are hints of vanilla, coffee, chocolate, and Almond. Yes, you read that right, ALMOND. Adding just a touch of almond extract takes this home recipe and makes it indistinguishable from the store bought version.

Homemade Irish Cream Recipe
1 2/3 C Jameson
1C Half & Half (or heavy cream)
14oz sweetened condensed milk
2tbs Hershey's Chocolate Syrup
1/2tsp instant coffee granules or 1/2c coffee
1tsp almond extract
Blend & Enjoy! Store in the refrigerator for up to two months.

Is making Irish Cream less expensive than buying it:
It depends on where you live! Where I live, a bottle of Bailey's is roughly $18-$20. Jameson is $20-$22. if you double this recipe and use the entire bottle of Jameson, you get TWO bottles of Irish Cream out of it. (Yay, math!) Or, don't double the recipe and be left with half a bottle of Jameson to enjoy on it's own (Yay, whiskey!) The rest of these ingredients are very inexpensive, and many people already have them in the fridge/pantry. Also, you don't HAVE to use Jameson- if you're making this purely for the cost savings, use the least expensive whiskey available to you.
How long will homemade irish cream last:
Up to two months in the refrigerator (and yes it needs to be refrigerated).
Can you make this without alcohol:
I'm sure you can, I just have not tried it personally. I think experimenting with some of the non-alcoholic whisky offerings would be fun, and lend the right amount of spice and texture to this!
Why bother making your own?
Because some of us enjoy the process! Homemade liqueurs are an easy way to control the level of alcohol, sugar, and various other ingredients. Have fun with this- tweak to suit your own tastes!!

Making Irish Cream Liqueur - a reduced sugar Bailey's copycat recipe using Jameson's Irish Whiskey
In this video Chef Terry makes Irish Cream. A liqueur with the flavors of cream, Irish whiskey, coffee and chocolate. One 14 ounce can of Sweetened Condensed Milk (This is measured by weight not by volume)
1 cup Heavy Cream
1 ounce Cold Brewed Coffee (recipe below)
1 Tablespoon Dutch Process Cocoa (source below)

Cold brewed Coffee (remember it is a 4 to 1 ratio water to coffee)

KETO Copycat Baileys Irish Cream Recipe - 2 Flavors
It’s that time of the year for the traditional holiday drink - Bailey’s Irish Cream. My recipe for KETO Copycat Bailey's Irish Cream is only 1 carb while the Bailey's you buy at the store is 15 grams for 2 oz. or 1/4 cup! Plus I've created 2 flavors: Original and Pumpkin Spice. Both are spectacular!

If you want to make it dairy-free or vegan, just use coconut cream instead of heavy cream. It also makes an awesome coffee creamer. And it’s so much healthier than the preservative-laden stuff at the store!
Almost all homemade recipes for this drink use some sort of chocolate or cocoa along with granular sugar or sweetener in it. There is no chocolate in the original Bailey’s Irish Cream so I was baffled by the addition of that ingredient. After multiple trials using cocoa powder, I found that they all ended up tasting like a chocolate shake. It did NOT taste like Bailey’s Irish Cream.
It finally dawned on me that I was using the wrong kind of sweetener. Using Swerve brown sugar sweetener instead of granular sugar was the key to making it taste like the REAL THING. The underlying caramel flavor in the brown sugar not only sweetens it but also means you don’t need the chocolate. I hope you enjoy my recipe for KETO & LOW-CARB copycat Bailey’s Irish Cream!
INGREDIENTS:
1 c. heavy cream (or coconut cream)
1 c. Elmhurst unsweetened almond milk:
¼ c. + 2 Tbsp. Swerve brown sugar sweetener* :
1 Tbsp. vanilla extract:
1 c. Irish whiskey ** (adjust to your preference level)
To make the PUMPKIN SPICE version, to 1 cup of the Original recipe, add:
2 Tbsp. pumpkin puree (not pumpkin pie filling, which has sugar in it)
2.5 – 3 tsp. pumpkin pie spice (I use Trader Joe’s)
In a large bowl with high sides, whip the almond milk, vanilla and brown sugar until the sugar dissolves. Add the heavy cream and whip for about 10 – 15 seconds. Add the whisky and whip briefly. If you make the Pumpkin Spice version, add the ingredients and whip for about 30 seconds.
It can be served it at room temperature, but I personally love it ice cold!
Refrigerate (or freeze for 25 minutes) until ice cold. Enjoy . . . in moderation!
* = The ingredients in Swerve do not affect blood sugar, so the carbohydrates it contains are considered non-impact.
** = UPDATE; I found another Irish whiskey I use now instead of the one in the video: It's Kilbrin Irish Whisky: Sherry cask finish (no sharp aftertaste)
