How To make Aunt Hilda's Health Muffins
2 1/4 c AM Wheat Bran
2 c Milk or soy milk
2 Eggs or egg replacer
1/4 c AM Unrefined Vegetable Oil
1/2 c Honey (or less to taste)
2 1/2 c AM Multi Blend Flour
2 1/2 tb Non-alum baking powder
1 ts Sea salt (optional)
1 ts Cinnamon
1 1/2 c Raisins
3/4 c Chopped walnuts or pecans
-- (optional) In a large mixing bowl combine the bran, milk, eggs, oil and honey. In a second bowl, combine all the remaining ingredients. Add the dry mixture to the liquid and mix thoroughly. Fill oiled muffin tins. Bake in 350 F. oven for 30 minutes, or until tops are lightly browned. Cool on a rack. When thoroughly cooled, store covered in refrigerator or freezer. Makes 24 large muffins.
Oat Bran Variation: To make Aunt Hilda's bran muffins, follow recipe above with these simple changes: a) Substitute 2-1/2 cups of oat bran for the wheat bran. b) Increase the honey to 3/4 cup. Fried Fresh Caught Fish (Spots were cooked in Video)
Ingredients:
4-6
Fish (Cleaned and gutted)
1 cup
All-Purpose Flour
1 cup
Yellow or White Cornmeal (Not self-rising)
1 1/2 cups
Vegetable Oil
3 tsp
All-Purpose Seasoning
3 tsp
Black Pepper
Directions:
Prepare a platter lined with paper towels. In a large shallow dish, combine the flour and cornmeal. In a skillet large enough to hold the fish, heat oil medium-high heat until it is very hot. Season the fish with all-purpose seasoning, pepper and dredge the fish in the flour and cornmeal mixture, shaking off any excess coating. Add fish to oil and cook about 10 minutes, turning once. Transfer the fish to the platter lined with paper towels. Serve hot

Directions:
Preheat oven to 400 degrees F. Prepare a 9x9 inch baking pan and spray with non-stick cooking spray. In a medium bowl, combine all ingredients and stir by hand until well combined, but do NOT overmix. The batter may be slightly lumpy. Pour batter into the pan and bake for approximately 20 minutes, or until a toothpick inserted into the center comes out clean. Remove from oven and allow to cool slightly. Store any uneaten portions tightly covered.
