This recipe of Christmas Fruit Cake is one of the simplest and by far the best I have tried.
This super moist and delicious cake is dense and pack with soaked flavorful fruits .

Stewed Fruits Recipe
**Ingredients for blended fruits**
1 lb prunes, seeded and chopped
1 lb raisins
1 lb currants
1/2 Ib cherries chopped
Any other fruits of your choice
1 bottle of rum
1 bottle of cherry brandy or wine
(Spices)
**Ingredients for cake **
2 cups or 1 lb butter
2 cups or 1 lb sugar
9 large eggs
2 tsp grated lime or lemon peel
2 tsp vanilla extract or 1 tbsp vanilla essence
1 1b or 4 cups flour (baking or all purpose) (sifted)
4 tsp baking powder
1 tsp salt
1-2 tsp mix spice
2 tsp ground cinnamon
2 tsp nutmeg
1/4 cup browning or more for darker color
4-5 cups of soaked blended fruits
The day before or some days before baking, boil the fruits (prunes, raisins, currants, cherries) Link is provided
Line cake pans with 1 layer of wax
paper.
Cream butter and sugar until light and fluffy.
Break eggs into a bowl, add lime peel then pour into the batter gradually.
Add fruits to blender and lightly blend, then add to batter.
Add enough browning to give desired colour, along with vanilla essence or extract
Combine flour, baking powder, cinnamon, salt, nutmeg, fold into creamed mixture gradually.
Add more rum to your desired taste.
Pour batter into lined baking pans and bake in a preheated oven at 220 degree celsius for first 45 minutes.
Reduce heat to 200 degree for the remaining 45 minutes, or until tester comes out clean.
(Place water pan at the bottom of the oven)
Prick hot cakes and soak with a mixture of
rum and cherry brandy. (Any Alcohol You Desire)
Cover and set aside to cool.
Soak overtime for a few days to keep moist.

PREPPING THE FRUITS
1 LB GLAZE CHERRIES
1 LB CURRANTS
1 LB RAISINS
1 LB PRUNES
1 LB DATES ( IF YOU CAN FIND THE CHOPPED ONES, IF NOT JUST MIX THEN IN THE BLENDER)
1/2 LB MIXED PEEL/ DRIED CITRUS FRUITS
BARBADOS “MOUNT GAY RUM” 2 1/2 - 3 CUPS (IF YOU LIKE TO TASTE A LOT OF RUM IN THE CAKE)
“ FALERNUM 2 - 2 1/2 CUPS (START WITH 2 CUPS AND IF YOU THINK YOU NEED MORE YOU CAN ADD A LITTLE)
PORT WINE 2 - 2 1/2 CUPS “ “ “ “ “ “ “ “
PUT ALL THE FRUITS IN A LARGE CONTAINER AND MIX WELL; PUT A THIRD OF THE FRUIT MIX IN A HIGH POWERED BLENDER AND ADD A THIRD OF EACH OF THE LIQUIDS, COVER THE BLENDER AND MIX UNTIL THE MIXTURE IS WELL BLENDED TO THE RIGHT CONSISTENCY AND REPEAT WITH THE REMAINDER OF THE FRUIT MIXTURE.
POUR THE BLENDED MIXTURE INTO A LARGE AIR TIGHT GLASS JAR AND SEAL. THIS CAN BE STORED IN A COOL DARK PLACE FOR UP TO ONE YEAR. THE LONGER IT SITS THE MORE POTENT IT WILL BE.
P.S.
IT IS BEST TO USE A “ GOOD EFFICIENT BLENDER “ OTHERWISE YOU CAN SOAK THE FRUITS OVERNIGHT BEFORE BLENDING.

Ingredients and Measurements:
To soak the fruits: (this amount of fruits is for (2) 10 in. cakes)
1 lb. raisins
1 lb currants
1 lb dried prunes
1 lb maraschino cherries/glace cherries
1/3 cup mixed peel (OPTIONAL)
(1) 750 mL bottle red wine
1/2 cup rum of your choice
(This video shows the process-
To make the browning: (you can use this or store bought)
1 cup brown sugar
1 cup stout
To put the cake together:
7 oz. all purpose flour
1/2 tbsp. baking powder
1/4 tsp. salt
1/8 tsp. black pepper (OPTIONAL)
1/2 tsp. ground nutmeg
1/2 tsp. ground cinnamon
1/2 tsp. ground cloves
2 sticks unsalted butter softened (1 cup/ 8 oz.)
8 oz. brown sugar
6 eggs beaten
1/2 tbsp. mixed essence (or vanilla if you wish)
2 lb soaked and ground fruits (half of the fruit mixture measurement above) 1/4 cup browning (homemade or store bought)- you may need more or less depending on the darkness you prefer and the type of browning you use
extra butter and flour for greasing the pan
To soak the cake:
1/4 cup E&J Brandy
1/4 cup Taylor's Cream Sherry

How To Make Traditional Black Cake In Hours
In a pot
Add 1 lb of dried Currents
Add 1 lb of dried raisins
Add 1/2 lb of dried prunes
Add 1/2 lb of dried dates
Add 2 1/2 cups of red wine
Cook on medium heat to soften the dried fruit
Blend soften fruit with 1/2 cup of wine
Mix 1 lb of butter and sugar until sugar crystals are melted
Add 10-12 eggs
Add 1 tsp grated nutmeg
Add 1 tsp vanilla extract
Add 1 lb of flour
Add 1 1/2 tsp baking powder
Mix fruits and batter together
Add 1 1/2 tsp gravy browning/Carmel browning
Bake in a 350 degree oven for 40-45 minutes
Enjoy with family and friends

ingredients
1 2/3 cups all purpose flour
2 sticks butter /1 cup
1/2 cup granulated sugar
1/2 brown sugar
3 cups pureed fruits
2 tsp baking powder
1 tsp cinnamon
1 tsp nutmeg
1 tsp clove
1 tsp almond extract
1 tbsp vanilla extract
1 tbsp orange zest
3 tbsp cornstarch mixed with 6 tbsp water
fruit mix
1 cup raisins
1.cup prunes
1 cup cherries
1 cup cranberries
hot grape juice
preheat oven to 285°F bake cake for 2 to 2 1/2 hours depending on your oven temperature. check after 2 hours for doneness make sure your cake is fully cooked especially in the middle.
