How To make Armenian Style Zucchini
2 lb Zucchini, washed and trimmed
1 c Ground lamb shoulder*
1/2 c Raw rice
1 Small onion, chopped fine
1 tb Chopped parsley
1/2 c Stewed tomatoes
Salt Black pepper *Note: May use lamb patties. Peel the zucchini and cut into 3 inch lengths. Scoop out the centers. Soak the vegetable in cold salted water about one half hour. mix the lamb with the rice, onion, parsley, tomatoes, salt and pepper. Drain the zucchini and fill the hollows with the lamb mixture. Arrange in a saucepan and add water to the depth of one inch. The water should not reach more than halfway up the sides of the zucchini. Cover the pan tightly and simmer over low heat until the rice is>>> tender, about one hour. Check from time to time to see that the water has not evaporated. Source: New york Times Cookbook.

(پیاز کوچک سرخ و طلایی رنگ شده ۲ عدد ( ولی من به جای پیاز از ۲ حبه سیر له شده استفاده کردم
بادمجان ۲ عدد
فلفل دلمهای قرمز ۱ عدد
فلفل سبز ۲ عدد
ابلیمو یک قاشق غذاخوری
نمک و فلفل به میزان لازم
کره ۵۰ گرم

4 tomatoes
2 small onions finely chopped, fry until golden brown ( but i used 2 garlic cloves minced instant of onions)
2 Eggplants
1 red Bellpeper
2 sivri pepper
1 tbsp lemon juice
Salt&Pepper to taste
50 g butter ( optional)

Ingredients:
Vegetables (to be stuffed)
- Mexican squash (about 3)
- Zucchini (about 2)
- Bell pepper (any color about 2)
- Anaheim pepper (about 2)
- Jalapeno pepper (about 2)
- Tomato (about 2)
- Salt & pepper
Stuffing
- 1/2 lb ground beef (at least 15% fat)
- 1/2 cup long grain rice
- 1/2 cup chopped red/green bell peppers
- 1 cup chopped roma tomato (~1 tomato)
- 1 cup tomato sauce (8oz. can)
- 1 tbsp. chopped fresh mint
- 6 cloves minced garlic
- 1 tsp. salt
- 1 tsp. ground black pepper
- 1 tsp. Aleppo pepper
- 2 tbsp. hot pepper paste
Finish
- 1/4 cup lemon juice (or to taste)

Creamy ZUCCHINI SOUP in 30 min || EASY & HEALTHY Courgette Soup. Recipe by Always Yummy!
Make a real delicacy of zucchini for lunch or dinner – a tender, mouthwatering and very tasty creamy soup. And it will only take half an hour.

✅ Ingredients
• zucchini – 2,2 lb | 1000 g
• onion – 7 oz | 200 g
• garlic – 1 clove
• cream cheese – 7 oz | 200 g
• vegetable oil – 1,5 tbsp
• dried parsley – 1 tsp
• hot water – 4 cup | 1 l
• dried basil – ½ tsp
• pepper – to taste
• salt – to taste
✔︎ You will need
- large saucepan
- carving board
- blender or mixer
???? Preparation
1. Chop up the onions and garlic, cut the zucchini into half-moon slices.
2. Heat the oil in a saucepan over medium heat, add the onions, fry for 3 to 4 minutes over medium heat until golden, add the garlic and the spices, cook for another minute.
3. Add the cream cheese, the zucchini, hot water, stir well. Bring to a boil, cover with a lid, lower the heat to minimal and simmer for 20 more minutes.
4. Salt to your taste, stir, turn off the stove.
5. Puree the soup in a blender.
6. Serve your creamy soup hot, sprinkled with chopped parsley, basil and with croutons.

1. You can use any squash you like.
2. You can add potatoes to your soup as well : dice them and cook with the zucchini.
3. Add spices to your taste.
