While these apples from my back yard are often a bit smaller than what you’ll find at the store, they really do work well in pies and jam. Nonetheless, they won’t stay fresh forever, so what I like to do is make apple pie filling. #applepies #applepicking by @CFB123
Make This Apple Pie Filling for your Pies & Tarts
Print the Recipe:
Ingredients
10 apples, peered, cored, and sliced
4 oz (114 g) unsalted butter
3/4 cup granulated sugar
1 cup packed light brown sugar
4 and 1/2 tablespoons (50g) cornstarch
1 tablespoon ground cinnamon
1/4 teaspoon salt
1/2 cup heavy whipping cream
Instructions
Melt the butter in a large skillet over medium heat. Add all of the remaining filling ingredients except for the cream. Cook the filling until it thickens. The apples should be fork tender. Remove from the heat and add the heavy cream. Mix and set aside to cool completely. The filling can be stored in the refrigerator in an airtight container for up to 2 weeks.
Notes
If the apples release too much liquid, the filling may take longer to thicken. To prevent the apples from getting mushy, combine a tablespoon of cornstarch with 2 tablespoons of warm water together in a bowl. Whisk tigether and add to the filling. This will help thicken the juices faster. If the filling gets too thick (too much cornstarch), thin it out with some more heavy cream and a splash of water or apple juice.

A delicious homemade apple pie that can be eaten in the midst of winter! Kristi in the Rada kitchen shows you a recipe for apple pie that you can bake fresh or freeze into a pie plate shape for convenient pie baking anytime.

5 C. peeled, thinly sliced apples (such as McIntosh)
1/4 tsp. salt
2 tsp. lemon juice
2 T. flour
1/2 C. sugar
1 tsp. ground cinnamon
1/4 C. brown sugar
1/4 tsp. ground nutmeg

Hi, Kristy in the Rada kitchen and today I am sharing a recipe for apple pie. This is an apple pie you can make and bake the same day or you can put it in the freezer to bake later.
I got this recipe out of our Fresh to Freezer Cookbook. Everything from apples to zucchini. Anything out of your garden or you get at the farmer's market.
So, first to start out you need five cups of peeled and thinly sliced apples, any variety. Probably McIntosh works the best. I just got these off of a tree in my backyard.
So I am going to use the vegetable peeler and take the peeling off. Now this is a double-sided peeler so whether you're left handed or right-handed it will work for you.
So once you get that apple peeled I'm going to use the utility steak knife. A lot of people use this as longer paring knife, it's also good on steaks and meats. So now you're going to thinly slice these.
After you peeled and thinly sliced five cups of apples add two tablespoons of lemon juice, this will keep them from turning brown.
Then set that aside and then in a separate bowl we are going to add a half of a cup of sugar, a fourth of a cup of brown sugar, two tablespoons of flour, a fourth of a teaspoon of salt and a teaspoon of cinnamon and a fourth of a teaspoon of nutmeg and then blend those altogether. Pour this over the apples and stir until the apples are coated.
Now this is ready to bake if you want, just put them in an unbaked pie shell, dot it with butter put the top crust on, brush it with a little milk, sprinkle it with a little sugar and make sure you put slits in it.
But I want to show you how to freeze these for later use. Take a pie plate and line it with foil into the shape of the pie plate and just put the apple filling in it. If you want to make it fancy you can turn the top apples all the same direction.
So now you have the filling already to the size of the pie plate. Put this in the freezer open like this until it is frozen solid, about four hours, I actually freeze mine overnight.
Then once it is frozen solid, wrap it up good with more tin foil and put it in a zip lock bag. You can store it in the freezer for up to a year.
Now I am going to show you how to bake it after it has been frozen. So once the pie filling has been frozen for about four hours, I took it out of the pie plate, wrapped it in foil and put it in a freezer bag and now I am ready to bake it.
I just took it out of the freezer. All you need to do it put it in an unbaked pie crust. You can make your own crust or use a store bought frozen pie crust.
Pre-heat the oven to 375 degrees. While the filling is frozen, dot it with butter and then put on the top crust.
I did make a video on how to make this pie crust, so check out our blog site, it's also on YouTube, its called Homemade Pie Crust and then type in Rada. Go ahead and trim the edge if you need to just make sure that you seal the crust to the edge of the pan.
I am using the Rada Stoneware Pie Plate, in my opinion it is the best! It is the only pie plate I use, makes that crust light and flaky, it just bakes it really even.
Once you have the edges sealed brush the top with milk, sprinkle with a little bit of sugar, you could also put a little bit of cinnamon on the top if you want. Now the important thing is to cut slits.
Now the filling is frozen so I am going to cover it with foil and I am going to bake it in a pre-heated 375 degree oven for 30 minutes and then I am going to uncover it and bake it another forty to fifty five minutes or until the crust is brown and the filling is bubbly.
