How To make Baby Back Ribs with Sofrito Glaze
Marinade 1 Tablespoon annatto seeds
1/4 Cup vegetable oil
1 Tablespoon olive oil
1 yellow onion
diced
1 Anaheim chile :
seeded and diced
4 garlic cloves
2 red peppers seeded and diced
3 recao leaves (optional) or
1/2 Bunch oregano
1/2 Bunch cilantro
2 Tablespoons tomato paste
3 whole tomatoes
1/4 Cup cider vinegar
2 Teaspoons salt
1 Teaspoon pepper :
freshly ground
2 Tablespoons guava jelly
1/4 Cup coffee liqueur
4 Pounds baby back pork ribs
To make annatto oil: Place the annatto seeds in a dry pan and toast over medium heat. Keep shaking the pan and tossing the seeds until their aroma is released, 1 to 2 minutes. Stir in the vegetable oil and set aside. When cool, strain to remove seeds. Heat the annatto and olive oils in a large skillet. Add the onion, chile, garlic, red peppers, recao and cilantro. SautJ over medium heat until vegetables soften, about 5 minutes. Stir in the tomato paste and continue cooking for 2 more minutes. Add the tomatoes and cook two more minutes. Allow to cool, then transfer mixture to a food processor or blender and puree. Pour marinade into a large bowl and stir in vinegar. Add remaining marinade ingredients. Place the ribs in the marinade and allow to sit for at least 1 hour, or overnight. Preheat oven to 350 degrees. Remove the ribs from the marinade and place them in a baking pan single layer (save marinade for basting). Add 1/4inch water to the pan, cover and bake for one hour. INGREDIENTS! For Oven Baked BBQ Ribs
2 Racks baby back ribs
4 tbsp onion powder
5 garlic powder
4 tbsp cajun spice
3 ground black pepper
salt to taste
1 cup of water
Boil on medium low for 30 minutes
Bake on 400 degrees 35 minutes
add bbq sauce at the last 10 minutes of the cooking process. Good luck

Ingredients:
Pork spareribs (details for BEEF ribs at the bottom)
4 yellow condiment seasoning packets
2 tbsp ground oregano
2 tbsp onion powder
2 tbsp garlic powder
2 tbsp black pepper (less if you prefer a milder taste)
1 tbsp soy sauce
2 tbsp Worcestershire sauce
2 tbsp lime or lemon juice (or the juice of 3 squeezed limes)
4 tbsp sofrito
Honey Lime Bbq Sauce
Juice of 7 limes
1 jar of bbq sauce
2 cups of honey
1 tsp salt
**Beef Ribs: follow the recipe, and bake at 400 degrees for 1 hour & 40 minutes (beef is a tougher meat than pork, and takes longer to tenderize). Then, drain liquid formed at the bottom of the pan, raise temp to 450 degrees, baste ribs in sauce. Bake for 10 mins, repeat.

Ingredients:
- Rack of ribs
- 1 Cup of Sofrito (homemade or Goya brand)
- 1 tbsp. Salt
- 1 tbsp. Black Pepper
- 1 tbsp. Garlic Powder
- 1 tbsp. Oregano
- 1/2 tsp. Cumin
- 2 Bay Leaves
- 1 Can of Tomato Sauce
(Be sure to boil a large part of hot water prior to begin cooking)
(Optional)
- 1 Packet Ham Flavor
- 1 Green Pepper
